SLOW-COOKER BARBECUE BEANS AND SAUSAGE

- Whisk the broth, 3 cups water, tomato paste, brown sugar, molasses, mustard, barbecue seasoning and garlic in a slow cooker. Add the beans. Push a clove into each onion half; tuck the onions and sausages into the beans in the slow cooker. Cover and cook on high until the beans are tender, about 6 hours.
- Discard the onion halves. Stir in the vinegar and Worcestershire sauce, then let the mixture sit, uncovered, about 15 minutes. (The longer the beans sit, the more flavorful they will be.) Garnish with pickled peppers, scallions and/or sour cream, if desired.

THE BEST BARBECUE BAKED BEANS
It's not a real barbecue until a dish of baked beans shows up! While there are many different versions and many different techniques, I'm here to tell you that these are the best. These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. Sprinkle the top with sliced green onion if you like.

Steps:
- Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
- Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
- While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
- Preheat the oven to 350 degrees F (175 degrees C).
- Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
- Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

SOUTHERN SAUSAGE BAKED BEANS
Browning sausage gives these baked beans a wonderful extra punch of flavor and adds heartiness to the dish. These baked beans are an easy way to spice up canned beans with minimal ingredients. With just the right amount of sweetness, these will be a great addition to your cookouts. Delicious for a potluck too.

- 1. Cook sausage, onions, and bell pepper together in a large skillet.
- 2. Meanwhile, in a large bowl, combine both cans of beans, brown sugar, ketchup, and mustard. Mix well.
- 3. Add drained sausage to beans.
- 4. Transfer all into a greased 9x13 casserole dish.
- 5. Bake at 350 for about 30 minutes.
ANYTIME SPICY BBQ BAKED BEANS AND SAUSAGE
I adapted this recipe from Eating Well magazine. This dish can be easily prepared anytime of year you are craving BBQ. Leave out or adjust the jalapenos according to you tolerance to spice.

- In a large skillet, cook bacon according to package directions and crumble or chop.
- In the same skillet (or a different skillet), add one tbs. of oil and heat over medium high heat. Brown sausages turning frequently for five minutes. Reduce heat to low, cover, and cook for another five to seven minutes.
- While that is cooking.whisk together barbecue, water, molasses, tomato paste, salt and pepper in a separate bowl.
- When sausages are finished cut lengthwise then slice.
- Heat the other tbs. of oil over medium heat.
- Add greens, garlic, and jalapeno. Cook until greens are wilted (about three minutes).
- Add sausage and heat until browned (about three minutes).
- Stir in bacon, beans and sauce. Cover and cook until heated through (about five minutes).

ITALIAN SAUSAGE BAKED BEANS
This is my favorite way to make baked beans. They can be made in a crock pot, in a skillet, or even in a dutch oven. I use smoked Italian sausage, but other types of smoked sausage can be used as well.

- Brown the Italian sausage and onion in a skillet.
- Put all ingredients including the browned sausage and onion into the crock pot and heat until hot (about 1 hour, depending on your crock pot).
- If you are in a hurry, the beans, pepper, and bbq sauce can be added to the skillet and heated. If you are camping, this can be heated in a dutch oven.

A Southwestern take on one of my hubby's favorite dishes. Usually I make baked beans with miniature smoked sausages, but this time I cut up large smoked sausages and used barbecue sauce and chile peppers.
