CORNISH PASTY

Cornish pasty image

Reawaken childhood memories of summer holidays with Sara Buenfeld's eat-by-the-sea favourite, the Cornish pasty

Provided by Sara Buenfeld

Time 1h20m

Yield Makes 4

Number Of Ingredients 9

125g chilled and diced butter
125g lard
500g plain flour, plus extra
1 egg, beaten
350g beef skirt or chuck steak, finely chopped
1 large onion, finely chopped
2 medium potatoes, peeled, thinly sliced
175g swede, peeled, finely diced
1 tbsp freshly ground black pepper

Steps:

  • Rub the butter and lard into the flour with a pinch of salt using your fingertips or a food processor, then blend in 6 tbsp cold water to make a firm dough. Cut equally into 4, then chill for 20 mins.
  • Heat oven to 220C/fan 200C/gas 7. Mix together the filling ingredients with 1 tsp salt. Roll out each piece of dough on a lightly floured surface until large enough to make a round about 23cm across - use a plate to trim it to shape. Firmly pack a quarter of the filling along the centre of each round, leaving a margin at each end. Brush the pastry all the way round the edge with beaten egg, carefully draw up both sides so that they meet at the top, then pinch them together to seal. Lift onto a non-stick baking tray and brush with the remaining egg to glaze.
  • Bake for 10 mins, then lower oven to 180C/fan 160C/gas 4 and cook for 45 mins more until golden. Great served warm.

GREAT GRANDMA JOHNS' PASTIES

Great Grandma Johns' Pasties image

This recipe originated in Cornwall England, and was adapted by my Great Grandmother Johns. It was originally made for the coal miners and wrapped in butcher paper. The hard pastry shell would keep the juicy contents fresh until the miners were ready to eat. My Grandma would serve with relishes and Coca Cola. If you want to make these more quickly, you can use refrigerated pie crusts instead of the pastry recipe.

Time 1h30m

Yield 4

Number Of Ingredients 10

1 ½ cups all-purpose flour
¼ teaspoon salt
½ cup shortening
¼ cup cold water
¾ pound boneless beef sirloin, cubed
1 medium onion, sliced
2 medium potatoes, peeled and thinly sliced
1 teaspoon dried parsley
salt and ground black pepper to taste
¼ cup water, or as needed

Steps:

  • In a medium bowl, stir together the flour and 1/4 teaspoon of salt. Cut in butter with a fork or pastry blender until the mixture resembles bread crumbs. Stir in cold water with a fork until the mixture is able to come together in a ball. Knead a couple of times then divide pastry into two pieces. Pastry may be refrigerated for later use at this time.
  • Preheat the oven to 400 degrees F (200 degrees C). On a lightly floured surface, roll out each half of the pastry into a 10-inch circle.
  • Place half of the potato slices in a line down the center of each circle, leaving at least 1 inch at each end uncovered. Arrange onion slices over the potatoes, and season with salt, pepper and some of the dried parsley. Place half of the beef cubes over each onion layer, then season again with salt, pepper and dried parsley. Fold the edges over the pastry over the filling, and tuck in the ends.
  • Transfer the two pastries to a greased baking sheet, and cut a few slits in the top of each one for ventilation.
  • Bake for 45 minutes in the preheated oven. Remove from the oven, and reduce heat to 350 degrees F (175 degrees C). Spoon 1 teaspoon of water into each slit on the tops of the pasties. Return to the oven, and bake for an additional 15 minutes, or until golden brown. Serve whole, or cut into halves.

CHEF JOHN'S CORNISH PASTY

Chef John's Cornish Pasty image

This Cornish pasty is one of those rare recipes that novice cooks will find easier to make than experienced bakers. That's because to make this to its original, and very sturdy specifications, you're forced to over-mix the dough; a cardinal sin that literally gives pie makers nightmares.

