Baked crispy homemade croutons made with olive oil

About ½ baguette or loaf of bread (about 3 cups cubed bread)
1/3 cup olive oil
salt/pepper

Steps:

  • Preheat oven to 350 degrees Fahrenheit (175 C).
  • Cut the bread in cubes the size you prefer.
  • Place the cubed bread in a bowl and drizzle the olive oil over them. If you are making garlic croutons (place olive oil in a little pan with minced garlic and heat. Strain most of the garlic and then drizzle over bread cubes).
  • Mix gently, making sure all pieces of bread have olive oil on them.
  • Spread on a pan that has been lined with aluminum foil, making sure they are all in one layer. At this point if some piece of bread does not have olive oil on it, you can spritz with an olive oil mister or brush with olive oil.
  • Bake for about 20 minutes (checking at 15 minutes). If you are using soft (commercial) bread, bake for 8-10 minutes. Remove when golden.
  • Sprinkle salt and freshly ground pepper right after removing from the oven.
  • Store in airproof container for 3 weeks.

  • Cut the crusts off the dinner bread and break it into irregular crouton sized pieces
  • Heat the olive oil in your skillet over medium low. Add the garlic and saute until just beginning to color, 2-3 minutes.
  • Add the bread pieces and spread them out in a single layer in the skillet, turning to coat the bread in the oil.
  • Cook at a low heat for 10-12 minutes, stirring as needed, until the croutons are golden brown and crisp on the outside. Adjust the heat if the croutons are browning too fast.
  • Transfer the fried croutons to a towel lined plate and sprinkle with salt.

1/3 cup butter, I used Smart Balance
1/3 cup olive oil
1/2 teaspoon dried oregano

1/2 teaspoon salt (or to taste)
1 teaspoon course ground pepper
1 teaspoon course granulated garlic

  • Preheat oven to 200.
  • Place cubed bread in big mixing bowl.

  • Add in all the spices, salt and pepper.

3 potato hamburger buns (or other bread) or 3 hot dog buns (or other bread)
3 -6 tablespoons olive oil or 3 -6 tablespoons canola oil
1/2 tablespoon Lawry's Seasoned Salt

Steps:

  • Cut buns into bite size pieces.
  • You can also use bread, which can be fresh or 'day-old'.
  • Place pieces in a bowl and drizzle oil over as you stir to coat.

1 3/4 cups pitted Kalamata olives or other brine-cured black olives
4 anchovy fillets
1 1/2 tablespoons drained capers
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh rosemary
2 tablespoons fresh lemon juice
6 tablespoons olive oil
1 French-bread baguette, sliced into rounds

Steps:

  • Finely chop 1 garlic clove in processor. Add olives, anchovies, capers, thyme and rosemary. Process until almost smooth. Add lemon juice. With machine running, gradually add 4 tablespoons olive oil. Blend mixture until smooth. Season tapenade to taste with pepper. Transfer to small bowl.
  • Preheat oven to 350°F. Arrange bread slices on 2 baking sheets. Bake bread until crisp and golden brown, about 15 minutes. Rub remaining 2 garlic cloves over 1 side of each crouton. Lightly brush croutons with remaining 2 tablespoons olive oil. Serve croutons warm or at room temperature with tapenade. (Can be prepared 3 days ahead. Cover tapenade and refrigerate. Cool croutons completely; store in airtight container at room temperature.)

3 pounds baby (1-inch) beets with greens (about 40), stems trimmed to 3/4 inch
3 ounces frisée (French curly endive), cut into bite-size pieces, or baby arugula (2 cups)
1/4 pound ricotta salata
For vinaigrette
1/3 cup finely chopped shallot
1 1/2 tablespoons whole-grain mustard
1 1/2 tablespoons white-wine vinegar
1 1/2 tablespoons fresh lemon juice
1 1/2 teaspoons soy sauce
1/4 teaspoon salt
3 tablespoons grapeseed oil

Steps:

  • Make croutons:
  • Put oven rack in middle position and preheat oven to 400°F.
  • Stir together olive paste, oil, and a pinch of pepper in a bowl, then add bread, gently tossing to coat. Spread bread in 1 layer in a shallow baking pan and toast, stirring once, until golden, 8 to 10 minutes. Cool in pan on a rack, then transfer to a small bowl.
  • Roast beets for salad:
  • Increase oven temperature to 425°F.
  • Wrap beets tightly in double layers of foil in 4 bundles (about 10 beets each) and roast until tender, about 1 hour.
  • Carefully unwrap beets and, when cool enough to handle, slip off and discard skins. Trim beets and halve lengthwise.
  • Make vinaigrette while beets cool:
  • Whisk together shallot, mustard, vinegar, lemon juice, soy sauce, and salt in a small bowl, then add oil in a slow stream, whisking until emulsified. Season with pepper.
  • Assemble salad:
  • Toss beets with 1/4 cup vinaigrette in a bowl, then season with salt and pepper. Divide beets among 8 plates and top with frisée. Drizzle frisée with remaining vinaigrette and sprinkle croutons on top. Shave thin slices of ricotta salata over each salad using a cheese plane or a vegetable peeler.
