BEST EVER ONE BOWL CHOCOLATE CAKE

Best Ever One Bowl Chocolate Cake image

This Best Ever One Bowl Chocolate Cake is the 'holy grail' of chocolate cakes! It's soft and tender with a deep chocolate flavour, and it's perfect for frosting!

Provided by Chrissie Baker (thebusybaker.ca)

Categories     Dessert

Time 40m

Number Of Ingredients 15

1 1/2 cups white sugar
1 3/4 cups all purpose flour
3/4 cup unsweetened cocoa powder
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
3/4 teaspoon salt
2 eggs
1 cup milk
1/2 cup vegetable oil
2 teaspoons vanilla
1 cup boiling water
3/4 cup unsalted butter (at room temperature)
4 tablespoons unsweetened cocoa powder
2 1/2 cups powdered sugar
1 tablespoon milk (optional (to thin out the frosting if necessary))

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • In a large bowl, whisk together the sugar, flour, cocoa powder, baking powder, baking soda and salt until well combined.
  • Add the eggs, the milk, the vegetable oil and the vanilla, and whisk these ingredients into the dry ingredients until the mixture is smooth.
  • Slowly add the boiling water, whisking constantly until the cake batter is runny and smooth.
  • Pour the cake batter into a greased 9-inch by 13-inch rectangular pan and bake at 350 degrees Fahrenheit for about 30 minutes, or until a toothpick inserted into the middle of the cake comes out clean.
  • Let the cake cool in the pan on a wire rack while you make the frosting.
  • For the frosting, whip the butter on high speed using a stand mixer or electric hand mixer until the butter is pale and smooth. Add the cocoa powder and the powdered sugar and continue to whip until everything is combined and smooth.
  • If necessary, add the milk a few drops at a time to loosen up the frosting until it reaches a consistency that is spreadable. This step may not be necessary depending on the temperature of the butter you used for the frosting.
  • When the cake has cooled completely, spread the frosting over the cake.
  • Refrigerate the cake for about 1 hour to allow the frosting to set before serving, or serve immediately if you desire.

  • Preheat oven to 350 degrees F. Butter and flour two 6-inch cake pans. This batter is sticky so I also lined the bottoms with parchment. I highly recommend this. You don’t want to bake the whole thing up and have it stick. Set the pans aside. See below for link in the *notes* on baking cake layers flat. I do this every single time and it’s SO helpful.
  • Add all of the ingredients to the the cleaned large bowl or the bowl of the stand-up mixer (with the paddle attachment), add the butter, powdered sugar, melted chocolate, cream or milk and vanilla extract. Beat until thoroughly combined and fluffy, about 1 minute. Scrape down the sides of the bowl and mix one last time, just to ensure everything is combined.
  • Add a few tablespoons of frosting to the center of one of the rounds of cake. Smooth it around, until it reaches the edges. Add a pinch of salt all around. Place the second layer on top. Since I was going for a “naked cake” look, I added more frosting to the seam of the two cakes and smoothed it all around. Neat is not the goal! Add the remaining frosting to piping bag with a star tip attached. In the center of the top layer of cake, pipe out a rose by starting in the center and going all the way around twice. Complete the cake by adding smaller roses around the center rose. Don’t be shy to practice on a piece of parchment first and then simply add the frosting back to the piping bag—no waste!

  • CAKE Adjust oven rack to lower-middle position and preheat the oven to 350˚f / 180˚c. Line three 8 inch cake pans with parchment paper, and spray with baking spray. (If you don't have three pans, the batter can be kept at room temp for 90 mins)
  • Combine butter and coffee in a 5 quart pot, and set over low heat. Once the butter is melted , remove from the heat and whisk in the cocoa and chocolate, followed by the brown sugar, vanilla, and salt. Mix in the eggs and yolks. Sift in the flour and baking soda. Whisk thoroughly to combine, then divide the mixture between the 3 pans (it should yield approx 23 ounces in each) Bake until the cakes are firm, about 30 minutes, or until they register 210˚f on a thermometer. A toothpick inserted in the centre will emerge with a few crumbs left on it. Cool until no trace of warmth remains, at least 90 minutes.
  • MILK CHOCOLATE FROSTING In a 3 quart stainless steel pot, warm the cream over medium heat. When bubbling hard around the edges, pour over chocolate in the bowl of a stand mixer. Whisk by hand until smooth, stir in the salt, and set aside until no longer steaming. Cover and refrigerate six hours, or until thick and cold (45˚f) about 6 hours. Alternatively you can cool in an ice bath, stirring frequently, for about an hour. Whip with a whisk attachment on medium high until the frosting is thick and silky. (75 to 120 seconds). Use immediately.
  • ASSEMBLY Invert each pan onto a wire rack, and peel off the parchment. Trim the tops of the cake using a serrated knife. Place one layer cut side up on a serving plate or turntable. Cover with a cup of the frosting spreading evenly with the back of a spoon or offset spatula. Repeat with the second and third layers, cut side down. Finish the top and sides of the cake with the remaining frosting, and the decorations of your choice (I piped a little leftover on as blobs around the top of the cake, and then added some chocolate balls). The frosted cake will keep under a dome or pot for 24 hours. Once cut, wrap slices individually and store at room temp for up to 4 days.