Provided by Chef John

Categories     Main Dish Recipes     Sandwich Recipes

Time 3h25m

Yield 4

Number Of Ingredients 15

4 cups bread flour
3 ounces cold lard
2 ounces cold butter
1 ½ teaspoons salt
⅔ cup ice water, or as needed
12 ounces beef skirt steak, cubed
1 cup diced Yukon Gold potatoes
½ cup diced onion
⅓ cup diced turnip
1 ½ teaspoons salt
1 teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons butter, cut into 8 thin slices
1 large egg, beaten
1 teaspoon water

Steps:

  • Cut flour, lard, cold butter, and 1 1/2 teaspoons salt together in a bowl with a pastry blender until mixture has the consistency of coarse crumbs. Make a well in the center and pour in ice water. Mix with a fork until mixture begins to come together; use hands to form into a dough ball.
  • Turn dough out onto a lightly-floured work surface and knead until dough is smooth and forms a firm ball, about 2 minutes. Wrap dough tightly in plastic wrap and refrigerate until chilled, at least 2 hours.
  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a silicone baking mat.
  • Stir steak, potatoes, onion, turnip, 1 1/2 teaspoons salt, black pepper, and cayenne pepper together in a bowl until evenly-combined.
  • Beat egg and 1 teaspoon water together in a small bowl.
  • Divide dough into 4 equal rounds and roll each round out to about 1/8-inch thickness and 8-inches in diameter. Brush each dough round with egg mixture.
  • Place 1/4 of the steak mixture slightly off-center on each round of dough, and top steak mixture with 2 slices butter. Fold dough over steak filling to form a half moon shape and press edges together to seal. Trim excess dough from edges of pasties. Transfer pasties to the prepared baking sheet and crimp edges with the tines of a fork; poke fork 1 time into the top center of each pasty and brush tops with egg mixture.
  • Bake in the preheated oven until browned and bubbly, about 1 hour. Cool on a wire rack for 5 to 10 minutes.

AUTHENTIC CORNISH PASTIES

Authentic Cornish Pasties image

A flaky pastry crust filled with savory meat and vegetables, the Cornish Pasty is English comfort food at its best!

Provided by Kimberly Killebrew

Categories     Main Course

Time 4h15m

Number Of Ingredients 14

3 1/2 cups (450 grams) all-purpose flour
1 teaspoon salt
5 ounces (140 grams) unsalted butter (, very cold, diced)
5 ounces (140 grams) lard (, very cold)
How to Render Lard ((click link to learn how to make it yourself. It's super easy and much cheaper than store-bought!))
2/3 cup (155 ml) ice cold water
1 pound (450 grams) beef skirt steak or sirloin (, cut into small cubes)
1 pound (450 grams) firm, waxy potato
8 ounces (225 grams) rutabaga (, peeled and diced in 1/4 inch cubes, or slice them according to personal preference )
7 ounces (195 grams) yellow onion (, chopped)
salt and pepper to taste
unsalted butter ((for cutting in slices to lay inside the pasties))
all-purpose flour ((for sprinkling inside the pasties))
1 large egg (, lightly beaten)

Steps:

  • To Make the Shortcrust Pastry: Place the flour and salt in a food processor and pulse a few times until combined. Add the cold butter and lard and pulse a few more times until the mixture resembles coarse crumbs. Add the water a little at a time, pulsing between additions, until the mixture begins to come together. DO NOT over-mix the dough or the pastry crust will be tough and won't be flaky. Form the dough into a ball, wrap in plastic wrap, and refrigerate for at least 3 hours before using (this is crucial). (Can be refrigerated for a few days or frozen for up to 3 months.)
  • To Make the Cornish Pasties: Preheat the oven to 350 degrees F.Cut it into 6 equal pieces (rolling the dough into a log and then cutting makes this easier). Wrap and keep the other 5 pieces chilled in the fridge while you're working on one at a time. Roll the dough out on a lightly floured work surface to a 8 inch circle that's about 1/8 inch thick. You can use an 8-inch plate as your guide and cut the dough around it to form your circle.
  • Layer the filling (see note at end): Put layer of potatoes down the center of the pastry circle, leaving about 3/4 inch space on the top and bottom edges of the pastry dough. Lightly sprinkle with salt and pepper. Next add a layer of rutabagas, onions and finally the beef, adding a light sprinkling of salt and pepper between each layer. Lay a couple pats of butter on top of the beef and sprinkle a little flour over the filling.
  • Wet the tips of your fingers and lightly moisten the edges of the pastry dough. For this next part work gently so that the filling doesn't puncture through the dough. If this happens, patch up the hole with some of the scrap pieces of pastry dough. Bring the sides up and seal the pasty down the middle. Turn the pasty onto its side and crimp the edges in traditional Cornish fashion (see blog post pictures as a visual).
  • Assemble the remaining pasties and lay them on a lined baking sheet. Use a sharp knife to cut a slit in the center of each pasty. Lightly brush each pasty with the beaten egg mixture.
  • Bake the Cornish pasties on the middle rack for 40-50 minutes until golden in color. Remove from the oven and let them sit for about 10 minutes (they will be very hot inside) before eating. They can be reheated in the oven (recommended for a crispier crust) or microwave. NOTE: Depending on how full you stuff the pasties you may have leftover filling. No worries, just fry it up together or add it to soup and enjoy it as a separate meal.

