ORANGE CHOCOLATE MELTAWAYS
The terrific combination of chocolate and orange makes these some of the best truffles I've ever had. As holiday gifts, they're showstoppers. I have little time to cook, but when I do, I like to "get fancy." In this case, "fancy" doesn't have to be difficult. -Lori Kostecki, Wausau, Wisconsin

Steps:
- Place chocolate chips in a bowl; set aside. In a saucepan, bring cream and orange zest to a gentle boil; immediately pour over chips. Let stand for 1 minute; whisk until smooth. Add extract. Cover and chill for 35 minutes or until mixture begins to thicken. , Beat mixture for 10-15 seconds or just until it lightens in color (do not overbeat). Spoon rounded teaspoonfuls onto waxed paper-lined baking sheets. Cover and chill for 5 minutes. , Gently shape into balls; roll half in nuts. In a microwave; melt chocolate and shortening; stir until smooth. Dip remaining balls in chocolate; allow excess to drip off. Place on waxed paper; let stand until set. Store in the refrigerator.

EASY NO-BAKE ORANGE BALLS CANDY
No-bake orange balls are similar to bourbon balls with vanilla wafer crumbs. The orange juice concentrate gives them a burst of orange flavor.

Steps:
- Combine the vanilla wafer cookie crumbs and 1 cup confectioners' sugar in a mixing bowl.
- Add the butter to the crumb mixture and blend in well.
- Stir in the thawed orange juice concentrate; add vanilla and nuts. Mix with your hands until all the ingredients are fully incorporated.
- With your hands, shape the mixture into balls about the size of walnuts. Place the prepared balls in a food storage bag with the sifted confectioners' sugar or shredded coconut. Shake the balls around so that the sugar (or coconut) sticks to the balls. You may want to do just a few at a time to prevent overcrowding which could impact the shape of the balls.
- Remove the balls from the bag and arrange the orange balls in single layer on waxed paper-lined cookie sheet. Store them uncovered overnight in the refrigerator for the best flavor. If you like making easy or no-bake desserts, try chocolate bourbon truffles or big batch no-bake chocolate oatmeal cookies .

CHOCOLATE ORANGE RUM BALLS
Every year my boyfriend and I bake for all our friends and family a whole selection of goodies. The ones with alcohol in them seem to be the favorites :) I wonder why?

Steps:
- Mix all dry ingredients and set aside in big bowl.
- Mix corn syrup, and rum together.
- Pour wet ingredients into dry and mix well with a fork.
- Let stand for 2 hours.
- If you like your rum balls super"rummy" you can add 1/2 cup more at this point and let it sit again for 2 hours.
- You can repeat the adding rum and waiting 2 hour step till it suits your taste.
- There is a good midpoint where the mix is not too wet and not too dry.
- Rolling the 1" balls should not be a sticky (too wet) or crumbly (too dry) task.
- Roll into balls and then roll in powdered sugar to coat.
- Store in sealed container.

- Place all the ingredients and 3 tbsp orange juice in a food processor. Blitz until chopped and starting to clump together. If it's a bit dry, add a drop more orange juice. Roll the mixture into walnut-sized balls with lightly oiled hands. Pop 2 or 3 into a lunchbox for a snack. Keeps in a sealed container for 2 weeks in the fridge.
