CRACKED PEPPER-PARMESAN CRISPS

Steps:
- 1. Combine the cheeses and spoon into 14 mounds, 2 inches apart on a baking sheet, using about 1 Tbsp. cheese mixture for each.
- 2. Flatten mounds slightly and sprinkle with pepper.
- 3. Bake in a preheated 350-degree oven for 6 minutes or until golden brown, rotating the baking sheet after 3 minutes.
- 4. Transfer immediately to wire rack and cool completely.
- 5. To change it up, try using cayenne pepper or smoked paprika instead of the black pepper.
HERBED PARMESAN CRISPS

Steps:
- Preheat oven to 350°F.
- In a small bowl, mix all the ingredients together. On a baking sheet coated lightly with cooking spray or lined with parchment paper, place tablespoonfuls of the mixture with a couple inches between each, and spread them out into ovals about four inches long and two wide. (You should have about 12 crisps.) Bake in the oven until they turn golden brown, 6 to 8 minutes. If not shaping them around a spoon handle, cool crisps flat on a metal rack.
PARMESAN CRISPS
Steps:
- Preheat the oven to 300 degrees.
- Grate cheese on the small hole side of a 4-sided box grater into a small bowl. Using a tablespoon measure, place cheese in mounds onto a nonstick silicone pad or greased parchment paper-lined cookie sheet. Flatten out mounds with the back of a spoon, making sure mounds are at least 4 inches apart. Season with pepper, paprika, or cayenne, if desired. Bake on the middle rack of the oven for 5 to 6 minutes or until golden.

- Preheat oven to 400 degrees F.
- Pour a heaping tablespoon of Parmesan onto a silicone or parchment lined baking sheet and lightly pat down. A silicone baking sheet is highly recommended. Repeat with the remaining cheese, spacing the spoonfuls about a 1/2 inch apart.
- Bake for 3 to 5 minutes or until golden and crisp. Cool.

- Preheat oven to 450°F.
- Place heaping teaspoonfuls of cheese 2 inches apart on nonstick baking sheet.
- Flatten the cheese mounds with the back of a spoon.
- Top each mound with a pinch of black pepper.
- Bake 1 1/2 - 2 minutes until just lightly browned.
- Cool 2 minutes, carefully remove to a rack cover with paper towels.
- Can be stored in the refrigerator in an air tight container for up to 3 days.
