1 tablespoon granulated garlic

1 whole beef brisket, about 10 pounds

Steps:

  • Make a dry rub by mixing the salt, pepper, garlic and cayenne in a small bowl.
  • Trim the brisket fat and season liberally with the dry rub. Put into a preheated 250 degree smoker and smoke it for 8 to 10 hours. Shift the position of the brisket every 2 hours. Remove when the brisket is tender which is determined by poking it with a toothpick. Transfer to a cutting board and slice. Arrange on a serving platter and serve.

1 cup yellow mustard
1/4 teaspoon ground black pepper
1/4 teaspoon sea salt
1/2 teaspoon hot sauce
3/4 cup cider vinegar
12 ounces beer
1/4 cup water
1/4 cup vegetable oil
1 tablespoon BBQ dry rub
2 tablespoons Worcestershire sauce
1 teaspoon coarsely ground black pepper
1/2 cup finely chopped onions
2 tablespoons butter
1 cup tomato sauce
1 cup ketchup
1/3 cup chili sauce
3/4 cup dark brown sugar
1/2 cup honey
1 cup white vinegar
1 teaspoon allspice
1 tablespoon dry mustard
2 teaspoons ground black pepper
2 teaspoons chili powder
3 tablespoons Worcestershire sauce
1 teaspoon garlic powder
1 tablespoon paprika
3 tablespoons lemon juice
3 tablespoons maple syrup

Steps:

  • Preheat charcoal smoker for half an hour. Soak the hickory chips for half an hour in water. Drain.
  • Trim fat on brisket to 1/4-inch thickness. Sprinkle brisket generously with the dry rub. Wrap in plastic and refrigerate overnight.
  • Remove the brisket from refrigerator 1 hour prior to cooking and let stand at room temperature. Mop the entire brisket with Mustard Sauce. Place brisket fat side up in a smoker at a preheated temperature of 200 to 225 degrees F. Add 3 handfuls of pre-soaked hickory chips to preheated charcoal (should be at the gray stage). After 3 hours, add another 3 handfuls of chips and mop with Beer Based Mop Sauce.
  • After 2 more hours, place brisket on 2 pieces of heavy-duty foil and pour 1/4 cup Beer Based Mop Sauce on top of brisket and seal tightly. Continue to cook in smoker another 2 to 4 hours, or until internal temperature reaches 185 degrees F.
  • Remove brisket from foil and let stand 15 minutes. Slice brisket against the grain into 1/4-inch thickness. Top with Brisket BBQ Sauce.
  • Mix all ingredients in a medium saucepan. Reduce heat to low and simmer for 10 minutes.

6 lbs beef brisket
6 tablespoons kosher salt
3 medium onions, sliced
3 -4 garlic cloves, crushed
2 cups ketchup
2 cups water
1 1/2 cups brown sugar
1 1/2 cups red wine vinegar
1 tablespoon black pepper
1/2 tablespoon red chili powder
1/2 tablespoon oil

Steps:

  • Trim fat on briskett.
  • Soak brisket for 30 minutes in water.
  • Drain.
  • Sprinkle meat with kosher salt and let sit 30 minutes.
  • Rinse meat well.
  • Braise meat in olive oil until brown, approximately 8 minutes per side.
  • Reduce heat and add onions.
  • Brown.
  • Add garlic.
  • Remove meat.
  • Add all ingredients for sauce.
  • Stir well.
  • Put meat back in pan and simmer covered for approximately 3 hours.
  • Remove meat and reduce sauce.

2 to 4 tablespoons liquid smoke
1 teaspoon pepper
1/2 teaspoon salt
1 fresh beef brisket (about 3 pounds)
1/4 cup packed brown sugar
1 teaspoon each celery salt, garlic salt and onion salt
1 teaspoon ground nutmeg
1 teaspoon paprika
1/2 cup barbecue sauce

Steps:

  • In a large resealable plastic bag, combine the liquid smoke, pepper and salt; add the brisket. Seal bag and turn to coat; refrigerate for at least 4 hours or overnight., Drain and discard marinade. Combine the brown sugar, celery salt, garlic salt, onion salt, nutmeg and paprika; rub over meat. Wrap in a large sheet of heavy-duty foil; seal tightly. Place in an ungreased 15x10x1-in. baking pan. Bake at 325° for 4 hours or until meat is tender., Remove brisket to a warm serving platter; skim fat from pan juices. In a saucepan over medium heat, combine 1 cup pan juices with barbecue sauce; cook and stir until thickened. Thinly slice meat across the grain; serve with sauce.

