1 pound baby Yukon Gold potatoes, halved
cooking spray
1 tablespoon olive oil
1 teaspoon chili powder
1 teaspoon ground cumin
½ cup salsa
4 lime wedges
¼ cup chopped fresh cilantro
⅛ teaspoon salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil.
  • Place potatoes on the prepared baking sheet; coat generously with cooking spray.
  • Bake in the preheated oven until starting to brown, about 15 minutes.
  • Combine oil, chili powder, and cumin in a large microwave-safe bowl. Microwave for 1 minute, stirring after 30 seconds. Add potatoes and salsa to the bowl; toss. Return to the baking sheet.
  • Continue baking until potatoes are tender, about 15 minutes more. Squeeze lime over potatoes and sprinkle cilantro and salt on top.

350g small new potato
a small handful of fresh mint and parsley
a small roughly chopped garlic clove
3 roughly chopped salad onions
2 tbsp each olive oil and water
salt and freshly ground black pepper to taste

Steps:

  • Boil the small new potatoes for 15-20 minutes. Meanwhile, put a small handful each of fresh mint and parsley in a food processor with a small roughly chopped garlic clove and salad onions. Whizz together until finely chopped then add the olive oil and water and whizz again, adding salt and freshly ground black pepper, Drain the potatoes and toss with the herb salad.

2 Tablespoons of vegetable oil
2 cups of peeled & diced potatoes
1/3 cup diced white onion
1 Serrano pepper or Jalapeño pepper (finely chopped*)
2 Roma tomatoes diced (about 1 1/4 cup)
Salt to taste

Steps:

  • Heat vegetable oil in a large-size frying pan over medium-high heat.
  • Once the oil is hot, add the diced potatoes and brown for about 8-10 minutes. Stir frequently to avoid burning them. Make sure all the sides of the potatoes are golden.
  • Stir in the onion and cook for about 3 minutes. By that time the onion should be translucent.
  • Add the Serrano or Jalapeño pepper and cook for 2 more minutes, stirring from time to time.
  • Now, add the chopped tomato, salt to taste, and gently stir them in with the potatoes, onion, and peppers. I like the tomatoes cubes to still hold some of their shape when serving, so this step is a quick one, just 1 or 2 minutes before proceeding to serve. Of course, if you like your tomatoes well cooked, then cook them a little bit longer.

1 lb extra lean ground beef
1/2 cup chunky salsa
1 teaspoon chili powder
1 cup shredded cheddar cheese (4 oz.)
sour cream, if desired
additional salsa, if desired

Steps:

  • Pierce potatoes several times with fork. Place on microwavable paper towel in microwave oven. Microwave on High 10 to 12 minutes or until tender, turning potatoes over and rearranging halfway through cooking. Let stand in microwave oven 5 minutes.
  • Meanwhile in 10-inch nonstick skillet, cook ground beef over medium-high heat 5 to 7 minutes, stirring frequently, until thoroughly cooked; drain if necessary.
  • Stir in 1/2 cup salsa and the chili powder.
  • Cut potatoes in half lengthwise; place 2 halves on each plate. Spoon mixture evenly over potatoes.
  • Sprinkle 1/4 cup cheese over each serving. Serve with sour cream and additional salsa.

1 (6 ounce) can pitted black olives, or more to taste
1 (4 ounce) can chopped green chilies
1 large white onion, cut into large chunks
2 tomatoes, cored
3 tablespoons olive oil
1 ½ tablespoons red wine vinegar
4 cloves garlic, peeled
3 drops hot pepper sauce (such as Tabasco®), or to taste

Steps:

  • Drain green and black olives and green chiles in a colander. Chop white onion in a food processor, pulsing several times. Add green and black olives, green chiles, tomatoes, olive oil, red wine vinegar, garlic, and hot sauce to the processor. Pulse several more times to mix; process until chunky, 20 to 30 seconds.

600g whole baby new potatoes (see tip)
1 tbsp sea salt
3 small handfuls of herbs , leaves picked (a mix of basil, mint and parsley is good)
2-3 tbsp white wine vinegar
6 tbsp olive oil
2 garlic cloves , crushed

Steps:

  • Put the potatoes in a frying pan wide and deep enough so that they sit in an even layer (don't cut the baby potatoes in half, otherwise they will absorb the salt and be too salty to eat). Pour over just enough water to cover (about 300ml) and add the salt.
  • Bring to the boil and simmer gently for 40 mins until the potatoes have cooked. When the water begins to evaporate, give the pan a shake to coat the potatoes in the salt. Once the water has gone completely and the potatoes are covered in a light salty crust, they are ready to serve.
  • Meanwhile, make the herb salsa. Chop the herbs finely, tip into a bowl and mix in the vinegar, oil and garlic. Taste and season as required. Serve the potatoes with a little salsa drizzled over and the rest served separately for dipping.

2 pouches (4.7 oz each) Betty Crocker™ roasted garlic mashed potatoes
4 cups water
1 1/2 cups milk
6 tablespoons butter or margarine
1 1/2 cups Cheddar French-fried onions
3/4 cup shredded Cheddar cheese (3 ounces)
3/4 cup Old El Paso™ salsa (any variety)
3 tablespoons sliced ripe olives or Old El Paso™ chopped green chiles, if desired
Sour cream, if desired
Chopped fresh cilantro, if desired

Steps:

  • Heat oven to 425°F. In 4-quart saucepan, heat water, milk and butter to boiling. Stir in 2 pouches potatoes; beat with fork until smooth. Stir in 3/4 cup of the onions.
  • Spread mixture in ungreased 2-quart baking dish. Sprinkle with cheese. Spread salsa over cheese. Top with olives and remaining onions.
  • Bake uncovered 3 to 5 minutes or until onions are golden. Serve with sour cream and cilantro.
