PEANUT BUTTER BUTTERSCOTCH COOKIES

Soft peanut butter cookies filled with butterscotch chips and finished with a sprinkle of sea salt. Sweet, salty and absolutely perfect!

1 1/3 cup all purpose flour
3/4 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon salt
10 tablespoons unsalted butter (softened (1 1/4 sticks))
2/3 cup creamy peanut butter (at room temp)
1/4 cup granulated sugar
2/3 cup brown sugar (packed)
1 large egg
1 teaspoon vanilla extract
1 cup butterscotch chips (divided)
sea salt (I like flaky Maldon sea salt) (for topping)

Steps:

  • Preheat oven to 350°F. Line two baking sheets with parchment paper and set aside.
  • In a medium bowl, combine flour, baking powder, baking soda and salt and set side.
  • In a large bowl, using a hand mixer or stand mixer, beat butter and peanut butter until smooth and combined. Add both sugars and beat to combine. Beat in egg and vanilla extract. Add the flour mixture all at once and beat until just combined. Stir in about 2/3 cup of butterscotch chips (reserving the rest for topping the cookies).
  • Scoop the dough into balls (I use a 1 1/2 tablespoon scoop), and place a couple inches apart on the prepared baking sheets. Press a few of remaining butterscotch chips on top of the dough balls. Bake for 8-11 minutes, until the edges are light golden brown, but the center is still slightly underdone. Immediately sprinkle with sea salt, and place the sheets on wire racks to cool. Repeat with remaining dough, allowing the cookie sheets to cool COMPLETELY before placing dough on them.

1/2 cup (1 stick) butter, room temperature, plus more for greasing
1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup plus 1/4 cup creamy peanut butter
1 large egg
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup quick-cooking oatmeal
6 ounces butterscotch chips (about 1 cup)
1 cup confectioners' sugar
4 tablespoons milk

Steps:

  • Preheat the oven to 350 degrees F. Grease a 9-by-13-by-2-inch baking dish with butter.
  • Using an electric mixer, cream the butter, granulated sugar, brown sugar and 1/2 cup of the peanut butter. Add the egg and vanilla. Sift the flour with the baking soda and the salt. Mix the oatmeal into the flour and stir the flour into the creamed mixture. Spread the batter in the baking pan. Sprinkle the butterscotch chips over the batter and bake for 20 to 25 minutes, until browned around the edges.
  • Whisk together the confectioners' sugar, milk and the remaining 1/4 cup of the peanut butter until smooth, then spread the glaze evenly over the warm bars. Allow to cool completely before cutting into squares.

2 cups Butterscotch Morsels (I prefer Ghirardelli; no artificial flavorings)
3/4 cup creamy peanut butter
10 oz chow mein noodles
1 cup salted peanuts

Steps:

  • Line cookie sheets with parchment or wax paper.
  • Put the morsels into a double boiler and heat over medium hot but not boiling water. When the morsels begin to melt; stir them occasionally until completely melted and smooth. Turn the heat to low and stir in the peanut butter until well blended.
  • Combine the chow mein noodles and peanuts in a large bowl and pour the butterscotch/peanut butter mixture over them and stir until all the ingredients are well coated.
  • Drop by rounded tablespoonfuls onto the lined cookie sheet. Refrigerate until set. Can be stored at room temp during the winter; during the summer might require refrigeration.

No-bake haystack cookies are a tasty vintage no-bake cookie made with peanut butter, peanuts, butterscotch, and salty chow mein noodles! These retro cookies are beyond easy to make, and they have just the right amount of crunch!

1 cup butterscotch chips ((or 6-ounces))
½ cup creamy peanut butter
½ cup dry roasted peanuts ((salted))
2 cups chow mein noodles ((1 5-ounce canister))

Steps:

  • In a medium microwave-safe bowl, melt the butterscotch chips and peanut butter on high for 1 minute. Stir the mixture. Then, continue microwaving at 30-second increments, stirring each time, until it is smooth and creamy.
  • Remove the bowl from the microwave and fold the roasted peanuts and dry chow mein noodles into the mixture until well coated.
  • Drop heaping tablespoon portions of the mixture onto a baking sheet lined with parchment paper (using your hands to form them into mounds if needed).
  • Set the haystacks aside and allow them to cool and set. *Setting can take up to 2-3 hours, you may place them in the fridge to speed things along.

1 (3 ounce) can chow mein noodles
2 cups miniature marshmallows

Steps:

  • In a double boiler melt Peanut butter and butterscotch chips over low heat.
  • When smooth, remove from heat and add noodles and marshmellows.
  • Drop mixture onto wax paper by the spoonfull.
  • Allow to cool completly before enjoying.

3/4 cup chunky peanut butter
3/4 cup unsalted butter
2 large eggs

Steps:

  • heat oven to 350 and spray a large cookie sheet.
  • combine peanut butter, brown sugar, sugar, and butter and beat with an electric mixer.
  • slowly beat in eggs.
  • in a seperate bowl mix flour, soda and salt.
  • slowly, by hand mix wet and dry together.
  • make dough into balls and place on cookie sheet.
  • with your thumb make an indention in the cookie, flatening the balls slightly.
  • put three butterscotch chips in the center of each cookie.
  • bake 15-20 minutes.

1/2 cup butter
1 cup graham cracker crumbs
1 cup peanut butter chips
1 cup chocolate chips
1 cup butterscotch chips
1 cup pecans
1 (14 ounce) can sweetened condensed milk

Steps:

  • Melt butter in 9 X 13 pan & tilt to spread evenly.
  • Sprinkle graham cracker crumbs on top of butter.
  • Next,sprinkle peanut butter chips.
  • Next, sprinkle chocolate chips.
