1 package (8 ounces) reduced-fat cream cheese
1 teaspoon fat-free milk
1/3 cup each finely chopped sweet red, green and yellow pepper
1 can (4-1/4 ounces) chopped ripe olives, drained
2 tablespoons ranch salad dressing mix
6 flour tortillas (6 inches)

Steps:

  • In a bowl, beat cream cheese and milk until smooth; stir in the peppers, olives and dressing mix. Spread over tortillas. Roll up jelly-roll style; wrap tightly in plastic wrap. , Refrigerate for 2 hours or until firm. Just before serving, cut into 1-in. pieces.

Classic appetizer with a Spanish flare that unites the flavors of red peppers, chorizo, and green olives.

3-5 links Spanish chorizo; casings removed
4-0.75 ounce creamy garlic-herb cheese wedges
4 flour tortillas; burrito size
1/2 cup diced roasted red peppers
1/2 cup diced Mezzetta Spanish Queen Olives with Pimentos

Steps:

  • Remove the casings from the sausage, crumble as finely as possible, and add the meat to a pan over medium-high heat. Cook until done, about 5 or so minutes.
  • Drain off any rendered grease.
  • Spread one cheese wedge over one flour tortilla, making sure the cheese is evenly spread to the edge.
  • Sprinkle 1-2 tbsp of both diced roasted red peppers and olives, spacing them out evenly.
  • Sprinkle 2 tbsp cooked crumbled chorizo.
  • Roll the tortilla as tightly and thinly as possible.
  • Slice off both ends and discard.
  • Slice about 1-inch slices; making approximately 7 pinwheels per tortilla.
  • Cover and chill until ready to serve.

1 (1 ounce) package ranch dressing mix
2 green onions, minced
4 (12 inch) flour tortillas
½ cup red bell pepper, diced
½ cup diced celery
1 (2 ounce) can sliced black olives
½ cup shredded Cheddar cheese

Steps:

  • In a medium-size mixing bowl, combine cream cheese, ranch dressing mix, and green onions. Spread this mixture on each tortilla. Sprinkle red pepper, celery, black olives, and cheese (if you'd like) over the cream cheese mixture. Roll up the tortillas, then wrap them tightly in aluminum foil.
  • Chill 2 hours or overnight. Cut off ends of the rolls, and slice the chilled rolls into 1 inch slices.

3 tablespoons cream cheese
1/4 cup feta cheese, finely crumbled
1/4 cup kalamata olive, pitted and finely chopped
1/4 cup red bell pepper, finely chopped
red pepper flakes, to taste (optional)
2 tablespoons chopped fresh oregano or 2 tablespoons parsley

Steps:

  • Preheat oven to 350°F
  • Spray cookie sheet with cooking spray. Unroll dough and separate into 2 long rectangles, press each into 12x4-inch rectangle, firmly pressing perforations to seal.
  • Spread 1 1/2 tablespoon cream cheese over each rectangle.
  • Sprinkle evenly with feta cheese, olives, bell pepper, red pepper flakes and oregano.
  • Starting with one short side, roll up each rectangle.
  • With a serrated knife, cut each roll into 8 slices, place cut side down on cookie sheet.
  • Bake 15 to 20 minutes or until edges are golden brown.Immediately remove from cookie sheet and serve warm.
