SOUTHERN HUSHPUPPIES RECIPE
Light and fluffy deep fried hushpuppies are a real treat when served with a plate of fish and seafood, or with some good old Southern barbecue. Easy to make.

Steps:
- Place flour in a medium sized mixing bowl.
- Add the corn meal.
- Add the sugar.
- Add the salt.
- Mix all the dry ingredients together.
- Gradually add enough warm water to make a thick batter. Set aside.
- Heat cooking oil in a deep pot until oil reaches 350F degrees for frying.
- Scoop batter by the Tablespoonful and carefully drop into the hot oil.
- Let the puppies cook until golden brown on the bottom.
- Flip puppies over in the oil if they do not flip on their own.
- Fry until golden brown all over.
- Remove when done and place in a paper towel lined bowl to cool.
- Enjoy!
UNBELIEVABLE FISH BATTER
In the early 1950's, I received this recipe on an open-line, talk-radio show. It makes the lightest, crispiest batter imaginable. This makes enough to coat approximately 2 pounds of fish.

OLD-FASHIONED
The old-fashioned is one of the oldest mixed drinks in the cocktail canon. (Original name: whiskey cocktail, which became old-fashioned whiskey cocktail, and then just old-fashioned.) It is a stirred drink, usually built in the glass in which it is served. Both rye and bourbon are suitable base spirits. For the sweetener, purists muddle up a sugar cube with water and a couple dashes of bitters, but simple syrup works as well. Twists can be orange, lemon or both (known as "rabbit ears"). A fruited version of the drink came into vogue after Prohibition and involves the muddling of a cherry and orange slice along with the sugar. That version remains widespread, but we advocate the more elemental rendition that took hold in the late 1800s, one that allows the flavors of the whiskey to shine.

Steps:
- Muddle the sugar cube and bitters with one bar spoon of water at the bottom of a chilled rocks glass. (If using simple syrup, combine bitters and one bar spoon of syrup.) Add rye or bourbon. Stir.
- Add one large ice cube, or three or four smaller cubes. Stir until chilled and properly diluted, about 30 seconds. Slip orange twist on the side of the cube.

- Pour 2-inches of vegetable oil into a large skillet. Place skillet over large burner and heat oil over medium high heat. To check if the oil is hot enough, drop in 1-inch cube of white bread. The bread should brown in a 40 count.
- Cut cod into 4 servings, 6 to 8-ounce portions and season with salt and pepper. Place a couple of scoops of flour in a pie tin. Combine egg and water in second tin. Season plain bread crumbs and mustard and cayenne in the third tin. Coat fish in flour, then egg, and then bread crumbs. Gently set coated fish into hot oil and fry 5 minutes on each side until medium golden brown in color.
- When the fish is evenly golden all over, remove and drain on brown paper sacks.
- Suggested: 3 disposable pie tins .

- Lightly season the fish with salt and pepper. Set aside. In a large bowl, combine the flours and all of the seasonings.
- Dredge the fillets in the breading mixture one at a time. Place the coated fillets on a parchment lined baking sheet. Let them sit for 10-15 minutes. Heat oil in a large skillet over medium heat to 350 degrees Fahrenheit. Fill the pan with the vegetable oil halfway.*See notes. Fry the fillets in batches but do not crowd the pan. Cook for 3-4 minutes on each side. Drain on a paper towel. Serve immediately since the crispiness won't last very long!

- If using frozen scallops, thaw before cooking. Sandwich fresh or thawed scallops gently between sheets of paper towel to dry the tops and bottoms. The more dry the scallops are the better they will sear!
- Cook the bacon strips in a frying pan until crisp. Place on sheets of paper towel to blot any grease and set aside.
- Keep the pan of bacon grease hot over medium-high heat. Place the thawed and dried scallops in the pan, and cook until golden, about 2 to 3 minutes per side (cooking time depends on the size of your scallops). Set scallops aside.
- Combine water, 1/2 teaspoon of salt, potatoes, and carrots in a large pot. Bring to a boil, reduce heat, and simmer until the vegetables are tender, about 12-15 minutes.