BEEF AND POTATO PASTIES

Beef and Potato Pasties image

The Cornish pasty, a meat-filled hand pie (rhymes with "nasty," not "hasty"), was brought to northern Michigan by English immigrants, who ate it for lunch as they worked in the mines. For good reason-it's portable, fortifying food with straightforward flavor. A pasty-eating tradition remains in the region; they're nowadays typically served with butter and ketchup.

Categories     Pastry     Beef     Potato     Michigan     Bake

Yield Makes 4

Number Of Ingredients 9

2 1/2 cups all-purpose flour, plus more for surface
2 teaspoons kosher salt, divided, plus more
10 1/2 tablespoons unsalted butter, divided, plus more for serving
3/4 pound boneless chuck steak, cut into 1/2" cubes
1 medium russet potato, peeled, cut into 1/2" cubes (about 1 1/2 cups)
1/2 medium onion, finely chopped (about 1 cup)
3/4 teaspoon freshly ground black pepper
1 large egg
Ketchup (for serving; optional)

Steps:

  • Mix 2 1/2 cups flour and 1 tsp. salt in a large bowl. Cut 10 Tbsp. butter into cubes (it doesn't have to be particularly cold, just firm enough to cut into pieces). Work butter into flour with your fingertips until mixture resembles breadcrumbs. Pour 3/4 cup boiling water over and mix with a wooden spoon. Knead with your hands until dough just starts to form.
  • Turn out onto a clean work surface and knead until dough forms, about 20 seconds; roll into a ball. Divide into 4 portions, shape into rounds, and chill until ready to use.
  • Preheat oven to 375°F. Mix beef, potato, onion, pepper, and 1 tsp. salt in a large bowl.
  • Roll out each round to a 9"-diameter circle on a lightly floured work surface. Arrange a heaping 3/4 cup filling over 1 half of each circle, leaving a 1" border between filling and edge of circle. Cut remaining 1/2 Tbsp. butter into 4 pieces; place on each mound of filling. Pull bottom half of dough over filling; crimp with your fingers to seal. (Alternately, use a fork to seal.)
  • Beat egg and a pinch of salt in a small bowl. Using a pastry brush, brush each pasty with egg wash. Cut a couple small slits in top of pasty. Transfer to a parchment-lined rimmed baking sheet and bake until golden brown and bubbling, 45-60 minutes. Serve with butter and ketchup, if desired.

STEAK AND POTATO PASTIES

Steak and Potato Pasties image

This was always a favorite of mine as a kid - and I loved taking leftovers to school the next day for lunch and eating it cold (with a little malt vinegar). I had given up making my own pastry crust years ago when the shortening I always used was discontinued. I recently found this pastry recipe and am now back to making it from...

