Sweet, salty and chocolaty are a great combination to have with Granny Smith Apples. Try these treats at your next Fall gathering.

6 each Granny Smith apples
6 each wooden sticks
1 (14 ounce) package individually wrapped caramels, unwrapped
2 tablespoons water
½ teaspoon vanilla extract
1 ½ tablespoons coarse sea salt
1 cup semisweet chocolate chips

Steps:

  • Insert wooden sticks 3/4 of the way into the stem end of each apple. Place apples on a cookie sheet covered with lightly greased aluminum foil.
  • Combine caramels and water in a saucepan over low heat. Cook, stirring often, until caramel melts and is smooth. Stir in the vanilla. Dip each apple into the caramel and gently run apples around insides of saucepan to scrape off some of the caramel. Scrape excess caramel from the apple bottoms using the side of the saucepan. Place on the aluminum foil. Sprinkle lightly with the coarse salt and chill.
  • Put the chocolate chips in a microwave-safe bowl. Cook in the microwave for 30 second intervals, stirring between each, until melted and smooth. Drizzle over the apples and return them to the refrigerator until ready to serve.

Crisp autumn apples dipped into homemade apple cider caramel...made with cider, honey, and a touch of bourbon. Each caramel apple is then drizzled generously with chocolate, and finished off with a sprinkle of flaky sea salt.

6-8 apples, I love using honeycrisp
1 cup apple cider
1 cup heavy cream
2 1/2 cups granulated sugar
1/2 cup honey
4 tablespoons salted butter, at room temperature
2 tablespoons bourbon (optional)
2 teaspoons vanilla extract
1/2 cup semi-sweet or dark chocolate, melted

Steps:

  • 1. Insert wooden twigs into the apples. Line a baking sheet with parchment.2. In a large saucepan, combine the apple cider, heavy cream, sugar, and honey. Bring to a boil over medium-high heat, stirring occasionally until the mixture reaches 240 degrees F. on a candy thermometer, about 12-14 minutes total. 3. Remove from the heat and carefully stir in the butter, bourbon, and vanilla. Return to high heat and bring the mixture to 235-245 degrees F. Remove from the heat.4. Very carefully transfer the caramel to a heat proof bowl and let stand 2-3 minutes. 5. Swirl apples in caramel, allow the excess caramel to drip off. Place each apple on the prepared baking sheet. Repeat with remaining apples.6. Let the caramel apples set for about 15-30 minutes (in the fridge or on the counter), then drizzle each apple with melted chocolate. Dig in and get messy! Apple will keep for about a week in the fridge.

  • While the nuts roast, start the caramel. Push the twigs or wooden sticks into the top of the apples. Return apples to the refrigerator until caramel is ready for dipping. Line a baking sheet with wax paper.
  • Place sugar, corn syrup, and bourbon in a large saucepan. Bring to a boil, boil, without stirring, 9 minutes or until light golden. Add the heavy cream, butter, vanilla, and salt, slowly stirring into pan. Boil until candy thermometer reaches 235°, stirring frequently. This took me a total of about 25 minutes.
  • Swirl apples in caramel, allow the excess caramel to drip off and then drag the bottom half of your apple through the pecans. Place on baking sheet lined with wax paper. Repeat with remaining apples.
