Lamb liver is usually regarded as meat surplus or just trash. But whoever tries lamb liver will change this unjust bias. (You can try this meal with pork or veal liver, but it is not so good). This is very simple BBQ recipe.

600 g lamb liver
2 cups milk
1 tablespoon salt
1 tablespoon pepper
2 tablespoons olive oil
1 garlic clove

Steps:

  • Cut liver into 1 cm thick stakes, removing small veins. Soak liver in milk for 1 hour.
  • Drain the milk dry with paper towel, soak in oil and put on fire. Livers are done when they are rose inside.
  • Salt after otherwise livers will be hard. Serve with fresh cut onion rings.
  • At the end, just pour over some olive oil over the livers and add some minced garlic.

1 lb beef liver
4 garlic cloves
3 teaspoons cumin powder
2 teaspoons ground coriander
2 teaspoons salt
1 teaspoon chili powder
3 green chilies
1/4 cup vegetable oil
3 limes, juice of

Steps:

  • chop up liver into small pieces.
  • combine garlic , cumin powder , ground coriander,salt, chili powder and green chilis
  • in a food processor until they form a paste.
  • add the mixture to the liver and let it sit for 15 minutes.
  • in a medium pan heat the oil and add the liver a little bit at a time
  • add the lime juice and cook for 15 minutes.

CHILI LIVER

Besides the usual liver, bacon and onion recipe, this was another way for me to cook liver using just a few ingredients, and to make this liver quite tasty! Believe it or not, this Chili Liver is quite delicious! Prep time includes, cooking the bacon, coating the liver with flour, and cooking it ahead of time before simmering it in the soup and chili sauce (or ketchup).

5 slices bacon (I use thin cut sliced bacon)
12 -16 ounces beef liver, sliced thin (See *Note)
all-vegetable shortening or buttered flavored Crisco
1/2 cup flour
salt, to season the liver
pepper, to season the liver
1 (10 1/2 ounce) can Campbell's French onion soup
1/4 cup chili sauce or 1/4 cup ketchup

Steps:

  • In a 12-inch skillet, cook bacon until crisp. (Do not drain off the bacon grease.).
  • Remove bacon from skillet; drain on paper towels, and set aside.
  • Dust the liver with flour (on both sides), then season with salt and pepper.
  • Lightly brown the liver in bacon drippings. (It doesn't take long for the liver to brown, so keep an eye on it while it's cooking. Also, you will need to add a bit of shortening to the skillet while it's cooking).
  • When done frying the liver, set the liver aside on a plate, then add the soup and chili sauce (or ketchup) to the skillet. Mix the soup and chili sauce together.
  • Add the liver back to the skillet, and stir to mix the soup and liver together.
  • Tear the cooked bacon into pieces, and add that to the skillet as well.
  • Cover the skillet, and simmer for 15 minutes, or until liver is tender. Stir occasionally.
  • Yields: 4-5 servings. (12 oz.) of liver will make 4 servings, and (16 oz.) will make 5 servings.
  • *Note: With this recipe, you can substitute pork liver for the beef liver.

This dish is traditionally cooked in Algeria for eating during Ramadan and on special ocassions. It is hardly ever eaten as a main course, but as a small dish after the main. This recipe freezes well. In my family, it's only my husband that eats it so I freeze individual portions for him. I tend to play around with the recipe and change the fruit around and add a little extra liquid. This is just one of hundreds of variations of this recipe, I will post a few alternatives later.

2 1/2 lbs lamb, cubed
3 tablespoons butter
1/2 teaspoon ground cinnamon
3 cups water
1/4 cup sugar
16 prunes, soaked and drained (ready to eat)
2 tablespoons raisins
2 tablespoons almonds
1 pear, peeled and cubed
1/4 cup orange juice
1 teaspoon orange blossom water (mazhar)

Steps:

  • Melt the butter in a heavy bottomed pan. add the lamb and saute over a low heat for around 5 minutes.
  • Add the water, sugar and cinnamon and mix well. Cook on a moderate heat for approximately 40 minutes.
  • Add prunes, raisins, almonds, pear and mazhar. Simmer for 15 more minutes. Add the orange juice and mix well before serving (make sure you have a good mix of ingredients in each portion).

  • Cut the liver in pieces approximately 1" long and 1/2" wide. In a large frying pan fry in the olive oil over a medium heat until browned on all sides. Reduce the heat a little and cook for a further 5 minutes.
  • Liquidise the tomatoes and add to the pan, season well with salt and pepper. Add the water, mix well then cover and cook for approx 25 minutes on medium to high heat or until the sauce has thickened.

  • Cut the liver into cubes and lightly season with salt and pepper. Place on a hot frying pan with 1 tbsp of oil. Fry for 2-3 min on each side.
  • In a medium pot heat up 2 tbsp of olive oil. Add garlic, caraway, paprika, cayenne pepper, tomato paste, salt and pepper, and a bit of water ( just so the spices won't start burning). Let it simmer for 5 min on medium/low heat.
  • After 5 min add liver to the pot and pour in boiling water just to cover the meat. Let it cook on medium heat covered with a lid for 8-10 min. Add more water if you see the sauce is becoming too thick or the liver is not covered.