Time 1h45m

Number Of Ingredients 16

PIE CRUST
2 1/2 c all purpose flour
1 tsp salt
6 1/2 Tbsp shortening
6 1/2 Tbsp cold butter
1/2 c cold water
FILLING
1 lb steak (i used top sirloin) cut into bite-sized pieces
2 Tbsp butter
1 onion, diced
3 clove garlic, minced
1 Tbsp fresh thyme leaves
1/2 c dry white wine
1 large russet potato, peeled and shredded
salt and pepper to taste
1 egg white, slightly beaten

Steps:

  • 1. Place flour, salt, shortening and butter in a large bowl. Use a pastry cutter, forks or your fingers to mix the butter and shortening into the flour until the pieces are no larger than a pea.
  • 2. Add about half of the cold water and mix together. Add more water until your dough holds together well. Divide the dough in half. Roll out each half into a 8-9" circle.
  • 3. Peel and grate potato. Place in a bowl with salted water to cover and set aside. In a large saute pan, add 2 T butter and melt over low heat. Add onions, garlic and thyme and cook very slowly until the onions begin to caramelize. Add the white wine and and cook until the liquid is gone - about 20 minutes. Add salt and pepper to taste. Place in a bowl and set aside.
  • 4. Cut steak into bite sized pieces. Turn up heat under saute pan to high and add steak, in batches if necessary, to sear. Season with salt and pepper. Stir - just to get some color on the meat - cooking about 3 minutes. Remove to a plate.
  • 5. Place one rolled out pie crust in a pie plate. Trim the edges on HALF of the crust to be just at the edge of the pie plate.
  • 6. Drain the water off the potatoes and squeeze the water out by hand. Fill half of the crust with half of the potato.
  • 7. Add half the steak.
  • 8. Cover with half of the onion mixture.
  • 9. Fold the crust back over the contents. Flip the pie dough under the trimmed edge and crimp.
  • 10. Repeat with the other disk of pie dough.
  • 11. Add fillings.
  • 12. Cover and crimp. Brush the top with egg wash.
  • 13. Bake at 400 for 45-55 minutes. Let set 5-10 minutes before cutting into the pasty.

CORNISH PASTIES

This is a good old fashion pasty that brings back fond memories of family holidays spent in Cornwall when I was growing up. EASY BEEF PASTIES

Easy Beef Pasties image

These easy beef pasties (beef hand pies) are made with a buttery, flaky buttermilk pie crust wrapped around a savory mixture of beef, carrots, potatoes, and onions in a quick homemade gravy.

Provided by Tracy

Categories     Dinner

Time 1h30m

Number Of Ingredients 19

1 cup (8oz, 2 stick cold unsalted butter (cut into 1/2-inch chunks)
2 1/2 cups (300g) all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1/2 to 2/3 cup buttermilk
1 tablespoon unsalted butter
12 ounces beef chuck (stew meat) (diced 1/2-inch)
1 1/2 cups diced potatoes (1/2-inch dice)
3/4 cup diced carrots (1/4-inch dice)
Water
1 1/2 teaspoon salt*
1/2 teaspoon crushed rosemary
1/4 teaspoon pepper
1/4 teaspoon oregano
3 tablespoons unsalted butter
1/2 cup finely diced onion
2 tablespoons all-purpose flour
1 egg
1 tablespoon milk

Steps:

