Steps:
- Preheat oven to 425 degrees.
- In a large bowl combine oat bran, flour, chopped apricots, baking powder, brown sugar (save 2 tbs), and cinnamon.
- Separately beat the egg with 2tbs of sugar until fluffy and light.
- Warm up milk (just until lukewarm) and dissolve honey in it.
- Mix milk, egg, oil and vanilla.
- Blend together with dry ingredients, adding a bit more skim milk if the mixture seems too thick.
- Line a muffin pan with paper baking cups.
- Bake 18 to 20 minutes.
- NOTE: It's almost foolproof, but you can test for doneness with a toothpick if you like: they should be moist but not wet.
- To retain moisture, store in a plastic bag.
- They're best served warm; reheating with the microwave works just fine.

This is not OATMEAL, but oat BRAN muffins. I have made these for about five years now, and I really love them. They are great made with cinnamon or cranberry applesauce, as well as plain applesauce. My daughter loves them and I hope you will enjoy them, too!

- Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
- Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
- Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
- VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.

JAM FILLED OAT BRAN MUFFINS
I made these as I love muffins. I didn't have any oat bran, so used wheat instead, they are not overly sweet but surely do taste good regardless. A hot cup of tea and a muffin really hits the spot at this time of year. I got this recipe out of the Joy Of Vegan Baking. Because this makes 16 muffins, I made a dozen bite sized ones too. I didn't put jam in them, but topped them with some cinnamon sugar.

- Preheat oven to 425'F.
- Lightly grease your muffin tin(s).
- In a med. size bowl with a hand mixer whip up the water and the flax seed meal. In about a couple of minutes this should become a thick and creamy liquid.
- In a large bowl combine the oat bran, flour, brown sugar, baking powder, cinnamon and salt. Set aside.
- In a small bowl mix the flax seed mixture, milk and oil.
- Stir in the walnuts if using and then add to the dry ingredients until just combined, don't over mix!
- Fill your prepared muffin cups less then half full, then put a dab of your jam on top of the batter, then put more batter until the muffin cup is 2/3 full.
- Bake for 15-20 minutes, depending on how your oven is. I used a skewer to test the side to see if it was done. I didn't put it down the middle as the jam is there.
- Cool the muffins in the tin for about 3 minutes, then remove to a rack to a wire cool.
- Bon Appetit!

OLD WESSEX OAT BRAN MUFFINS
These yummy muffins are wheat-free and low-fat, but high in both flavor and fiber! I got the recipe from the back of an Old Wessex Oat Bran container and made them for breakfast this morning: I thought they tasted really good, and my brothers liked them too (which is the more important test). Since they are made with 100% oat bran rather than with flour, they're a bit crumbly, so be warned. Let them sit several minutes in the pan to "firm up" a little before handling them. Next time, I think I'm going to use 2 eggs and use some flour in place of some of the oat bran, to see if I can reduce the crumbliness. But they're really nice the way they are, too!

HEALTHY BLUEBERRY OAT BRAN MUFFINS
This recipe was found on the Rogers Oat Bran package. I'm putting it on zaar so I won't lose it. I haven't made it yet. Oat bran and wheat bran are very good for you. UPDATE. Apr 8. I finally got around to making these. These are not a sweet muffin. I added 1/2 cup brown sugar instead of white. If you want a sweeter muffin increase the sugar. I used about 2 cups frozen blueberries as I like like a lot. I made 6 giant muffins and baked for 32 min.

- Preheat oven to 375°. Makes 12 muffins.
- Add buttermilk to oat bran and let stand.
- In another bowl combine flour, baking powder, baking soda and salt, set aside.
- In large bowl beat vegetable oil, egg, sugar and vanilla together.

- Preheat oven to 375 degrees F (190 degrees C). Grease muffin cups or line with paper muffin liners.
- Mix together wheat bran and buttermilk; let stand for 10 minutes.

MOIST JUMBO BANANA WHEAT/OAT BRAN MUFFINS
Moist and flavorful these can be made with oat or wheat bran depending on what you have. You can put your choice of nuts (my fav is walnuts) or dried fruit and vary the amount of mashed banana and they still come out great. Since I started using this recipe 5 years ago, I have kept these muffins on hand in our freezer. I save my brown bananas, freeze them and when I get a good amount puree them in my cuisinart so I can triple the batch of muffins. You can also make these as regular size muffins. The batch would make 12 muffins and bake time would decrease to 15 minutes or so.

- Preheat oven to 375 degrees.
- Grease jumbo pan of 6 muffin cups with non-stick spray or line with paper cups.
- Mash ripe bananas with fork or puree in food processor.
- Chop nuts or dried fruit, if using.
- In a medium size bowl, beat egg and sugars. When smooth add banana, oil and vanilla. Rest.
- In a large bowl mix the flours, bran, baking powder, baking soda, salt and cinnamon. Stir in nuts or dried fruit till coated with the flour.
- Pour the banana mixture onto the flour mixture, folding until flour is just moistened.

BUTTERMILK BRAN MUFFINS
These can be made with wheat bran, oat bran or a combination. I think they are best when made with half oat and half wheat bran. To make them a bit healthier, I usually cut the oil in half and sub applesauce or other fruit puree. I also now tend to use all whole wheat flour instead of the combination of all purpose and whole wheat. These are dark, moist, spicy muffins that remind me a bit of gingerbread. They are best served warm from the oven or reheated.
