2 tablespoons extra-virgin olive oil, 2 turns of the pan in a slow stream
2 carrots, peeled and chopped
2 ribs celery, chopped
1 medium onion, chopped
2 bay leaves, fresh or dried
Salt and freshly ground black pepper
1 pound ground beef, pork and veal combined
1 egg, beaten
2 cloves garlic, minced
1/2 cup grated Parmigiano-Reggiano or Romano, a couple of handfuls
1/2 cup plain bread crumbs, a couple of handfuls
1/2 teaspoon freshly grated or ground nutmeg
6 cups chicken stock or broth
2 cups water
1 1/2 cups dried pasta, rings, broken fettuccini or ditalini
1 pound triple washed fresh spinach, coarsely chopped
Grilled 4 Cheese Sandwiches, recipe follows*

3 tablespoons butter
1 clove garlic, cracked away from skin
8 slices crusty Italian semolina bread
1 cup shredded provolone
1 cup shredded mozzarella
1/2 cup grated Parmesan or Romano
1 cup shredded Asiago

Steps:

  • In a deep pot over medium heat add oil, chopped carrots, celery and onions and bay leaves. Season with salt and pepper. Cover pot and cook veggies 5 or 6 minutes, stirring occasionally.
  • While the veggies cook, combine meat, egg, garlic, grated cheese, bread crumbs, salt, pepper, nutmeg.
  • Uncover your soup pot and add broth and water to the pot. Increase heat to high and bring soup to a boil. When soup boils, reduce heat a bit and start to roll meat mixture into small balls, dropping them straight into the pot. You are making meat dumplings that will cook in the broth. When you are done rolling the meat, add pasta to the soup and stir. Cover and simmer soup 10 minutes. When pasta is tender, stir in chopped spinach in batches. When spinach has wilted into the soup, the soup is done and ready to serve. Adjust your seasonings. Serve soup with crusty bread or grilled 4 cheese sandwiches.
  • In a small skillet over medium low heat, combine oil, butter and garlic. Cook garlic in butter and oil gently for 2 or 3 minutes. Remove garlic butter mixture from heat.
  • Place a large nonstick skillet on the stove over medium high heat. Using a pastry brush, brush 1 side of 4 slices of bread with garlic oil and place buttered side down in skillet. Top each slice with equal amounts of the 4 cheeses, distributing them equally over the 4 slices. Top each sandwich with another slice of bread brushed with garlic butter, buttered side up. Flip the grill cheese sandwiches a few times until cheeses are melted and gooey and bread is toasty and golden. Cut grilled 4 cheese sandwiches from corner to corner and serve.

1 (32 ounce) container Simply Potatoes Traditional Mashed Potatoes or 1 (32 ounce) container garlic mashed potatoes
8 cups whole milk
3 cups shredded cheddar cheese
8 -12 slices bacon (cooked, diced)
1 small mayan sweet onion (chopped)

Steps:

  • Start by heating the potato's half way in the microwave.
  • Bring 2 cups of milk to a low boil. add chopped onions.
  • Add potato's to heated milk/onions, stir until blended well.
  • Slowly add rest of milk 1 cup at a time, blending well until reaching desired consistency.
  • Add 2 cups of cheese slowly, mixing well to prevent clumping. (use rest for garnish).
  • Add half of bacon to soup mix well, (use rest for garnish).
  • Served immediately, with crusty Italian or bread of your choice :).

2 cups Simply Potatoes O'Brien Hash Browns
2 cups chicken broth
1/4 cup sour cream
1/2 cup shredded cheddar cheese
1/4 cup green onion, thinly sliced

Steps:

  • Put hash browns and chicken broth in a 2 quart saucepan.
  • Bring to a boil, then reduce heat and let simmer uncovered for 20 minutes.
  • Add cheese (save a pinch for topping soup if desired) and stir until melted.
  • Remove from heat and add sour cream - stir to blend.
  • Ladle into individual soup bowls and top with reserved cheese (if desired) and green onions. Enjoy!

1/4 cup sour cream

Steps:

  • In 12-inch nonstick skillet, combine potatoes, soup and water; stir gently to mix. Bring to a boil. Reduce heat to low; simmer 5 minutes, stirring occasionally.

1½ tbsp rapeseed oil
1 onion, finely chopped
2 red peppers, deseeded and sliced
1 garlic clove, crushed
½ tsp chilli flakes
2 x 400g cans chopped tomatoes
100g giant couscous
500ml hot vegetable stock
12 pork meatballs
150g baby spinach
½ small bunch of basil
grated parmesan, to serve (optional)

Steps:

  • Heat the oil in a saucepan. Fry the onion and peppers for 7 mins, then stir through the garlic and chilli flakes and cook for 1 min. Add the tomatoes, giant couscous and veg stock and bring to a simmer.
  • Season to taste, then add the meatballs and spinach. Simmer for 5-7 mins or until cooked through. Ladle into bowls and top with the basil and some parmesan, if you like.

2 eggs
1/2 cup dry bread crumbs
1 envelope onion soup mix
1-1/2 pounds lean ground beef (90% lean)
2 tablespoons all-purpose flour
6 medium potatoes, peeled and thinly sliced
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1 cup 2% milk
Paprika, optional

Steps:

  • In a large bowl, combine the eggs, bread crumbs and soup mix. Crumble beef over mixture and mix well. Shape into 1-in. balls. In a large skillet, brown meatballs in small batches over medium heat; drain. Sprinkle with flour; gently roll to coat. , Place half of the potatoes in a greased 2-1/2-qt. baking dish. Top with meatballs and remaining potatoes. In a small bowl, combine soup and milk until blended; pour over potatoes. Steps:

4 teaspoons vegetable oil
1 medium white onion, diced small
Salt and pepper
2 cloves garlic, minced
1/2 teaspoon ground cumin
1/2 teaspoon ground cinnamon
1 1/2 pounds 90% lean ground beef
2 medium sweet potatoes, cut into thin half-moons
4 medium carrots, thinly sliced
3 tablespoons tomato paste
7 cups chicken broth
Chopped fresh cilantro, for serving

Steps:

  • In a medium pot, heat 2 teaspoons oil over medium. Add onion and cook until softened, 8 minutes; season with salt and pepper. Add garlic, cumin, and cinnamon and cook until fragrant, 30 seconds. Transfer mixture to a medium bowl and add beef. Using your hands, gently combine (do not overmix), then form beef mixture into 1-inch balls.
  • Add remaining 2 teaspoons oil to pot and heat over medium-high. Add sweet potatoes and carrots and cook until bright orange, 5 minutes. Add tomato paste and stir to coat. Add broth and bring to a simmer; cook until vegetables are just tender, about 5 minutes. Add meatballs and simmer until cooked through, 12 minutes. Sprinkle with cilantro to serve.