  • Before you begin measuring everything out, place the cubed butter in the freezer to chill.
  • Stir together flour, sugar, and salt, and pour into the food processor. Add butter and pulse until butter is cut into the flour, but still has visible chunks.
  • While pulsing, slowly pour in 1/2 cup of the buttermilk and continue to pulse until the buttermilk is incorporated into the dough. At this point, your dough should look like rough crumbs and hold their shape if squeezed together. If dough does not hold its shape, drizzle in a little more buttermilk, up to 2½ additional tablespoons, until it does. The dough will look a little scary at this point, but don't worry. It's supposed to look like that!
  • Lay a sheet of plastic wrap on the counter and dump half of your dough crumbs onto the sheet. Gather the edges of the plastic wrap and press tightly together to form a 1-inch thick disk. Do the same with the rest of the dough. Place in a plastic bag and refrigerate for at least an hour, up to 24.
  • Preheat oven to 400°F.
  • In a medium saucepan, melt butter over medium-high heat (watch closely, you don't want to burn the butter) and add the meat. Cook until well browned.
  • Add potatoes and carrots and cover with just enough water that the meat and vegetables are submerged. Add salt, rosemary, pepper, and oregano.
  • Bring to a boil, turn down to medium and simmer for five minutes. Meat should be cooked through and potatoes should be softened, but still have a bit of a bite to them.
  • Remove from heat and drain the cooking liquid into a separate container for later use. Set liquid and meat and veggies aside.
  • In a medium saucepan, melt remaining 3 tablespoons of butter over medium heat. Add onions and cook until they begin to soften, about 2 to 3 minutes. Add flour and whisk continuously for 1 minute until a sticky paste forms and flour turns golden. Whisk in 1 cup of the reserved cooking liquid from your meat and potatoes (discard the rest). Simmer for 2 to 4 minutes, whisking continuously, until a thick gravy forms. Remove from heat and stir in the meat and vegetable mixture, making sure everything is well coated.
  • Whisk together egg and milk in a small bowl to make your egg wash.
  • On a well-floured surface, divide your dough into 4 to 6 equal-size pieces and roll into balls. If you are slow at rolling out pastry dough, place all the balls, but one, back in the fridge and work with one at a time so the dough stays chilled and easy to work with.
  • Re-flour your work surface and roll first ball out to 3/8 inch thick with a floured rolling pin, forming as round of a circle as you can manage (trim edges with a knife to make a perfect circle if necessary). Pick up your dough to make sure it is not stuck to your work surface. If it is, use a metal spatula to dislodge it before filling.
  • Brush egg wash around the edges of your pie crust to help seal it and spoon beef mixture over slightly less than half of the dough, leaving a 1/2-inch border. Fold dough over the filling and use a fork to crimp the edges closed. Cut 3 slashes in the top and transfer to baking pan.
  • Repeat with remaining dough balls. You may have a bit of meat mixture left over, depending on how thin you rolled out your dough. You can eat it with a spoon.
  • Brush pasties with egg wash and and bake for 15 to 20 minutes, until they are beautiful and golden.
  • Allow to cool slightly and enjoy.

150g/5½oz swede, peeled and sliced into 1cm/½in thick chips
250g/9oz floury potatoes, peeled and sliced into 1cm/½in thick chips
100g/3½oz onion, chopped
400g/14oz skirt steak, cut into 1cm/½in pieces
1 free-range egg, beaten, to glaze
salt and freshly ground black pepper

Steps:

  • To make the pastry, sift the flour and salt into a bowl, add half the butter and rub it in using your fingertips until the mixture resembles fine crumbs. Stir in the rest of the butter and 300ml/10fl oz cold water and bring it together to form a soft dough. Knead briefly until smooth, then roll out into a rough rectangle. Fold up the bottom third of the dough, then fold down the top third. Wrap and chill for 30 minutes.
  • Unwrap the dough and roll it out on a lightly floured surface to form a rectangle, as in step 1. Fold up the bottom third and then fold down the top third and roll out once more; you should no longer be able to see the pieces of butter. Fold up the dough once more, wrap and chill for another 30 minutes.
  • To make the filling, cut the swede and potatoes chips across into pieces 5mm/¼in in length. Mix the swede, potatoes, onion and steak together with 1 teaspoon of salt and ¾ teaspoon of freshly ground black pepper.
  • Roll out the dough on a floured surface until it is 3mm/⅛in thick and cut out four 20cm/8in discs. Spoon equal amounts of the filling into the centre of each pastry disc and lightly brush the edge of one half of each disc with water. Bring the edges together over the top of the filling and press together well. Then, working from left to right, fold in the corner of the pasty and fold 2.5cm/1in of the edge inwards. Fold over the next 2.5cm/1in and continue like this along the edge, to create a rope-like design which will seal the pasty. Put the pasties onto a greased baking sheet and brush them with beaten egg. Chill for 1 hour.
  • Preheat the oven to 180C/160C Fan/Gas 4. Bake the pasties for 1 hour, turning them around after 30 minutes so they brown evenly. Serve warm.

