Creamy Seafood Newburg image

This seafood Newburg is a flavorful combination of shrimp and chunks of lobster, crab, or scallops. Use any combination of seafood in this rich dish.

1 pound shrimp (or more)
8 ounces crab, scallops, or lobster meat (thawed, drained, and diced)
2 tablespoons dry sherry
2 teaspoons lemon juice
1/8 teaspoon nutmeg
3/4 stick (6 tablespoons) unsalted butter
1/3 cup all-purpose flour
2 cups half-and-half (warmed)
1/2 teaspoon salt (or to taste)
1/4 cup heavy cream
1 large egg yolk
1/2 cup mild cheddar cheese (shredded)
Optional: ground paprika
Optional: fresh chopped parsley

Steps:

  • Gather the ingredients.
  • Remove the shells from the shrimp. With a sharp knife, make a shallow cut down the back of a shrimp and pull the dark vein out . If the vein doesn't come out easily, scrape it out with the tip of the knife. The vein is the digestive system of the shrimp, so it should be removed. Repeat with the remaining shrimp.
  • Rinse well, chop large shrimp coarsely. Leave small to medium shrimp whole, if desired. Transfer the shrimp to a large bowl.
  • To the bowl with the shrimp, add the lobster, scallops, or crabmeat along with the sherry, lemon juice, and nutmeg.
  • Cover the bowl and refrigerate for about 45 minutes to 1 hour.
  • Melt the butter in a medium saucepan over medium-low heat.
  • Add the flour and continue cooking for about 3 minutes while stirring constantly.
  • Gradually whisk in about 1/4 cup of the half-and-half. Gradually add the remaining half-and-half, whisking constantly. Add the salt and continue cooking until bubbling and thickened.
  • In a bowl, whisk the heavy cream with the egg yolk.
  • Add to the thickened sauce while whisking constantly.
  • Stir in the cheese and continue cooking until the cheese has melted.
  • Add the seafood to the sauce and cook for about 10 minutes, or until the seafood is thoroughly cooked.
  • Spoon the seafood Newburg over toast points , puff pastry shells, or hot cooked rice or noodles. Or serve the seafood over freshly baked biscuits.
  • Sprinkle with paprika or garnish with fresh chopped parsley , as desired.

I used a nice light sauce on this iconic special occasion dish--lobster thermidor--rather than the thick, cheesy sauce popular in the '80s. Lobster is sweet and rich tasting on its own, so the lighter sauce makes so much sense. And what's even better, you can prep these ahead of time and just pop them in the oven when your guests arrive!

4 (4 ounce) lobster tails
3 tablespoons butter, divided
2 tablespoons minced shallots
Salt, to taste
1 ½ cups diced mushrooms
1 tablespoon all-purpose flour
2 tablespoons cognac or brandy
½ cup whole milk
2 tablespoons creme fraiche or heavy cream
1 tablespoon chopped fresh tarragon
Cayenne pepper, to taste
2 teaspoons fine dried bread crumbs
2 teaspoons freshly grated Parmigiano-Reggiano cheese
2 teaspoons melted butter

Steps:

  • Cut bottom shell of lobster tails using kitchen shears along each side where it meets the top shell; do not remove the shell at this point.
  • Melt 2 tablespoons butter in a skillet over medium-high heat. Place lobster tails cut side down in the butter. Cook, covered, about 3 minutes. Turn lobster tails over (they are curved so will lean to 1 side); cover and cook 1 minute. Lean them to the other side; cover and cook 1 minute more.
  • Remove from heat. Transfer lobster tails to a bowl. Remove any shell pieces from the skillet.
  • Place 1 tablespoon butter in the skillet over medium heat; add shallots and pinch of salt. Cook and stir until pan starts to deglaze and shallots soften, 3 to 4 minutes. Add mushrooms; cook stir until golden brown, 5 to 6 minutes. Add flour; stir until mushrooms are coated and cook for 2 minutes. Pour in cognac; use a kitchen torch to flame cognac to burn off alcohol. This will take just a few seconds. Add milk; cook and stir until pan is completely deglazed and milk begins to thicken and turn bubbly, about 2 minutes. Remove from heat. Stir in creme fraiche. Let cool.
  • Remove lobster meat from the shell, leaving top shell intact. Remove any bits of bottom shell from the meat.
  • Preheat oven to 450 degrees F (230 degrees C). Line a baking pan with crinkled up foil. Make 4 channel-like indentations in the foil to hold and stabilize the lobster tails as they bake.
  • Slice lobster meat down the middle and check for and remove any dark veins. Chop into 1/2-inch pieces. Transfer meat to a mixing bowl. Add cooled sauce, tarragon, pinch of salt, and cayenne pepper. Stir gently until well blended.
  • Divide mixture among the lobster tail shells; place in prepared foil-lined pan. Sprinkle each lobster tail with about 1/2 teaspoon bread crumbs and 1/2 teaspoon grated cheese. Drizzle melted butter on the stuffed shells.
  • Bake in preheated oven until nicely browned and heated through, about 10 minutes. If you like, you can turn on the broiler and broil 1 minute until tops are golden and crispy.

4 tablespoons butter
1 shallot, minced
1/4 cup diced red bell pepper
4 tablespoons flour
1 cup chicken broth
1/4 cup dry sherry
1 cup sliced mushrooms
1 lb lobsters or 1 lb crabmeat
1/2 cup half-and-half
1/2 cup fresh breadcrumb
1 tablespoon grated parmesan cheese

Steps:

  • In lg skillet, melt butter; saute shallot and red pepper.
  • Add flour and stir until mixed; add broth and sherry.
  • Simmer for 3 minutes.
  • Add mushrooms; simmer 5 minutes.
  • Add lobster or crab and half and half.
  • Do not boil, but let this mixture heat through.
  • Spoon into 1 qt casserole dish.
  • Sprinkle with breadcrumbs and Parmesan cheese.
  • Place under broiler until breadcrumbs are light brown.

2 egg yolks, beaten
½ cup heavy cream
¼ cup butter or margarine
2 tablespoons dry sherry or madeira
½ teaspoon salt
1 pinch cayenne pepper
1 pinch ground nutmeg
¾ pound cooked lobster meat, broken into chunks

Steps:

  • In a small bowl, whisk together egg yolks and heavy cream until well blended. Set aside. Melt butter in a saucepan over low heat. Stir in the egg yolk mixture and sherry. Cook, stirring constantly until the mixture thickens. Do not boil.
  • Remove from heat, and season with salt, cayenne, and nutmeg. Add lobster. Return pan to low heat, and cook gently until heated through. Serve hot over slices of buttered toast.

This really is a great, and simple recipe. The sauce is pretty rich, so you want something just thick enough to coat the meat, but not so thick that it covers it up. Having said that, if you cook it a little further, until it almost starts to simmer, it will get a bit thicker, if that's your preference. Just don't go too far, or the yolks may start to form curds, and you'll lose the silkiness. Serve over buttered toast or in freshly baked puff pastry shells.

4 (4 ounce) lobster tails, split in half
salt to taste
2 tablespoons clarified butter
2 tablespoons sherry wine
½ cup heavy whipping cream
2 large egg yolks
1 pinch freshly grated nutmeg
1 pinch cayenne pepper, or to taste
1 tablespoon chopped fresh flat-leaf parsley, or to taste

Steps:

  • Season lobster tails with salt.
  • Heat clarified butter in a large skillet over medium-high heat. Place tails, meat-side down, in hot butter and saute until just cooked through, about 2 minutes per side. Transfer to a plate to cool.
  • Pour sherry into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the skillet with a wooden spoon. Cook until sherry is reduced by half, about 1 minute. Remove skillet from heat.
  • Pull meat from shells; discard shells and roughly chop lobster meat. Pour any accumulated juices from the plate into sherry mixture in the skillet.
  • Whisk cream, eggs yolks, nutmeg, and cayenne pepper together in a bowl.
  • Whisk cream mixture into sherry mixture, return skillet to medium-low heat, and cook, stirring constantly, until sauce is thick enough to coat the back of a spoon, 3 to 7 minutes. Stir lobster into sauce and cook until heated through. Season with parsley and salt.

