NIF'S NO FAIL PORK RIBS
This recipe is for my neighbour. She used to spend so much time making the perfect ribs. Not too dry, not burning on the BBQ, cooked just right. I mentioned my rib recipe to her, she tried it and has never gone back! The nutritional value listed here is not right for this recipe because the cooking method removes so much fat. I suggested the BBQ sauce that I like, but I find sauces vary so much, I thought that it was best to pick your favourite. I also included the longest option for the cooking time. Steps:
- Place ribs in a large stock pot. Fill pot with cold water until at least 2 inches above ribs. Add bay leaves, peppercorns and sea salt; bring to a boil. Once boiling, skim scum off the top of the water. Simmer ribs, while skimming occasionally, for 1 to 2 hours.
- Set oven to 250°F.
- Remove ribs from water and place in large baking dish. Pour your favourite BBQ sauce over ribs and cover tightlly with foil. Cook for about 4 hours, turning the ribs over every hour or so.
- Remove foil and let cool for 10 minutes, until you can handle them. Cut into 2 to 4 ribs per section and place on a platter. Enjoy your tender, fall off the bone ribs!
GRANDMA'S FALL OFF THE BONE BBQ COUNTRY STYLE PORK RIBS
My Grandma's recipe for country style pork ribs baked in the oven are literally fall-off-the-bone tender and topped with jammy sweet onions in a homemade BBQ sauce.

- Line a baking sheet with a cooling rack. Working in batches, season the pork ribs on all sides with kosher salt and black pepper and lightly toss in flour. Transfer the ribs to the baking sheet and set aside.
- Add 1 tablespoon of the oil to a large cast iron skillet or dutch oven (with a lid) over medium/medium high heat. When the oil is warm and shimmering, brown the ribs in batches, turning on all sides until golden, about 15-20 minutes per batch. Be careful not to overcrowd the pan or the ribs will steam and won't get that delicious golden crust.
- Transfer the browned ribs back to the baking sheet and wipe any burned pieces out of the pan. Add the remaining oil, and continue browning the rest of the ribs.
- While the ribs are cooking, mix the BBQ sauce ingredients together and preheat the oven to 325°F.
- Add all of the ribs back to the dutch oven, snuggling them evenly together. Scatter the tops with the sliced onions. Whisk the BBQ sauce and pour evenly over the onions and ribs.
- Cover tightly with the lid and bake for 1 1/2 to 2 hours or until the onions are soft and jammy and the pork is tender. Midway through cooking, I usually open the oven and spoon the sauce over the ribs and onions.
- Skim any excess fat from the sauce if needed (depending on how fatty the ribs are) and serve hot with au gratin or mashed potatoes with the sauce and onions spooned on top.

NO FAIL COUNTRY STYLE RIBS
Steps:
- 1.Sprinkle ribs (all sides) with Garlic Salt & Course Pepper 2. Place ribs in baking pan (Foil Pan for easy clean up) 3.Brown in hot oven, turning every 10-15 min., til browned on all sides. 4. Remove pan from oven, pour off liquids and discard. 5. Mix in sliced onions. Add more garlic salt/pepper, to taste. 6. Pour BBQ sauce over ribs & onions. Add water, to thin, and coat well. 7. Cover with foil, return to oven. 8. REDUCE HEAT TO 350 DEG. and bake for 1 hour. 9. Add baking potatoes and/or sweet potatoes to oven, if desired. 10. Ribs will do well, in a 275-300 deg. oven, for another hour or so...until ready to eat, turning occaisionally. 11. Serve sauce with onions over baked potates.