CORNISH PASTIES

Cornish Pasties image

Provided by Food Network

Categories     main-dish

Time 1h20m

Yield 6 Cornish meat pasties, serving 6 as a light lunch

Number Of Ingredients 14

2 teaspoons confectioners' sugar
1 teaspoon salt
3 ounces cold, unsalted butter, cut into pieces
4 ounces lard or vegetable shortening, cut into pieces
1 egg yolk
6 tablespoons cold water
10 ounces chuck steak, trimmed and cut into scant 1/4-inch dice
1 small onion, very finely chopped
1 medium carrot, cut into 1/4-inch dice
1 small Idaho potato, cut into 1/4-inch dice
1 1/2 teaspoons salt
3/4 teaspoon freshly ground black pepper
1 egg, lightly beaten
2 1/4 cups all-purpose flour

Steps:

  • For the pastry: Sift the flour, confectioners' sugar, and salt into a mixing bowl and add the butter and lard. Using your fingers, 2 knives, or a pastry blender, cut the butter and lard into the dry ingredients until mixture resembles fine crumbs. In a small bowl, whisk the egg yolk and water together and add to the flour mixture. Mix quickly, but thoroughly, until mixture just comes together to form a dough. Knead briefly until pastry is smooth with no cracks; the trick to making this delicate pastry easy to work with is kneading it just enough so that it can be rolled out and manipulated without breaking but yet retains its lovely crumbly texture. Press into a flattened disk shape and wrap in plastic. Refrigerate for at least 30 minutes and up to overnight before proceeding.
  • Remove the pastry from the refrigerator and unwrap. Allow to soften slightly, then place on a lightly floured work surface and roll the pastry to a thickness of 1/4-inch. Using a small plate or saucer as a guide, cut out 6 (6-inch) rounds. (Scraps may be combined and reformed if you cannot get 6 rounds out of the first batch.) Stack the pastry rounds onto pieces of plastic wrap or parchment paper (with pieces between each round to keep them from sticking together) and refrigerate while you prepare the filling.
  • For the filling: Preheat the oven to 400 degrees F.
  • Remove the pastry circles from the refrigerator. In a mixing bowl, combine the meat, onion, carrot, potato, salt and pepper and mix until thoroughly combined. Place the pastry circles on a clean work surface and place about 1/2 cup of the filling in the center of 1 side of the pastry. Using the beaten egg, brush the edges of the pastry and then bring the unfilled side over the filled side so that edges meet. Press edges together to seal and then crimp using your fingers or a fork. Repeat with the remaining turnovers and then transfer to a baking sheet. Brush the tops of the turnovers with the remaining egg and then cut several slits into the top of each pastry. Bake for 20 minutes, or until pastry is golden brown around the edges. Reduce the heat to 350 degrees F and continue to bake until the pasties are golden brown. Remove from the oven and allow to cool for 10 to 15 minutes before serving.

Yield Makes 4

Number Of Ingredients 16

Crust:
2 cups unbleached all purpose flour
1 cup white whole wheat flour or whole wheat flour
1 1/8 teaspoons salt
1/2 cup solid vegetable shortening (preferably nonhydrogenated), frozen
1/2 cup (1 stick) chilled unsalted butter, cut into 1/2-inch cubes
7 tablespoons (or more) ice water
Filling:
4 teaspoons olive oil
2 large onions, thinly sliced
1/2 cup dry white wine
1/2 teaspoon dried thyme
10 ounces skirt steak, cut crosswise on diagonal into 1/4-inch-wide strips
1 teaspoon coarse kosher salt, divided
6 ounces coarsely crumbled Stilton blue cheese (11/3 to 11/2 cups), divided
1 large egg white, beaten to blend

Steps:

