LAMB MERGUEZ SAUSAGE PATTIES

Lamb Merguez Sausage Patties image

Merguez sausage is not commonly stocked at the grocery store, so I decided to come up with an easy home version.

Provided by Chef John

Categories     World Cuisine Recipes     African

Time P1DT20m

Yield 4

Number Of Ingredients 11

1 teaspoon salt
¼ teaspoon fennel seeds
1 teaspoon ground cumin
½ teaspoon ground cinnamon
½ teaspoon ground coriander
¼ teaspoon ground turmeric
3 cloves garlic, peeled
2 tablespoons harissa, or to taste (see Ingredient note)
1 tablespoon tomato paste
1 pound lean ground lamb
1 tablespoon olive oil

Steps:

  • Combine salt and fennel seeds in a mortar and pestle and pound until fine. Stir cumin, cinnamon, coriander, turmeric, and garlic cloves into the salt mixture and continue grinding to form a thick paste. Stir in harissa sauce and tomato paste until combined.
  • Combine ground lamb and the spice paste together with a fork in a large bowl. Cover and refrigerate overnight.
  • Form sausage into patties. Heat olive oil in a large skillet over medium-high heat. Cook patties until no longer pink inside, 5 to 8 minutes per side, depending on the size of the patties.

LAMB CASSEROLE

Lamb Casserole image

You'll adore this casserole of fresh lamb, smoked ham, sausage, mixed vegetables, and large, white Italian kidney beans. Serve with fresh crusty bread. If you cook the lamb shank in water, boil it until it's falling off the bone. Then strain and reserve the stock, and replace the chicken stock with the lamb stock.

Provided by SAF

Categories     World Cuisine Recipes     European     Italian

Time 1h50m

Yield 6

Number Of Ingredients 11

2 sprigs fresh parsley
2 sprigs fresh thyme
2 bay leaves
2 pounds lamb shank, cooked and diced
1 pound cubed ham steak
10 small onions
5 tomatoes - blanched, peeled and chopped
2 cloves garlic, chopped
4 cups chicken stock
2 (15 ounce) cans cannellini beans, drained and rinsed
6 links pork sausage links, halved

Steps:

  • Tie the sprigs of parsley and thyme together with the bay leaves or place them in a cheesecloth and tie closed, because you will want to easily remove the herbs later. Place the herb bundle, lamb, ham, onion, tomato, garlic and stock in a large saucepan over medium-high heat.
  • Bring to a boil, reduce heat to low and simmer for about 1 hour. Stir in the beans and sausage and continue to simmer for about 15 minutes, or more if you want a thicker consistency.

HOMEMADE MERGUEZ SAUSAGE RECIPE

Homemade Merguez Sausage Recipe image

Merguez, a North African lamb sausage, is a powerhouse of spicy and earthy flavor, making it one of the tastiest sausages around.

Provided by Joshua Bousel

Categories     Mains     Sausage

Time 2h10m

Yield 4 pounds sausage

Number Of Ingredients 12

2 teaspoons whole cumin seed
2 teaspoons whole coriander seed
2 teaspoons whole fennel seed
2 tablespoons paprika
2 tablespoons Kosher salt
1 teaspoon cayenne pepper
3 pounds lamb shoulder, cut into 3/4-inch cubes and removed of gristle
1 pound lamb, beef, or pork fat, cut into 3/4-inch cubes
2 tablespoons freshly minced garlic (about 6 medium cloves)
1/3 cup harissa
1/3 cup ice water
Lamb casings, soaked in warm water for 30 minutes prior to use

Steps:

  • Place cumin, coriander, and fennel seeds in a cast iron skillet over medium heat and toast until fragrant, about 2 minutes. Transfer to a spice grinder and grind into a fine powder. Transfer spice mixture to a small bowl and mix in paprika, salt, and cayenne.
  • Place lamb and fat in a large bowl. Add in spice mixture, garlic, and harissa. Toss to thoroughly coat meat and fat in spices. Refrigerate until chilled, about 20 minutes.
  • Grind mixture through a meat grinder, fitted with small die, into a medium bowl set into a large bowl filled with ice.
  • In the bowl of a stand mixer fitted with a paddle attachment, mix ground meat on low speed for 1 minute. Add in water and mix until liquid is incorporated and sausage is uniform and sticky, about 1 minute more.
  • Form a small sausage patty; place rest of sausage mixture in refrigerator. Cook patty in a small frying pan over medium-high heat until cooked through. Taste and adjust seasonings if necessary.
  • Stuff sausage into lamb casings and twist into 6-inch links. Refrigerate until ready to cook.
  • Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and spread coals evenly over entire surface of coal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate . Grill over medium-high direct heat until sausage registers 155°F when an instant read thermometer is inserted in middle of link. Remove from grill, let rest for 5 minutes, and serve.

