HAM AND EGG FRITTATA
Great for breakfast, lunch, or dinner! Feel free to experiment with this original recipe by me. Yummy sauteed meat, potatoes, veggies, with eggs. Ingredient measures are approximate. I had to guess how much I used as I put things in as I went. Love an ingredient, ADD MORE! Don't like one much, ADD LESS! Very versatile recipe.

Steps:
- Set oven rack about 6 inches from the heat source and preheat the oven's broiler. Beat eggs and milk in a bowl.
- Melt butter in a large, oven-safe skillet over medium heat; cook and stir potatoes, ham, onion, and garlic in melted butter until potatoes are tender, about 15 minutes. Add water if vegetables become dry. Season with salt and pepper.
- Pour egg mixture over vegetable mixture. Cook, without stirring, until eggs are slightly browned on the bottom.
- Broil in the preheated oven until eggs are nearly set, about 5 minutes. Sprinkle Cheddar cheese over eggs and continue broiling until frittata is completely set and cheese is melted, about 5 minutes more.

HAM AND EGG FRITTATA

Steps:
- Wash hands with soap and water.
- In a 10-inch skillet, heat margarine or oil.
- Place half the potatoes, onions, green pepper, salt and pepper in skillet. Layer half the ham on top. Repeat.
- Cover and cook over low heat about 20 minutes or until potatoes are tender.
- Break eggs into a small bowl. Wash hands with soap and water after cracking raw eggs. Beat eggs and pour over potato mixture.
- Cook about 10 minutes or until the eggs are set and internal temperature reaches 160 ⁰F when measured with a food thermometer.
- Top with cheese and heat until melted. Cut into wedges.
- Store leftovers in a sealed container in the refrigerator for up to four days.

HAM AND SWISS FRITTATA
Diced deli ham and grated Swiss cheese flavor this savory frittata that's great for breakfast, lunch or dinner. A simple green salad makes the perfect light side.

Steps:
- Preheat the oven broiler. Melt the butter in a medium nonstick skillet over medium heat. Add the shallot and sprinkle with 1/4 teaspoon salt and a few grinds of pepper. Cook, stirring occasionally, until soft, about 5 minutes. Remove from the heat and cool. Reserve the skillet for cooking the frittata.
- Meanwhile, whisk the half-and-half and eggs together in a medium bowl with 1/4 teaspoon salt and a few grinds of pepper until smooth. Add the cooled shallots, cheese, parsley and chives and stir to combine.
- Heat the reserved skillet over medium heat. Pour the egg mixture into the skillet and stir a few times. Cook, undisturbed, until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set, about 5 minutes more. Remove from the oven and let stand for 5 minutes. Slide the frittata out onto a large plate or cutting board. Cut into wedges and sprinkle with more chives and serve warm or room temperature with a green salad if desired.
ONION, HAM, AND CHEESE FRITTATA

- Position a rack about 8 inches from the broiler and preheat.
- Melt the butter in a medium non-stick skillet over medium heat. Add the onions and season with 1/2 teaspoon salt and some pepper. Cook, stirring occasionally, until the onions get very soft, about 15 minutes. Meanwhile, whisk the eggs and milk in a medium bowl with the remaining 1/4 teaspoon salt and some pepper until smooth. Transfer onions to a bowl to cool. Reserve the skillet.
- Stir the onions, ham, herbs and cheese into the eggs.
- Heat the non-stick skillet. Pour the frittata mixture into the pan and stir to make sure the fillings are evenly arranged. Cook, stirring gently a couple times in the first minutes of cooking. Then let the mixture cook undisturbed until the bottom sets, about 5 minutes. Transfer the skillet to the oven and broil until the eggs are just set and brown, about 5 minutes. Take care not to overcook or the eggs will be dry. Remove from the oven, cover, and set aside for 5 minutes.
- Invert the frittata onto a large plate or platter. Cut into wedges and serve warm or at room temperature.
HAM & SPINACH FRITTATA
Although I use 2% skim cheese, this could easily be adapted to the Weight Watchers Core program by switching to fat-free cheese. I like to make this on the weekend, then wrap slices individually. It will keep for a week in the fridge, and makes breakfast much easier on those crazy hurried mornings.

- Preheat oven to 350. Spray an 8-inch pie dish with cooking spray.
- In a large bowl, beat eggs and egg substitute. Stir in spinach, ham, cheese, and roasted pepper.
- Pour into pie dish and bake for 20 minutes.
- Sprinkle parmesan cheese on top and bake until eggs are set, 10-20 minutes. Eggs are done when knife inserted in middle comes out clean.
- Allow to rest 10 minutes. Cut into 6 wedges.

- Whisk eggs, chives, salt, and pepper in medium bowl to blend. Melt butter in large broilerproof skillet over medium heat. Add peppers and ham; sauté until peppers are tender, about 5 minutes.
- Preheat broiler. Pour egg mixture over peppers and ham in skillet. Cook over medium heat until bottom and edges are set, stirring occasionally, about 3 minutes. Using spatula, carefully lift edges to allow uncooked egg to flow underneath. Reduce heat to medium-low. Lift edges 2 or 3 more times, allowing uncooked egg to flow underneath, until top is almost set, about 2 minutes. Sprinkle cheese over frittata. Transfer skillet to broiler. HAM AND POTATO FRITTATA
Easy and delicious, this hearty dish's been appreciated whenever I've served it...breakfast, lunch or dinner. Reheated or cold, the leftovers are also great! We-my husband, our 8-year-old daughter and I-live in a suburb. But our back windows look out at mountains, farms, horses and cows.

- Heat 1 tbsp canola oil in large cast-iron or ovenproof skillet, making sure to get oil on sides.
- Saute onion, peppers and garlic until tender; remove from pan.
- Add remaining oil to pan and cook potatoes over medium heat until lightly browned; add add remaining vegetables and ham and cook 4-5 minutes more.
- Meanwhile, in a bowl, beat together eggs and egg whites, and pepper.
- Pour egg mixture over vegetables; cover and cook 8-10 minutes or until eggs almost set, then place under broiler (6" from heat) and cook 2 minutes or until eggs are completely set.
- Cut into wedges and serve.
