2 packages (5 ounces each) prune baby food
1 cup strong brewed coffee
1 cup fat-free milk
4 egg whites
2 teaspoons vanilla extract
2 cups all-purpose flour
2 cups sugar
3/4 cup baking cocoa
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
FROSTING:
6 tablespoons butter, softened
2-2/3 cups confectioners' sugar
1/4 cup baking cocoa
2 tablespoons fat-free milk
2 tablespoons strong brewed coffee
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine 3 containers baby food, coffee, milk, egg whites and vanilla; beat until well blended. (Save remaining container of baby food for another use.) Combine the flour, sugar, cocoa, baking soda, baking powder and salt; add to coffee mixture. Beat for 2 minutes or until well blended (batter will be thin). , Pour into two 9-in. round baking pans that have been coated with cooking spray and lightly floured. Bake at 350° for 30-35 minutes or until cake pulls away from sides of pan. Cool for 10 minutes; remove from pans to wire racks to cool completely. , For frosting, in a small bowl, cream the butter, sugar and cocoa. Gradually add the milk, coffee and vanilla; beating well. Frost between layers and over top and sides of cake.

2 cups flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon instant coffee
1/3 cup cocoa powder
1 1/3 cups granulated sugar
1 egg
1 egg white
6 tablespoons unsalted butter
1 cup nonfat yogurt
2 teaspoons vanilla extract

Steps:

  • Have all ingredients at room temperature Preheat oven to 350 degrees with rack in the lower third of the oven. Spray 8-10 cup tube pan with cooking spray.
  • Use a whisk to combine four, baking powder, baking soda, and salt. Sift together. Set aside. In a small bowl combine the espresso powder, cocoa and 1/3 cup of the sugar with 1/4 cup of water. Whisk until smooth. Set aside. In another small bowl, whisk whole egg with egg white. Set aside.
  • Cut the butter into pieces and place in an electric mixing bowl. Beat for 1 minute to soften. Gradually add remaining 1 cup of sugar and beat at high speed for about 3 minutes. Dribble eggs in slowly, about 1 T at a time, beating constantly for about 2 minutes. On low speed, beat in a third of the flour mixture. On medium-high speed, beat in half of the yogurt. On low speed, beat in half of the remaining flour. On high speed, beat in the rest of the yogurt and the vanilla. On low speed, beat in the remaining flour.
  • Measure out 1 1/2 cups of yogurt batter and mix into the cocoa mixture. Set aside.
  • Use a large spoon to fill the bottom of the pan with about three quarters of the white batter placed in dollops. Cover the white batter with dollops of chocolate batter. Top the chocolate batter with small dollops of white batter spaced so that the chocolate batter shows through. Use a table knife to marble the batters together with a circular or zigzag motion; be careful not to blend them too much. Bake for 45-50 minutes or until the cake starts to pull away from the sides of the pan and a toothpick inserted in comes out clean.
  • Cool for 10-15 minutes on a rack. Unmold the cake. Cool completely before serving or storing.

My favorite chocolate cake, and heart-healthy, too! A deep, dark chocolate cake that I'm proud to serve my family. Prune Butter replaces the customary oil, but it tastes sooo good, you'd never know it's low-fat. A light 7-Minutes Icing is the perfect complement. For Valentine's Day, add a drop or two of red food coloring and 2 drops of peppermint or spearmint to the icing. I modified the recipe from the June/July 1998 issue of Light & Tasty magazine. If you can't find Prune Butter (Lekvar), try Rita's "Lekvar Prune Plum Filling " recipe #54692.

1 cup strong brewed coffee
1 cup skim milk
8 ounces lekvar prune butter
1 cup egg substitute (Egg Beaters)
2 teaspoons vanilla extract
2 cups sugar
2 cups all-purpose flour (measured, then sifted)
3/4 cup cocoa (measured, then sifted)
2 teaspoons baking soda
1 teaspoon baking powder
1/4 teaspoon salt
frosting

Steps:

  • To keep cake low-fat, use either a Seven-Minute Frosting or a powdered sugar glaze.
  • Preheat oven to 350 degrees.
  • Spray the inside of two 8-inch cake pans or one 9-inch springform pan with Baker's Joy or grease and flour them.
  • In large bowl, mix all dry ingredients together and set aside.
  • Place Lekvar (Prune Butter) in large mixing bowl; gradually add all other liquids, mixing on SLOW speed. (Unless you want to wear this)
  • Add half of dry ingredients and mix 1 minute.
  • Add remaining dry ingredients and mix 1 minute.
  • Pour batter into prepared pans.
  • Bake 30-35 minutes (8-inch pans) or 40-50 minutes (9-inch springform) or until done. (Toothpick comes out clean when inserted into middle of cake.)
  • Cool in pans.
  • Gently run knife around edge of cake.
  • Place flat parchment-lined pan/plate on top and invert to remove each cake layer.
  • Frost with 7-Minute Frosting.
  • If you want to make it very decorative, melt 1-ounce unsweetened chocolate and drizzle it over the frosting, letting some of it run down the sides.
  • IMPORTANT TIP: I always wrap little insulating strips, soaked in water and squeezed, around the outside of each cake pan.
  • The brand I use is MagiCake by J P Products, and these work well.

  • The purpose of these strips is to keep the cake from forming a hump in the middle of the cake layers by preventing the outside edges from cooking before the centers cook.
  • I couldn't make flat cake layers without the MagiCake strips.

This very moist cake (almost like a cheese cake) is from the Cake Mix Doctor - she has some great ideas for using cake mixes, and this is definitely one of them. Very moist, and rich and plenty of chocolate and very easy to make. It was a definite hit with my chocoholic husband.

1 (18 1/4 ounce) package yellow cake mix
8 tablespoons butter, melted
1 large egg
1 (8 ounce) package cream cheese, room temerature
2 large eggs
1 teaspoon vanilla
8 tablespoons butter, melted
3 3/4 cups confectioners' sugar
1 cup semi-sweet chocolate chips (6 oz.)

Steps:

  • Place a rack in center of oven and preheat to 350 degrees.
  • For the crust, mix the cake mix, melted butter and egg in bowl and blend on low speed 2 minutes. (if using a handheld mixer, you'll probably have to kick up the speed to medium).
  • Pat the batter into an ungreased 9x13 pan smoothing it out so it's even.
  • For the filling: beat the cream cheese in the same bowl for 30 seconds until fluffy.
  • Add eggs, vanilla and melted butter beating on medium speed for 1 minute.
  • Slowly add the confectioners sugar until well blended. Beat 1 minute more.
  • Reserve 1 cup of cheese mixture. Spread remaining mixture over the crust, smoothing till even.
  • Melt chocolate chips in pan over boiling water, or melt in microwave 1 minute at a time making just until melted.
  • Stir the chocolate (still hot) with the reserved cheese filling until well blended.
  • Spoon chocolate over filling in pan and swirl with a knife for marbling effect.
  • Bake 45 - 47 minutes until it is well browned, but the center still jiggles when you shake the pan.
  • Remove pan and cool at least 30 minutes. before cutting into bars. Store 4 days on counter, or 1 week in refrigerator. This can also be frozen up to 6 months.