Categories     appetizer

Time 1h55m

Yield 10 servings

Number Of Ingredients 25

8 cups beef broth
8 cups port wine
7 bay leaves
5 cinnamon sticks
1/4 cup whole peppercorns (mixed colors)
1 onion, halved, skin on
3 tablespoons kosher salt
1 teaspoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cumin
3 pounds ground leg of lamb
6 whole eggs
1 cup heavy cream
1/4 cup extra-virgin olive oil
3 cups chopped pistachios
1/4 cup shallots, minced
1/4 cup garlic, minced
1 cup finely chopped fresh rosemary leaves
1/4 cup port
1 tablespoon ground allspice
1 tablespoon ground cumin
1 teaspoon ground nutmeg
1 tablespoon kosher salt
1 teaspoon coarse ground black pepper
Dried bread crumbs

Steps:

  • To make the poaching liquid: In a shallow 3-quart pot, add all ingredients. Bring to a simmer.
  • To make the lamb sausage: Mix all ingredients except bread crumbs in a large bowl; add 1 to 2 cups bread crumbs until mixture can form a shape without sticking to your hands. Cut cellophane into 8 by 8-inch squares. Place 2 tablespoons of mixture in a tube shape and roll into cellophane, twisting the ends like a tootsie roll for a tight sausage shape. Test 1 sausage in boiling poaching liquid for approximately 20 minutes before cooking all sausages. Let cool in refrigerator for 15 minutes. Slice sausage to check consistency, if it falls apart, add more bread crumbs to mixture.

LAMB SAUSAGE

Lamb Sausage image

This is a lamb sausage recipe that I stumbled upon which is a departure from the expected Middle-Eastern/Arabic or the handful of Scots and Irish recipes available. It definitely evokes the taste of Spain, Provence, Italy, and Greece but without being recognizably any single one of those cuisines.

Provided by Joe Schroeter

Categories     Lamb/Sheep

Time P1DT30m

Yield 3 lbs. sausage

Number Of Ingredients 10

2 1/2 lbs lamb
1/2 lb pork fat
4 tablespoons fresh rosemary, minced
2 teaspoons cracked black pepper
1 tablespoon dried thyme
25 g fresh garlic, minced
10 g juniper berries, cracked and chopped
1 teaspoon spanish hot paprika
2 teaspoons kosher salt
1 cup red wine, reduced to 1/2 c

Steps:

  • Cut lamb and pork fat into 1" chunks. Toss with all remaining ingredients except wine and refrigerate for 12 hours. Spread on a tray and freeze for 1 hour until meat is partially, but not completely, frozen. Chill meat grinder and bowl for 1 hour in fridge.
  • Grind using a 1/8th inch die. Add reduced wine, and stir to mix. Stuff into medium pork casings.
  • Sausage is really easy to make, especially if you have a Kitchen Aid stand mixer. Get the grinding and stuffing attachments.

  • Chop the meat and fat into chunks (about 1-2''), mix with spices, salt, and wine. Place in the refrigerator overnight.
  • The next day, move the meat to the freezer for about 1-2 hours until it's very cold (or partially frozen). Place a large bowl in the freezer with it.
  • Grind the meat using a coarse die, letting it come out into the cold bowl from the freezer. Keeping the meat cold is important for the final texture.
  • Place the ground meat in a stand mixer (ie. kitchen aid) and mix on low with the paddle for about 1 minute to help the meat come together (again, for good texture). This can also be done by hand if you don't have a mixer.

  • In the same skillet, heat the olive oil. Add the onion, carrot and celery, cover and cook over low heat, stirring occasionally, until tender. Add the raisins and vinegar and cook until reduced by half, about 5 minutes. Add the chicken stock and the cooked sausage and simmer over moderately low heat until the stock is reduced by half, about 10 minutes. Remove the sauce from the heat and add the milk; don’t worry if it curdles.

  • Poach lamb sausage. Before getting your hands on seasoning lamb sausages, you need to poach them as the first preparation step. Poaching sausages allow the meat to fully absorb all seasoning ingredients later and get cooked evenly without being too dry when heated on medium high heat.
  • Cook lamb sausage. The easiest way to cook lamb sausage is to toss them all in an oven. Oven-cooked lamb sausages are delicious, easy to eat and serve without messing up in the kitchen.
  • Sauteed lamb sausage. Saute French lamb sausage is more complicated than cooking merguez sausage in the oven, but you will have the chance to season lamb sausages to your preference while checking how they look while putting on the high heat.
