I created this recipe after my daughter's pediatrician bugged me about her being too skinny! That was 8 years ago, but the kids still love to eat these rich and creamy pops. Watch out - not only are they pretty high in fat and calories, they should probably be eaten outdoors or with a wash cloth handy!!

1 ½ cups whole milk
3 tablespoons white sugar
2 tablespoons cornstarch
1 pinch salt
1 teaspoon vanilla extract
¾ cup peanut butter

Steps:

  • In a saucepan over medium heat, heat milk until bubbles form at edges. In a bowl, combine sugar, cornstarch and salt. Add 1/4 cup of the hot milk to the cornstarch mixture, then whisk well until all the liquid is incorporated and there are no lumps. Pour the cornstarch mixture into the milk, whisking to combine. Continue to cook and stir until mixture thickens enough to coat the back of a metal spoon, about 8 to 10 minutes. Do not boil. Remove from heat, stir in vanilla extract and peanut butter.
  • Pour the pudding into the pop molds to within 1/4 of the top, leaving room for the pudding to expand. Place the tops on the mold and freeze until frozen solid, about 4 hours. To remove from molds, run under hot water to slightly melt the side of the pudding pop, then twist the stem top and remove.

12 ounces semisweet chocolate, finely chopped
1 1/2 cups heavy cream
1 1/2 teaspoons pure vanilla extract
Pinch of kosher salt
1/4 cup confectioners' sugar
2 tablespoons creamy peanut butter
Cooking spray
2 tablespoons coconut oil or roasted peanut oil
1/4 cup salted roasted peanuts, finely chopped

Steps:

  • Put 4 ounces chocolate in a medium bowl. Bring 1/2 cup heavy cream to a simmer in a small saucepan; pour over the chocolate and let sit 5 minutes. Add the vanilla and salt and whisk until smooth; set aside to cool to room temperature.
  • Combine the remaining 1 cup heavy cream, the confectioners' sugar and peanut butter in a large bowl. Beat with a mixer on medium-high speed until stiff peaks form, 2 to 3 minutes. Fold the peanut butter whipped cream into the cooled chocolate mixture in three batches until just incorporated but still airy. Freeze until the mixture is firm enough to scoop, about 30 minutes.
  • Lightly coat a 1 1/2-inch ice cream scoop or tablespoon with cooking spray. Scoop balls of the frozen mousse onto a parchment-lined baking sheet (about 1 heaping tablespoon per ball). Gently press a lollipop stick halfway into each ball. Freeze until firm, at least 1 hour.
  • Meanwhile, combine the remaining 8 ounces chocolate and the coconut oil in a small microwave-safe bowl. Microwave in 30-second intervals, stirring, until the chocolate is melted and smooth; set aside to cool.
  • Put the peanuts in a small bowl. Loosen the mousse balls from the baking sheet with a small offset spatula. One at a time, dip the balls into the melted chocolate, letting the excess drip back into the bowl. Return to the baking sheet and sprinkle with the peanuts while the chocolate is still wet. Return to the freezer until ready to serve.

1 teaspoon vanilla
1/2 cup sugar
2 tablespoons cornstarch
1/2 teaspoon salt
1 egg
1 yolk
1/2 cup peanut butter
The toppings
1/2 cup melted chocolate
1/4 cup sprinkles

Steps:

  • Place all ingredients in a blender and process until smooth. Transfer mixture to a medium saucepan over medium heat and whisk until mixture boils. Turn heat to low and whisk until mixture thickness, about 1 minute. Pudding base is ready when it easily coats a spoon. Transfer mixture to a clean blender and process until smooth. Evenly divide the mixture into pop molds and freeze for about 4 hours, or until pops are frozen solid. To remove pops, submerge 3/4 of the mold in warm water and jiggle the pops free to release. Drizzle melted chocolate on top and dust with sprinkles.

32 whole graham crackers

Steps:

  • Line two 13x9-in. pans with foil; set aside. In a large bowl, combine 3/4 cup peanut butter and 1-1/2 cups milk until smooth. Slowly beat in chocolate pudding mix until blended; fold in 1 cup whipped topping. , Pour into one prepared pan; freeze until firm. Repeat with vanilla pudding and remaining peanut butter, milk and whipped topping. Pour into second pan; freeze until firm., Break or cut graham crackers into squares. Cut frozen pudding mixture into 32 squares, about 2-1/2x2-1/4 in.; place each square between two crackers. Wrap in plastic. Freeze overnight.

2 cups cold milk
1 (3.5 ounce) package instant banana pudding mix
1 ½ teaspoons warm peanut butter

Steps:

  • Pour the cold milk into a large bowl; whisk the pudding mix into the cold milk until dissolved, about 2 minutes. Allow to rest until nearly set, 4 to 5 minutes.
  • Mash the peanut butter into the pudding; stir to distribute the peanut butter evenly throughout the mixture. Spoon the mixture into popsicle molds, tapping the mold on a hard surface to allow any air bubbles to escape. Store in freezer until completely frozen solid, 5 hours to overnight. Running warm water over the outside of the mold will make it easier to remove the pops.

  • Once frozen, remove the popsicles from the freezer and run the popsicle mold under a little warm water to help release them from the mold. Remove the popsicles, dip each one into the magic shell, then immediately top with the chopped peanut butter cups. Serve and enjoy!
