- Add 2 chopped carrots, and 2-4 chopped potatoes (optional 2 cups chopped cabbage).
- Bring to a boil; reduce heat and cover and simmer for one hour or until peas are tender -- .

Place the seasonings in a small bag so you can place them under the lid after filling the jars with the other ingredients. Start with the minced onions, the green split peas, dried barley, lentils, rice, ending with pasta on top in the bag. The seasoning bag will go on top of the pasta bag.

- In a quart sized jar, place rice, pressing down carefully.
- Then add seasoning packet, making sure it can be seen from the edges.
- Then fill the rest of the jar with crushed tortilla chips.
- Close with lid.
- Tape a can of chicken to the top of jar (or if you wish, include instructions for adding a can of chicken to the instructions below).
- For 12 cups of delicious Tortilla Soup:.
- Carefully empty tortilla chips from jar and set aside in a bowl.
- Remove seasoning packet and also set aside.
- Pour remaining jar contents into a large pot for cooking rice.
- Add 10 cups of water, seasoning packet and one can (10oz) of diced tomatoes and green chilies.
- Bring to a boil, then lower heat, cover and simmer for 20 minutes.
- Add tortilla chips, and cover and simmer for five more minutes.
- Serve immediately.

BEAN SOUP MIX IN A JAR
This soup mix is full of beans! Be warned it looks prettier in the jar than in the bowl - but it's a tasty, hearty soup that will fill you up.

- In pint size (500 ml) jar, layer beans and peas in order listed above or as you prefer.
- In small bowl, mix remainder of ingredients. Place in a small plastic bag or wrap well in plastic wrap to keep separate from beans and peas.
- Place spice pack on top of beans and peas. Seal jar.
- Decorate, label and include Cooking Directions.
- Cooking Instructions
- Also Needed:14 oz can diced tomatoes
- Remove spice pack.
- Rinse remainder of ingredients well, then drain.
- Place bean mix in pot and add 6 cups water and bring to boil. Boil for 10 minutes to remove any toxins from beans.
- Remove from heat and let stand for 1 hour. Drain, rinse, drain.
- Return to pot, add 7 cups water, 1 can (14 oz/398 ml) diced tomatoes, spice mix and bay leaf.
- Bring to boil. Reduce heat and simmer for 1 to 11/2 hours.
- Adjust seasoning to taste, remove bay leaf and garnish with fresh parsley.
- Makes 9 cups.

CHICKEN NOODLE SOUP MIX IN A JAR

- Grab a quart (32-ounce jar) mason jar and layer the dried vegetables in order. Start with the onions, carrots, celery, and then the noodles. Place the sweet basil, garlic powder, one bay leaf, and the bouillon in a small bag. Seal the bag, it will go on top of the dry soup mix ingredients. Place a lid on and seal the jar with a FoodSaver. When ready to cook, place the dry ingredients in a soup pot, add the water, the seasonings, and bring it to a boil. After the soup comes to a boil, simmer for 20-30 minutes or until the vegetables and pasta are cooked to perfection. Remove bay leaves. Add the 2 cups of cooked chicken, stir until heated through. Salt and pepper to taste. Enjoy.

- Layer lentils, leeks, peppers, and carrots in Mason jar.
- Place bay leaf standing up on one side of the jar.
- Pour tortellini into jar, being careful not to overfill.
- Add the bouillon, onion powder, pepper, salt, fennel, parsley and paprika to a small zip-top bag.
- Seal the bag and place on top of the soup mixture.
- Add the following directions: Add all ingredients to a large saucepan with 5 cups of water and 1 (14oz) can of diced tomatoes. Bring to a boil. Reduce heat and simmer for 15-20 minutes or until lentils and tortellini are tender. Serve topped with grated cheese or pesto. Optional additions: Add 2 cups of chopped chicken or turkey and ½ cup frozen peas.
