GARLIC MUSHROOMS WITH BASIL
A very nice vegetarian appetizer that is served warm with assorted crusty breads. Recipes4us.co.uk website is where I found this recipe and it will also be included in the Zaar World Tour 2005 Swap, Britain.

Steps:
- In a large skillet, melt butter and add the garlic. Over medium heat saute garlic until soft and golden, stirring occasionally.
- Turning heat to medium high, add the mushrooms and continue to sauté and stir until softened.
- Add the salt, black pepper, cayenne, parsley and basil to mushrooms and garlic. Stirring constantly, continue to cook for 1-2 minutes or until well combined. Serve immediately with assorted crusty breads.
CREAMY BASIL MUSHROOMS
Steps:
- Heat the oil and butter in a skillet on a medium high heat.
- Once hot add the mushrooms with a little salt and pepper.
- Cook until they start to brown, stir occasionally (about 5 minutes)
- Add in the minced garlic and cook for another couple of minutes.
- Add in the cream and mustard to the skillet and bring to a simmer.
- Simmer til the cream sauce has thickened, this only takes a couple of minutes.
- Take off of the heat and stir in the fresh basil.
- Serve with more basil to garnish.

SAUTEED SPINACH AND MUSHROOMS

Steps:
- Heat the oil in a medium saute pan or skillet (not nonstick) over medium-low heat. Add the garlic and cook until fragrant, about 2 minutes (do not let the garlic brown). Push the garlic off to the side of the pan and add the mushrooms. Increase the heat to medium high and season the mushrooms with salt and pepper to taste. Cook, stirring occasionally, until the mushrooms are cooked through and begin to become golden in spots, 10 to 12 minutes.
- Add the spinach, sprinkle with an additional pinch of salt and turn with tongs until wilted. (If you can't fit all the spinach in the pan, cover it for a few minutes, then uncover, stir and add the rest.) Transfer to a serving platter, drizzle with the vinegar and serve warm.
MUSHROOM, ONION AND BASIL PIZZA

- Preheat the oven to 450 degrees F.
- Heat the oil in a skillet over a medium heat. Add the mushrooms and onions and cook until tender and most of the liquid evaporates, about 5 minutes. Stir in the garlic and remove from the heat.
- Place the pizza crust on a baking sheet. Spread the sauce over the crust leaving a 1-inch border. Top with the mushroom mixture and sun-dried tomatoes. Sprinkle with the mozzarella and Parmesan cheeses. Bake until the crust is crisp and the cheese is nicely melted, about 13 minutes. Sprinkle with basil, cut into 8 slices and serve.

- Cut chicken into bite-size strips, about 1/4-inch wide. Heat 1 tablespoon oil in a large nonstick frying pan set over medium-high heat. Add about half of chicken ad stir-fry until almost cooked, from 3-4 minutes. Remove to a plate. Repeat with remaining chicken, add more oil if needed. Remove to plate.
- Add remaining oil to pan, then mushroom, ginger, jalapeno, pepper, garlic, and chili flakes. Stir often until lightly browned, about 5 minutes. Stir in broth, fish sauce and sugar. When boiling, add chicken and and any juices that have collected on plate. Cook uncovered, and stirring often, just until chicken is done as you like it, or feels springy to the touch, about 2 minutes. Sti in onion and basil. Taste and add a little more fish sauce if you like.
- Spoon over rice in individual bowls.

MUSHROOM & BASIL OMELETTE WITH SMASHED TOMATO
A vegetarian breakfast with bite, try this egg dish with cream cheese, herbs and grilled tomatoes

- Heat the grill to its highest setting and place the tomatoes on a square of foil underneath, turning occasionally to prevent burning. When the tomatoes are slightly scorched, remove from the grill, squashing them slightly to release the juices.
- Break the eggs into a bowl and mix with a fork. Add a small splash of water and mix. Add the chives and some black pepper, and beat some more. Set aside while you prepare the mushrooms.
- In a non-stick frying pan, heat the butter over a medium heat until foaming. Add the mushrooms and cook for 5-8 mins until tender, stirring every few mins. Remove and set aside.
- Briskly stir the egg mixture, then add to the hot pan (tilting it so that the mixture covers the entire base) and leave for 10 secs or so until it begins to set. With a fork, gently stir the egg here and there so that any unset mixture gets cooked.
- While the egg mixture is still slightly loose, spoon the mushroom mix onto one side of the omelette, and top with the cream cheese and basil leaves. Flip the other side of the omelette over to cover, if you like. Leave to cook for 1 min more, then cut in half and slide each half onto a plate. Serve immediately with the tomatoes on the side.

WILD MUSHROOM AND BASIL PASTA
A really easy, fast, and addictive pasta inspired by Bergy's Mushroom Pasta for 2. Go wild with your ingredients; the result is best when the basil is right out of your herb garden!

Steps:
- For sauce, heat heavy skillet.
- Saute garlic cloves in 1-2 tablespoons of olive oil until coated and beginning to brown (about 1 minute).
- Add mushrooms and sautee until juices begin to emerge.
- Add wine or sherry (more or less depending on how juicy you want it to be) and soy sauce.
- Coat mushrooms and cook for another minute or so.
- Add basil and cook until leaves are slightly wilted.
- Remove garlic cloves.
- Add salt and pepper to taste.
- Toss cooked noodles with a little bit of olive oil (the amount depends on how juicy your mushroom mix is).
- Transfer to plates and top with mushrooms and grated parmesan.

- Bring a pan to medium high heat. No need to add any fat/oil/butter. Throw the quartered mushrooms straight into the hot pan and fry them as is. Mushrooms let go of a lot of liquid so it will be fine. You may have to do this in two different batches as you want to try and crisp up the mushrooms on the outside and not steam them.
- Add 1/4 tsp sea salt and a pinch of black pepper. Cook for ~2-3 minutes uncovered, flip and cook ~2-3 minutes or until browned. Add balsamic vinegar to the pan. The pan may "hiss". Continue cooking for an additional minute.
- Toss cooked mushroom with chopped pistachios. Add sea salt to taste and top with sliced basil. Happy Eating! Beckie