  • For crust:
  • Blend both flours and salt in processor 5 seconds. Drop in shortening by tablespoonfuls. Cut in until coarsely diced. Add butter. Cut in until coarse meal forms. Transfer to bowl. Add 7 tablespoons ice water. Toss with fork until moist clumps form, adding more water by teaspoonfuls if dry. Gather dough into ball; divide into 4 equal pieces. Shape each into disk; wrap and chill at least 45 minutes and up to 1 day.
  • For filling:
  • Heat oil in heavy large skillet over medium heat. Add onions. Sauté until deep brown, reducing heat if necessary to avoid burning, about 30 minutes. Add wine and thyme. Simmer until liquid evaporates, stirring often, about 3 minutes.Season with salt and pepper. Cool. DO AHEAD: Can be made 1 day ahead. Cover and chill.
  • Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 400°F. Roll out each dough disk between sheets of parchment paper to 9-inch round. Peel top parchment off each. Spread 1/4 of onion mixture on half of each round, leaving 1-inch plain border. Top onions with beef strips. Sprinkle 1/4 teaspoon coarse salt over beef on each, then top each with 1/4 of cheese. Sprinkle with pepper. Brush dough border with some egg white. Using bottom parchment as aid, fold plain dough half over filling. Seal edges. Fold sealed edge over again; press with fork to double-seal.
  • Brush each pasty with egg white. Cut 3 slits in each top crust. Divide pasties (still on parchment) between 2 large rimmed baking sheets.
  • Bake pasties until crust is golden brown and filling is cooked through, about 30 minutes. Cool 10 minutes; serve.

  • Make the pastry a few hours ahead. Combine the flour and salt in a mixing bowl and rub in the fats until crumb-like. Add about 100ml cold water to bring together as a dough, then knead for 3-4 minutes until the pastry becomes slightly elastic (unlike for regular shortcrust).
  • Wrap and chill for 2-3 hours. Preheat oven to 200°C, fan 180°C, gas 6, and line a large baking tray.
  • Divide into 6 balls and roll each one out to about 22cm in diameter – use a side plate to trim to a circle. Combine the filling ingredients in a mixing bowl with a good grinding of black pepper and season it well with salt.
  • Heap the filling onto one side of each circle, brush the border with beaten egg, then fold the pastry over the top and seal in a half-circle. Use your index finger and thumb to crimp and twist the edge, tucking the ends beneath. Transfer to the tray and brush with beaten egg to glaze.

  • Add the stock and bay leaves and simmer for about 30 minutes until reduced. If you need to thicken the sauce, mix the cornflour into 1 tbsp cold water and stir into the sauce. Season with salt and pepper and leave to cool. Remove the bay leaves.
  • Roll the pastry out on a lightly floured surface to the thickness of a £1 coin, then cut it into four circles, each about 20cm (8in) across.

THE 10 BEST CORNISH PASTIES ACCORDING TO TRIPADVISOR AND ...

  • Over The Top Cornish Pasties - Callington. Winning the hearts and minds of reviewers, and with it the number one spot in the top ten of pasties, is Over the Top Cornish Pasties of Callington.
  • The Cornish Vegan - Truro. Proving that you don’t have to be a meat eater to enjoy a pasty, The Cornish Vegan is the runner up in Cornwall’s top 10. Here’s what reviewers had to say.
  • St Agnes Bakery - St Agnes. Based in the coastal village of St Agnes, the relative remoteness of the area it serves does not detract from the popularity of St Agnes Bakery - voted third best in the top 10 as voted for by reviewers of Tripadvisor and Google.
  • The Cornish Deli - St Ives. Missing out narrowly on a pasty podium place was The Cornish Deli of St Ives, coming fourth in the top 10 Cornish pasty list.
  • Hampsons of Hayle - Hayle. Ask some people what their favourite pasty in Hayle, and they’ll tell you without blinking it’s Philps. Others will tell you it’s Hampsons.
  • Sarah’s Pasty Shop - Looe. One of the hotbeds for pasty related tribalism is Looe, where the honour of best pasty in Looe will see several nominations for different local bakeries.
  • Helluva Pasties - Callington. In seventh place, marking a ‘helluva’ success was Helluva Pasties of Callington, one of two Callington bakeries to make it into the top 10.
  • Morris Pasties Gover - Newquay. Taking the top spot for best pasty in Newquay and 8th in the list of Tripadvisor and Google reviews top ten is Morris Pasties of Newquay.
  • Malcolm Barnecutt’s Bakery - Bodmin. If there’s such a thing as a pasty synonymous with different parts of Cornwall, then the flag bearer for north Cornwall is Barnecutt’s, affectionately known as “barny's”.
  • Aunt Avice’s Pasty Shop - St Kew Highway. It’s sometimes said that the rarer the pasty the nicer they are. That's certainly the case with Aunt Avice's in St Kew Highway.
