A different, wonderful flavor for a firm, white fish. You can use red snapper, grouper or trigger fish. The mango salsa is excellent with chicken as well.

1 lb fresh red snapper
1 tablespoon lime juice
1 tablespoon water
1 teaspoon paprika
1/2 teaspoon salt
1/4 teaspoon ground ginger
1/4 teaspoon ground allspice
1/4 teaspoon pepper
1 medium lime, cut into wedges
1 mango, peeled, seeded and chopped
1 medium red sweet bell pepper
1/4 cup green onion, thinly sliced
1 hot green chili pepper, seeded and chopped
3 tablespoons olive oil
2 tablespoons lime juice
1 tablespoon vinegar
1/2 teaspoon lime peel, finely shredded
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cut fish into 4 serving size portions. Measure the thickness of the fish. Brush with a mixture of 1 tbsp lime juice and water.
  • In a bowl, combine paprika, salt, ginger, allspice and pepper. Rub onto fish.
  • Arrange fish in a shallow baking pan. Bake uncovered at 425 degrees until fish flakes easitly when tested with a fork. Allow 4 to 6 minutes for each 1/2 inch of thickness.
  • To serve, brush fish with pan juices and serve with mango salsa and garnish with lime slices.

  • Combine mango, 1 red bell pepper, green onions, hot chili pepper, olive oil, 2 tbsp lime juice, vinegar, lime peel, 1/4 tsp salt and pepper.

JERK RED SNAPPER

This is a riff on my great-aunt's jerk recipe. You can use it as a marinade if you want to, but I like to just drizzle it over my red snapper. The sauce has this sweet, spicy allspice tingle, and the best part is, if you put it in a nice, airtight container in the fridge, it'll last forever.

3 ounces ginger, about a 4 to 5 inch piece
3/4 cup worcestershire sauce
2 tablespoons soy sauce
2 tablespoons whole allspice
1/4 cup whole black peppercorns
1/2 cup Palm sugar
1 bunch thyme
1 habanero pepper, stem removed
6 cloves garlic
1 bunch scallions (white and light-green parts only)
3 tablespoons kosher salt
1 1/2 pounds red snapper fillets
kosher salt
Freshly ground black pepper
3 tablespoons grapeseed oil

Steps:

  • For the jerk sauce: Peel and roughly chop the ginger. Add it to a blender, along with soy sauce, allspice, pepper, palm sugar, thyme, habanero, garlic, scallions, and salt. Blend until smooth. Taste and adjust the seasoning as needed. Pour into a bowl and set aside.
  • Cook the fish: Heat a dry cast iron skillet over high heat to smoking. Place the fish on a flat surface, skin side up, and score it diagonally to ensure even cooking. Trim the fish by removing the very end of the tail and then cutting along the inseam, separating the belly meat and the center cut. Slice both pieces into 2-ounce portions. Season with salt and pepper. Add the oil to the hot pan, followed by the snapper, skin side down. Lightly press the fish so that it lays flat in the pan. After 2 minutes, turn the fish and cook another 2 minutes. Remove to a platter. Place a spoonful of jerk sauce under each piece, plus more on top, and serve.

2 ounces ground allspice
2 tablespoons dried thyme
1 teaspoon ground cinnamon
1/2 teaspoon ground clove
2 ounces freshly ground coriander
2 ounces freshly ground grains of paradise
1/2 teaspoon ground nutmeg
8 cloves garlic
6 scallions
4 habanero peppers
4 ounces lime juice
Sea salt
Dash soy sauce
Canola oil, as needed
1 red snapper, about 2 to 3 pounds
4 zucchini (2 green and 2 yellow), sliced lengthwise
2 red bell peppers
Island Salsa, recipe below

Steps:

  • Put all the spices, garlic, scallions, peppers, lime juice, salt, to taste, and a dash of soy sauce in a blender. Combine ingredients with oil to make a paste. Score the fish, and then rub the marinade into the fish. Place in a resealable plastic bag and refrigerate for 30 minutes. Remove the snapper from the bag and place on a greased grill, cooking each side for 7 minutes without flipping. While the fish is cooking, brush the zucchini with oil, and season with salt and pepper. Put zucchini slices and whole bell peppers on grill, cooking until the zucchini is tender and red pepper blackened. Set zucchini aside and let the red pepper steam in a covered bowl for a few minutes before removing the skins. Serve vegetables with the whole fish, garnished with Island Salsa. Island Salsa: 4 ounces mango, chopped 4 ounces pineapple, chopped 1 star fruit, chopped 2 ounces red onion, chopped 2 tablespoons red wine vinegar 1 tablespoon freshly chopped cilantro leaves Kosher salt and freshly ground black pepper Combine the chopped the fruit and onion in a bowl. Stir in the red wine vinegar and cilantro. Then add salt and pepper, to taste. The salsa will be served on the side to cool off the spice of the fish.

