Rich chocolate cookies packed with crunchy walnuts and lots of chocolate chips then topped with icing and sprinkles.

2⅓ cups all (plain) purpose flour
⅓ cup unsweetened cocoa powder
2 ½ teaspoons baking powder
¼ teaspoon salt
½ teaspoon cinnamon
¼ teaspoon freshly ground nutmeg
¼ teaspoon ground cloves
2 large eggs
¾ cup sugar
½ cup extra-virgin olive oil
½ cup milk
2 teaspoon vanilla extract
¾ cup walnuts (chopped medium fine)
1 cup mini choc chips
1½ cups powdered (icing) sugar
1 tablespoon milk (more if necessary)
sprinkles for decorating

Steps:

  • Preheat oven to 350ºF/160ºC and line two large baking trays with non stick baking paper.
  • Whisk (or sieve) together flour, cocoa, baking powder, spices and salt.
  • With a whisk attachment on the an electric mixer beat together eggs until frothy then slowly add sugar. Beat until pale and thick.
  • Slowly drizzle in the olive oil followed by milk and vanilla.
  • Using a wooden spoon, add the flour mixture in two lots, stirring until smooth. Stir through the walnuts and mini choc chips. The dough will be soft and sticky. Cover the bowl with plastic wrap and allow the dough to rest for 20 to 30 minutes.
  • Take rounded teaspoonsful of the dough and roll between your palms into a ball. Place the balls on the prepared trays allowing room for spreading and rising.
  • Bake for 10-12 minutes. Don't over bake - these are meant to be soft and moist. The cookies will rise and form a few cracks. Cool on the trays for a few minutes before transferring to wire racks to cool.
  • Spread a small amount of icing on each cookie and decorate with coloured sprinkles. Allow icing to set before serving or storing.

1 can frozen orange juice
12 oz chocolate chips
1 cup chopped dates
1 cup raisons
8 ounces chopped walnuts
Frosting
3 tablespoons butter or margarine
1-2 squares melted unsweetened chocolate
1 teaspoon vanilla
confectionary sugar to make a loose frosting.

Steps:

  • Cookies Mix together the dry ingredients. Cream butter or margarine with sugar and then add orange juice, vanilla and beaten eggs Slowly add dry ingredients until blended Add nuts and fruits to the batter Form dough into balls the size of walnuts and bake in a preheated 350 degree oven for 8-10 minutes being careful to not over-bake Frosting Combine ingredients to make a loose frosting. When cookies have cooled, frost each cookie and let set.

My mother always made these chocolate ball cookies, they are called Italian TayTu cookies. I have such good memories and taste of them and I'm thrilled I can give this memory and taste to my grandchildren too!

5 c all purpose flour
1/4 tsp salt
1 Heaping tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1/4 tsp ground cloves
1/2 c granulated sugar
1 1/4 c crisco baking sticks, butter flavored
4 large eggs
16 oz hershey's chocolate syrup
1 tsp vanilla
1 c chopped walnuts and/or pecans
INGREDIENTS FOR FROSTING
2 c confectioner's sugar
3 Tbsp milk (add more if needed)
1/2 tsp anisette extract or almond extract

Steps:

  • 1. Preheat oven to 350 degrees. Line cookie sheets with parchment paper.
  • 2. FOR THE COOKIES: In large bowl, sift together flour, salt, baking powder, baking soda, cinnamon and cloves. Set aside.
  • 3. In another bowl, cream sugar and shortening with a mixer until fluffy. Add eggs one at a time until well incorporated. Mix in chocolate syrup and vanilla.
  • 4. Add chocolate mixture to dry ingredients. Stir until well incorporated. Mix in nuts.
  • 5. Dough should form a ball, but not be sticky (if dough is too sticky, put a little flour on your hand to roll into a ball).
  • 6. Roll mixture into 1 inch balls. Place balls 1 inch apart on parchment paper and bake about 12-15 minutes or until cookie is firm, but NOT DRY. Let cookies cool before frosting.
  • 7. FOR THE FROSTING: Mix sugar, milk and extract to make a sugar glaze in a bowl. Dip the top of the cookies in the bowl and sit the cookies on a baking rack with wax paper underneath to catch any drippings. If you don't have one, then I'd just use wax paper. Immediately top the cookies with sprinkles before glaze dries.
  • 8. Allow icing to harden overnight.

1 cup sugar
4 large eggs, room temperature
1/2 cup 2% milk
1 teaspoon vanilla extract

1 teaspoon ground cloves

GLAZE:
2-1/4 cups confectioners' sugar
2 teaspoons light corn syrup
3 to 4 tablespoons 2% milk
Sprinkles, optional

Steps:

  • Preheat oven to 350°. In a large bowl, cream shortening and sugar until light and fluffy, 5-7 minutes. Beat in eggs, milk and vanilla. In another bowl, whisk flour, cocoa, cinnamon, baking soda, baking powder and cloves; gradually beat into creamed mixture. Stir in walnuts., Shape level tablespoons of dough into balls; place 1 in. apart on ungreased baking sheets. Bake until bottoms are light brown, 10-12 minutes. Remove from pans to wire racks to cool completely., For glaze, in a large bowl, mix confectioners' sugar, corn syrup and enough milk to reach desired consistency. Dip tops of cookies into glaze; if desired, decorate with sprinkles. Let stand until set. Store between pieces of waxed paper in airtight containers.

1 cup unsweetened cocoa powder (such as Hershey's®)
¼ cup baking powder

1 large orange, zested
½ cup vegetable shortening (such as Crisco®)
½ cup margarine (such as Parkay®)

½ (8 ounce) package cream cheese, softened
½ cup chopped walnuts
3 tablespoons whole milk, or more as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

Some believe the Italians started it, others the Europeans and many theorize it began during the Depression when wedding cakes weren't as common; Guests contributed cookies so the expense of an elaborate cake didn't fall on one family. Regardless of the provenance, for as long as anyone there can remember, wedding receptions have featured the tables, laden with dozens of homemade old-fashioned offerings like lady locks, pizzelles and buckeyes. These lightly-spiced chocolate-walnut cookies, part of the spread at Laura Gerrero and Luke Wiehagen's Steeltown wedding in 2009, are topped with a simple confectioners' sugar glaze and chocolate sprinkles.

¼ cup unsweetened cocoa powder
1 cup butter, softened

1 tablespoon butter, softened
1 teaspoon vanilla extract
2 cups confectioners' sugar
¼ cup hot milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Sift 3 cups flour twice. In a large bowl, mix flour, baking powder, white sugar and cocoa. Cream 1 cup butter or margarine; blend into flour mixture.   • To make Chocolate Frosting: Melt the chocolate squares over low heat. Cream with 1 tablespoon of butter or margarine, 1 teaspoon vanilla and 2 cups of confectioner's sugar. Gradually add hot milk, beating until smooth.