I did as the recipe suggested and made a tower of rice that was surrounded the lobster chunks and a pool of the rich lobster sauce. To make the rice "tower", pack the hot rice into a measuring cup and unmold it onto each plate.

3 (10 ounce) lobster tails, thawed
1/4 cup butter
1/4 cup all-purpose flour
1/2 teaspoon dry mustard
1/2 teaspoon paprika
1 cup sliced fresh mushrooms
1 cup milk
1/2 cup whipping cream
1/4 cup dry sherry
1 teaspoon salt
hot cooked rice
fresh tarragon
fresh thyme sprig

Steps:

  • Cook lobster tails in boiling water 5 to 6 minutes; drain. s.
  • Split tails lengthwise on underside of shell.
  • Remove meat and coarsely chop; set aside.
  • Melt butter in large skillet over medium-low heat.
  • Add flour, mustard, and paprika, stirring until smooth.
  • Cook 1 minute, stirring constantly.
  • Add mushrooms, and cook 3 minutes; stirring constantly.
  • Gradually add milk and cream; cook over medium heat, stirring constantly, until mixture is thickened and bubbly.
  • Add sherry and salt; simmer 10 minute.

1/2 stick (1/4 cup) unsalted butter
2 tablespoons plus 1 teaspoon medium-dry Sherry
3 tablespoons plus 1 teaspoon brandy

1/4 teaspoon freshly grated nutmeg
cayenne to taste
4 large egg yolks, beaten well

Steps:

  • Into a large kettle of boiling salted water plunge the lobsters, head first, and boil them, covered, for 8 minutes from the time the water returns to a boil. Transfer the lobsters with tongs to a cutting board and let them cool until they can be handled. Break off the claws at the body and crack them. Remove the claw meat and cut it into 1/2-inch pieces. Halve the lobsters length-wise along the undersides, remove the meat from the tails, discarding the bodies, and cut it into 1/2-inch pieces.
  • In a heavy saucepan cook the lobster meat in the butter over moderate heat, stirring occasionally, for 2 minutes, add 2 tablespoons of the Sherry and 3 tablespoons of the brandy, and cook the mixture, stirring, for 2 minutes. Transfer the lobster meat with a slotted spoon to a bowl. Add the cream to the Sherry mixture and boil the mixture until it is reduced to about 1 cup. Reduce the heat to low and stir in the remaining 1 teaspoon Sherry, the remaining 1 teaspoon brandy, the nutmeg, the cayenne, and salt to taste. Whisk in the yolks, cook the mixture, whisking constantly, until it registers 140°F. on a deep-fat thermometer, and cook it, whisking, for 3 minutes more. Stir in the lobster meat and serve the lobster Newburg over the toast.

5 cups lobster meat, cooked and chopped
8 tablespoons butter (1 stick)
3 cups whipping cream (or half and half)
3/4 teaspoon paprika
12 egg yolks
1 cup dry sherry (or Madiera)
1 1/3 cups parmesan cheese, grated
salt, to taste
white pepper, to taste

Steps:

  • Melt butter in top of double boiler.
  • Add cream and paprika and heat over simmering water.
  • Beat egg yolks in a small bowl.
  • Stir a little of the cream mixture into yolks before adding them to the cream mixture, beating constantly with a whisk.
  • Add sherry or Madiera and continue cooking slowly, stirring until sauce thickens.
  • Season to taste with salt and white pepper and stir in lobster meat; remove from heat.
  • Butter a small shallow baking dish.
  • Using a slotted spoon place some of the lobster and a little sauce across the middle of each crepe.
  • Roll up crepes and place, seam side down, in baking dish.
  • Spoon remaining sauce over crepes, cover and refrigerate until ready to serve.
  • To cook, sprinkle crepes with cheese and place in a preheated 350 degree oven for 12 to 15 minutes, or until heated through.
