ROASTED OKRA
As a good Southern gardener, I find myself bringing in okra by the armload nearly every other day. Stewed okra is great, but for a little variety, we like to roast ours from time to time. This is so simple and easy and the okra tends to not be nearly as gummy or slimy when roasted. Chopped tomato makes a great addition when we have some handy.

- In a heavy pot, heat 2 inches oil to 350 degrees. Place a thick layer of paper towels nearby. Working in batches to avoid crowding pan, fry okra until crisp, about 5 to 7 minutes. Seeds will swell and okra will be deeply colored at edges. Drain on paper towels.
- In a serving bowl, toss okra together with onion, tomatoes and cilantro. Squeeze lemon juice over all, and mix in salt and chaat masala. Taste and add more lemon, salt and masala as needed.

- Heat 1 tbsp oil in a (preferably non-stick) pan, when oil is hot, add cumin seeds and fry for 20 secs. Now add remaining seasoning, 1 tbsp oil, uncover and cook stirring on high heat for another 3-4 minutes or until okra start caramelizing a bit at the bottom.
- Taste and adjust the salt, add lemon juice, mix well and remove from heat. Serve hot on the side with meat or enjoy as main dish with steamed rice.