1/3 cup dried papayas, chopped or 1 cup fresh papaya, rough chopped
1 tablespoon cajun seasoning, Cajun Spice Rub Mix Recipe

5 lbs beef brisket, flat cut Score fat cap
hickory chips (soaked overnight or at least 4 hour)
16 ounces beer, for mopping
2 tablespoons butter
barbecue sauce (optional)

Steps:

  • Place Marinade in a blender or food processor and blend till semi smooth. Rub on washed and dried brisket. Let marinade in a well sealed container overnight.
  • Early morning remove the brisket from refrigerator and pat dry.
  • Reserving the marinade to be mixed with the beer. Simmer to heat through for 20 minutes and butter mix inches Let rest till needed.
  • Leave brisket at room temperature for 1 hour before putting in the smoker.
  • Meanwhile fire up the smoker.
  • Place fat side up in a foil pan on a rack, so smoke can get around it.
  • Rotate, and mop with the spice/beer mixture every hour for the first 3 hours.
  • Add hickory to smoker every 30 min (as required) to keep the heat at a constant temperature for the first 4 hours.
  • After 3 hours wrap tightly with foil and continue cooking.
  • Smoke at 200 - 225 degrees for 7 hours. About 1 hour to 1 1/4 hours per pound.
  • When brisket has an internal temperature of 190 degrees F remove and let rest for 1 hour.
  • cut away excess fat and discard. Slice beef across the grain.
  • Enjoy with your BBQ sauce.

2 tablespoons canola oil
1 fresh beef brisket (2 to 2-1/2 pounds), trimmed

  • In a small saucepan, combine the first nine ingredients; cook and stir over medium heat 3-4 minutes or until brown sugar is dissolved. Transfer to a disposable foil pan., In a large skillet, heat oil over medium heat. Brown brisket on both sides. Place in foil pan, turning to coat with sauce. Cover pan tightly with foil., Place pan on grill rack over indirect medium heat. Grill, covered, 2 to 2-1/4 hours or until meat is tender., Remove from heat. 1 (12-pound) whole beef brisket
2 cups BBQ Beef Coffee Cure
TOMATO AND MOLASSES BARBECUE SAUCE
2 cups ketchup
2 cups diced tomatoes
1 tablespoon tomato paste
1 1/3 cups distilled white vinegar
5 tablespoons Dijon mustard
4 teaspoons granulated garlic
4 teaspoons kosher salt
2 teaspoons black peppercorns, crushed
1/2 pound brown sugar
2/3 cups molasses

Steps:

  • Pat the brisket dry with a towel to remove any moisture. Generously rub the brisket with 1 cup of the BBQ Beef Coffee Cure , massaging all the spice into the meat; repeat with the remaining cure. The cure will soak up the liquid from the beef and form a crust. Place the meat on a large plate, cover with plastic wrap, and marinate in the refrigerator for at least 2 hours.
  • Prepare a smoker for hot smoking. The standard cooking time for brisket is 1 hour per pound, smoked fat side up, under dry, indirect heat at a steady temperature of 225°F. Place the brisket on the center rack of the smoker and smoke for 12 hours. This is slow cooking at its easiest-there's no need to check the meat at intervals.
  • After 12 hours, use a meat thermometer to check for an internal temperature of 185°F in the thickest side of the brisket. Once that temperature is reached, open the door of the smoker and let the meat rest for 30 minutes. This resting period allows the juices to settle. The internal temperature will continue to rise to 190°F.
  • While the meat rests, make the tomato and molasses barbecue sauce: Combine the ketchup, tomatoes, tomato paste, vinegar, mustard, granulated garlic, salt, pepper, and brown sugar with 1 1/3 cups water in a large stockpot over medium heat. Simmer for 20 minutes, stirring, until the sauce thickens slightly. Whisk in the molasses last (it will burn if added too early) and blend with an immersion blender until smooth. Season to taste.
  • Transfer the rested brisket to a cutting board, slice, and chop. The fully rested meat will have a distinct crust and will be tender and juicy inside. There should be a pink smoke ring beneath the crust.