4 (1 1/4 pound) yellowtail snappers, scaled, trimmed, and eviscerated
Jerk Marinade, recipe follows
Avocado Salsa, recipe follows
1 bunch thyme, picked and chopped
1 bunch cilantro, leaves only, chopped
1 bunch Italian parsley, leaves only, chopped
2 allspice berries
2 cloves
Pinch cinnamon
1 Scotch bonnet pepper
4 cloves garlic
2 inches fresh ginger, peeled and chopped
1 bunch scallions, chopped
1/4 cup olive oil
1/4 cup red wine vinegar
1 tablespoon lime juice
2 to 3 Haas avocados, peeled, seeded, and chopped
4 limes, juiced
1 round, ripe tomato, chopped
1 bunch cilantro, chopped
1 jalapeno, seeded and minced
1/4 cup olive oil
Salt and pepper

Steps:

  • Coat each snapper with 1/4 cup jerk marinade
  • Place on a hot, clean grill. Cook for 8 to 10 minutes on each side. Serve with the Avocado Salsa.
  • Puree all ingredients in a blender until smooth. Reserve.
  • Combine all ingredients together and spoon over snapper when they are cooked.

ISLAND FRYDAYS SPICY ESCOVITCH RED SNAPPER

1 whole red snapper (1 1/2 to 2 pounds), cleaned and scaled
Fish seasoning, such as Old Bay, for sprinkling
10 whole pimento seeds
3 to 4 Scotch bonnet peppers, sliced (including seeds)
2 carrots, cut into 1/8-inch julienne matchsticks
1 onion, cut into rings
3 cups white vinegar
Cooking oil, for frying

Steps:

  • Sprinkle the snapper all over with the fish seasoning. Combine the pimento seeds, peppers, carrots and onions in a saucepan and bring to a boil. Remove from the heat, add the vinegar and transfer to a bowl.
  • Fill a deep fryer with oil and set on 350 degrees F or coat a frying pan with oil and heat over high heat. Deep-fry the fish until golden, 5 to 8 minutes, or pan-fry until golden, about 3 minutes per side.
  • Dunk the fish in the sauce reserved in the bowl, then transfer the fish to a serving platter and decorate with the vegetables.

Red Snapper with Mango Shrimp Salsa image

2 tablespoons olive oil
3 shallots, minced
1 clove garlic, minced
1 cup diced raw shrimp, peeled and deveined
Juice from 1/2 lemon
Juice from 1/2 lime
Juice from 1/2 orange
3 serrano chilies, seeded and diced
3 Italian Roma tomatoes, seeded and diced
3 tomatillos, husks removed, seeded, and diced
1 small mango, peeled and diced
1/2 bunch cilantro leaves, chopped
Sea salt, to taste
Freshly ground black pepper, to taste
4 red snapper filets, about 6 to 8 ounces each
2 to 3 teaspoons olive oil

Steps:

  • Prepare the grill to make a hot fire.
  • To prepare the Mango Shrimp Salsa, heat the 2 tablespoons of oil in a medium skillet, over medium heat. Add the shallots and garlic. Saute 2 to 3 minutes, then add the shrimp. Saute 2 to 3 minutes more, or until the shrimp turns pink.
  • Add the fruit juices, chilies, tomatoes, and tomatillos. Cook just long enough to warm the tomatoes and combine the ingredients. Remove from heat and gently stir in the mango and cilantro. Season with the salt and pepper. Set aside.
  • Coat the fish with the 2 teaspoons of oil on both sides. Season with salt and pepper.
  • (Rub the grill with additional oil to prevent the fish from sticking.) Grill the fish on one side about 5 minutes or less. Using a metal spatula, carefully turn the fish and grill about 3 minutes or less, depending on the thickness of the fish.
  • Spoon the warm salsa over the grilled fish and garnish with sprigs of cilantro.

JERK SEA BASS & PINEAPPLE SALSA

1 tbsp jerk seasoning
2 garlic cloves , finely grated
thumb-sized piece ginger , finely grated
1 lime , zested
2 tbsp rapeseed oil
4 small or 2 large whole sea bass , gutted and scaled
100g pineapple , finely chopped
½ cucumber , finely chopped
¼ small red onion , finely chopped
3 large tomatoes , finely chopped
½ small bunch coriander , finely chopped, plus extra to serve
2 limes , zested and juiced, plus extra charred wedges, to serve

Steps:

  • Mix the jerk seasoning, garlic, ginger, lime zest and oil in a bowl. Using a sharp knife, cut slits in the skin of the fish and rub liberally with the marinade. Leave on a tray in the fridge for at least 1 hr.
  • For the salsa, combine all the ingredients, cover and leave to marinate at room temperature for up to 1 hr until ready to serve.
  • Put each fish on a sheet of foil, and bring the sides around to make an open-topped boat shape. Cook for 15-20 mins on a barbecue, turning halfway, or until cooked through. Alternatively, heat the oven to 220C/200C fan/gas 7 and bake the fish on a non-stick baking tray for 15-20 mins or until just cooked. Serve scattered with the extra coriander and the salsa on the side.
