GRILLED DOVER SOLE IN FOIL RECIPE



Grilled Dover Sole in Foil Recipe image

To make this grilled Dover sole, first coat it with lobster base, butter, spices and wrap in foil. Then, grill until it's nice and flaky.

1 tsp such as Better Than Bouillon ®, or to taste lobster base
2 tbsp butter
6 dover sole fillets
1 minced shallot
½ diced red bell pepper
2 minced small garlic cloves
1 tbsp or to taste extra virgin olive oil
3 sprigs Fresh Parsley
½ tsp Lebanese zaatar
to taste Salt and ground black pepper

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate. Roll out a little more than 1 foot aluminum foil. Repeat with a second sheet and place on top of first.
  • Spoon lobster base in the center of the foil; top with butter. Place Dover sole on top of butter and add shallot, red bell pepper, and garlic. Drizzle olive oil over garlic layer and top with parsley, zaatar, salt, and pepper. Gently roll fish to mix ingredients. Wrap foil around mixture and seal tightly.
  • Place foil packet on the edge of the direct heat zone on the preheated grill; cook until fish flakes easily with a fork, about 20 minutes. Take packet off grill and allow to cook from the steam for 5 minutes more.

1/3 cup fresh basil, chopped
2 tablespoons butter, softened
2 teaspoons lemon peel, finely shredded
1/4 teaspoon pepper
4 (4 ounce) sole fillets, 1/2-inch thick
1 1/2 cups fresh mushrooms, sliced
1 1/2 cups fresh snow peas
2 tablespoons fresh chives, chopped

Steps:

  • Preheat grill to medium.
  • To prepare the butter, stir together the butter ingredients and shape into a 2 inch long log. Wrap in plastic and refrigerate.
  • Rinse fish and pat dry with paper towels.
  • Tear off 4, 18 X 12 inch pieces of heavy duty foil and place one fish fillet on each piece and make sure to tuck under thin edges of the fish to prevent it from drying out.
  • Top each fillet with some mushrooms, pea pods and the chives.
  • Bring up 2 opposite ends of the foil and seal with a double fold. Fold remaining ends to completely enclose, leaving space for steam to expand.
  • Grill foil packets for 4-6 minutes or until fish flakes when tested with a fork.
  • Open foil packets carefully as to not get a steam burn and transfer fish and veggies to serving plates.
  • Top each fillet with a 1/4 inch thick slice of the butter mixture and serve.

I created this recipe by combining a very light and tasty fish with an egg and crumb coating, adapted from the way that I used to fry the fish I caught from the lake as a kid in northern WI.

1 cup crushed saltine crackers
2 eggs, beaten
1 pound Dover sole
¼ cup all-purpose flour
2 tablespoons vegetable oil, or more as needed
1 pinch fresh dill, or to taste
salt to taste

Steps:

  • Spread crushed crackers onto a plate. Pour eggs into a shallow dish.
  • Place fish in a 1-gallon plastic bag and add flour; gently shake until completely coated.
  • Heat oil in a large, non-stick skillet over medium-high heat.
  • Dip each flour-coated piece of fish in the egg, allowing excess to drip back into dish. Press coated fish in the cracker crumbs until evenly coated.
  • Fry fish in the hot oil until lightly browned and fish flakes easily with a fork, about 5 minutes per side. Season fish with dill and salt.
