Oven Chicken Fingers are tender, golden strips of breaded chicken with two tempting sauces for dipping. The recipe comes from Mary Peterson of Charlestown, Rhode Island.

- Preheat oven to 375°. In a shallow dish, combine bread crumbs and Parmesan cheese; set aside. In a small bowl, combine garlic and oil. Flatten chicken to 1/2-in. thickness; cut into 1-in. wide strips. Dip strips in oil; coat with crumb mixture. Place on a greased baking sheet. Bake until golden brown, 20-25 minutes. , Meanwhile, combine sugar and cornstarch in a saucepan. Add cranberries, orange juice and water; bring to a boil over medium heat, stirring constantly. Cook and stir 2-3 minutes more, crushing berries while stirring. For honey mustard sauce, dissolve cornstarch in 1 tablespoon water in a saucepan. Add honey, mustard and remaining water; bring to a boil over medium heat. Boil for 1 minute, stirring constantly. Serve with chicken for dipping.

- Spread panko on a baking tray, spray with oil (spray vertically to avoid blowing the panko off the tray), then bake for 3 to 5 minutes until light golden. Transfer to bowl.

- Preheat oven to 400 degrees F. Line a baking sheet with foil and top with a baking rack and spray with cooking spray. (if no baking rack, just spray the foil with cooking spray). Set aside.
- Combine the coating ingredients in three shallow containers (like pie tins): 1 - sift together all-purpose flour, paprika, garlic powder, salt and pepper; 2 - whisk together eggs and milk; combine panko breadcrumbs, sharp cheddar and Parmesan cheese.
- Season chicken on both sides with kosher salt.
- Set up an assembly line to coat the chicken as follows: flour mixture, then egg mixture, and finally cheese mixture. Set pieces in a single layer on the prepared baking rack or baking sheet. Chicken can be close together but should not touch. *Pro-tip - use one hand for wet and one hand for dry coating.
- Bake chicken at 400 degrees for 15-20 minutes.or until golden. If you are not using a baking rack, turn the chicken tenders over after about 10 minutes. *For additional browning, turn on the broiler for a few minutes until golden.
- Serve immediately with choice of dipping sauce.

- Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
- Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
- Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. CRISPY CHICKEN FINGERS

- Preheat oven to 400 degrees F. Combine the chicken and buttermilk in a shallow dish. Cover and chill for 15 minutes.
- Spray a baking sheet with cooking spray. Put the cereal in a sealed plastic bag and crush with a rolling pin. Transfer the crumbs to a shallow dish. Season the chicken with the salt and a few grinds of pepper. Dip each piece of chicken in the cereal to fully coat and arrange on the baking sheet. Bake until cooked through, about 8 minutes. Leave the chicken on the baking sheet to cool slightly. It will become crispier.
- Serve with the mustard sauce.
- In a small bowl, stir together the mustard and mayonnaise until smooth. Stir in the honey.

- Cut chicken breasts lengthwise into strips (chicken fillets can be left as is). Coat the strips with flour then dip each in the beaten egg.
- Roll the strips in the cornflakes.
- Set the strips on wax paper until ready to cook.
- At this point the strips can be refrigerated for use the next day.
- In a non-stick skillet over medium heat, melt half of the margarine. Stir in half of the canola oil.
- Add half of the chicken and cook for 3-5 minutes per side or the until the coating is crisp and the chicken is no longer pink inside. Remove from the pan and keep the fingers warm.
- Repeat with the remaining margarine, oil and chicken fingers.
- *Oven bake method: Preheat oven to 400 F.

- Preheat oven to 350 degrees.
- Take the milk, egg, a little salt and pepper and whisk together in a bowl, put aside.
- Crush the cheeze its in a ziploc bag, okay to have small chunks here and there, pour onto a plate.
- Take chicken and dip in milk mixture and then roll in cheeze its.
- Place on another plate and continue until all chicken is coated.
- I love to run each piece through x2 to get extra coating and use the whole mix.

- Season chicken breast strips with half the listed portion of seasoned salt, cayenne and black peppers.
- It is best to let chicken marinate in the refrigerator for at least 45 minutes, but this is optional.
- In a plastic bag, combine cornflakes crumbs, the remaining half portions of seasoned salt, cayenne and black peppers, add the parmesan cheese to this mixture, combine by shaking the plastic bag.
- Rub the chicken strips with the softened margarine to help the crumbs stick.

If you have ever wished you knew how to make homemade frozen chicken fingers, ready to pop into the oven straight from the freezer - here is a recipe for you. Make several batches of these and store them in freezer bags - you don't need to thaw them to cook them. The amount of servings varies based on how thinly your cut your chicken strips - usually about 3-4 strips per chicken breast half, and usually 3-4 chicken breast halves come out to one pound. To make these kid friendly, you may leave out the hot sauce.

- Line a cookie sheet that will fit into your freezer with foil and have ready to go.
- Mix together cornflakes, parsley, and salt in a shallow dish.
- Mix together the 1/3 cup dressing, water, and hot pepper sauce to taste in a large mixing bowl.
- Cut each chicken breast into several long strips, trimming any fat.
- Drop the chicken strips into the wet mixture and stir to coat well.
- Roll each chicken strip (one a a time) into the crumbly mixture, coating well.
- Set each coated strip onto the foil lined pan, leaving a little space between each.
- Freeze until firm- approximately 2 hours or so.
- (Once frozen, you can store in a freezer bag for 1 month), then store in airtight freeezer containers.

- Put the flour, eggs and the bread crumbs each separately in 3 shallow dishes. Stir into the flour the lemon zest. Pat the chicken dry and season both sides with garlic powder, salt and pepper. Dip each breast into the flour, then shake off the excess. Next, run the breast through the egg to coat it lightly and hold the chicken over the liquid to let any excess drip back into the bowl.
