- Directions: In a bowl, combine the sliced strawberries and 2 Tbs. of the sugar and toss to mix. In another bowl, combine the cream and 4 Tbs. of the sugar. Using an electric mixer or a whisk, beat until stiff peaks form, then beat in the mascarpone cheese and vanilla until smooth. Cover and refrigerate until ready to use. Preheat an oven to 350°F. Line an 8-inch round cake pan with parchment paper. In a heatproof bowl set over but not touching gently simmering water in a saucepan, whisk together the eggs, yolks and the remaining 1/2 cup sugar until pale yellow and fluffy, 5 to 6 minutes. Transfer the mixture to the bowl of an electric mixer and beat on medium speed until light and ribbony, 4 to 5 minutes. Sift the flour into the egg mixture in three additions, folding with a rubber spatula after each addition until smooth. Transfer the batter to the prepared pan and spread the batter to the edges, making the sides higher than the center. Bake until the top of the cake is golden and springs back when touched, 18 to 20 minutes. Transfer the pan to a wire rack and let the cake cool to room temperature. Using a small paring knife, cut around the inside edge of the pan to loosen and remove the cake. Using a serrated knife, trim the sides, shaping the cake into a 7-inch round to fit a large trifle bowl. Slice the cake in half horizontally. Fit a pastry bag with a wide decorative tip and fill the bag with the mascarpone cream. Brush each layer of the cake with 1 oz. of the rum. Assemble the trifle, alternating layers of sliced strawberries, mascarpone cream and cake. Garnish with the mascarpone cream and whole strawberries. Serves 8 to 10.

- Chill one large glass and one medium glass bowl for about 20 minutes.
- In the large bowl beat together the mascarpone, sugar, orange juice and zest until creamy.
- In the medium bowl whip cream until soft peaks form.
- Fold the whipped cream into the cheese mixture.
- Combine the strawberries and orange liquor.
- Cut the cake into 1/2 inch slices.
- Arrange 1/2 of the slices in the bottom of a 8 cup glass bowl.
- Top with 1/2 the sliced strawberries, including 1/2 the juice/liquor.
- Spread with half the mascarpone mixture.
- Sprinkle with half the grated chocolate.
- Repeat layers ending with grated chocolate.
- Cover and chill for at least 4 hours, up to 12 hours.

- Hull and slice strawberries into quarter-inch thick slices. Mix with 2 tablespoons of sugar and let stand while you prepare the cream mixture.
- Whip heavy cream until stiff peaks form. Add mascarpone cheese, remaining sugar, and vanilla, and mix well to blend ingredients.
- In a clear bowl with steep sides or a trifle dish, place ladyfingers on bottom and brush with rum. Add a layer of sliced strawberries. Follow with a layer of mascarpone/whipped cream mixture. Repeat with ladyfingers, rum, strawberries, and cream mixture until you reach the top of the dish, reserving about 3/4 cup of strawberries for the garnish. The top layer should be the cream mixture, and can be piped on with a pastry bag or spread smooth with a knife or spatula.
- Arrange strawberry slices on top of the cream mixture in concentric circles, from the outside of the dish in, leaving a 2-3 inch border of mascarpone mixture around the edge, to create a flower design. Works best if you use the largest slices on the outer rings and smaller slices as you move towards the center of the dish. Finish by standing 4 small strawberry slices in the center like the center of a rose petal.

BERRY MASCARPONE TRIFLE
A fruity twist on your traditional espresso tiramisu. It's a little expensive so I only make it for special occasions, but everyone seems to love it. I've never had any leftovers.

- In a large bowl whip the heavy cream until stiff peaks form.
- Add 1/2 cup confectioners' sugar and mix until well blended.
- In a medium bowl mix mascarpone cheese with vanilla extract and other 1/2 cup sugar.
- Fold in whipped cream.
- In a medium bowl, puree thawed mixed berries with granulated sugar. Microwave for 1-2 minutes if necessary.
- Separate lady fingers and dip each one (flat side down) in the berry puree.
- Arrange in concentric circles on the bottom of the trifle bowl. Stack ladyfingers up along the sides of the trifle bowl so they are visible from the outside. This will create a cake "crust" for the filling.
- Drizzle berry puree over the ladyfingers on the bottom.
- Spread mascarpone/cream mixture over ladyfingers.
- Add strawberries and blackberries. Continue layers of cream, berries, and puree.
- In center layer, add more ladyfingers.
- Continue layers of mascarpone/cream, berries, and puree until the top of trifle bowl.
- Arrange strawberry slices along the edge of the the trifle bowl. Arrange raspberries and blackberries in concentric circles on the top layer of cream. Cover and refrigerate for 2 hours.
- Reserve remaining puree for guests to drizzle over individual servings.

- Spread graham cracker crumbs on the bottom of an 8" round trifle.
- dish or glass bowl.
- In another bowl, mix mascarpone cheese, vanilla extract, powdered sugar, and jam.
- Gently spread cheese mixture on top of graham cracker layer (it will be a thin layer).
- Mix strawberries with 1/4 cup of sugar.
- Spread strawberries on top of cheese layer.
- Pour jello mix and water in a small saucepan, heat to a full boil (stirring as needed).
- Remove from heat and let cool for a few minutes.
- Pour jello over the strawberry layer (I put a metal spoon in the bowl just to make sure it wasn't too hot for the glass).
- Refrigerate overnight or until firm.
- Top with whipped cream.

- Place the limoncello, water and caster sugar in a small saucepan over low heat and stir untilt he sugar has dissolved. Set aside to cool.
- Place the mascarpone in a bowl and stir until smooth; add the sour cream, icing sugar and lemon rind and whisk until smooth.
- Dip the fingers into the liqueur mixture and use to line the base and sides of a 3-litre capacity glass bowl.
- Top the fingers with half the raspberries, spoon over the mascarpone mixture then top with the remaining raspberries.
- Dust with extra icing sugar to serve.

Steps:
- Combine sugar, water and lemon zest in a pan, and continuously stirring, bring to the boil.
- Reduce heat and let simmer for 10 minutes.
- Remove from heat, add amaretto liqueur, and set aside to cool.
- With an electric mixer, beat together the mascarpone, extra sugar and egg yolks,- be careful not to over-mix or otherwise the mascarpone will yellow and become grainy.
- In an absolutely clean and dry bowl with clean and dry beaters, beat the egg whites until soft peaks form.
- Gently fold through the mascarpone mixture along with the grated chocolate.
- Dip half the quantity of biscuits, one at a time and quickly, into the cooled sugar syrup if dipped too long they will become mushy!
- Line the base of an 8 x 11 (20cm x 26cm) serving dish with the biscuits.
- Top with half the mascarpone mixture.
- Sprinkle the raspberries over the mascarpone mixture.
- Top with another layer of the biscuits dipped in the sugar syrup, then finish with the remaining mascarpone.
- Sprinkle the almonds over the top and refrigerate for 4 hours or overnight.
