THE BEST HOMEMADE SALSA YOU'LL EVER EAT
This recipe for homemade Mexican-style salsa is hands down the best salsa you'll ever eat. Tomatoes and peppers are perfectly charred on the stovetop before they're blended with the other ingredients. So good and simple!

Steps:
- Heat a large skillet to medium high heat. Place tomatoes and peppers in the skillet.
- Continue to saute, rotating the vegetables occasionally, so several sides begin to blister. See photos above. This will take around 20 minutes. Set aside to cool.
- Once cooled, chop off the stems of the peppers, and remove the seeds from the jalapeño (you can also keep some seeds for more heat in your salsa). Cut the vegetables into large pieces.
- Place tomatoes, peppers, onions, lime, and canned tomatoes into a blender and pulse quickly until just mixed (about 5 seconds). Add garlic, cilantro, and bouillon. Pulse for another 15 seconds until well blended but chunky.
- Place in a large bowl and refrigerate until cooled before serving. Serve with your favorite Mexican dish or with chips.

SALSA SUPERIOR
This salsa is the compilation of dozens of salsa recipes that I have read. This salsa is not too hot, not too sweet, not too mild. The depth of flavor and easy prep will make this a winner for your next party or Tex-Mex night.

Steps:
- In the bowl of a food processor, place garlic, onion, and jalapeno. Process to one minute or until finely chopped, almost minced, remove contents to a large bowl.
- In the same bowl of the food processor, add one cup of the crushed tomato, cilantro, and tomato paste. Process until the cilantro is well incorportated, place in the large bowl wth the vegetables previously chopped.
- Stir tomato mixture with the onion, garlic, and jalapeno mince. Add remaining ing. except salt and pepper. stir well. Add salt and pepper to tatste preference.
- Chill well, at least four hours. The longer this rests the more the flavor develops.
- Note: Please don't doubt the vinegar, it works in this recipe.

- In a medium-size mixing bowl, combine tomatoes, onion, cilantro, garlic, lime juice, tomatillo, and salt to taste. Mix well. Add 1/2 of the jalapeno pepper, and taste. If you desire your salsa with more of a kick, add the remaining 1/2 jalapeno. If you are satisfied with the salsa's heat, do not add the remaining jalapeno pepper. Cover the salsa, and chill until ready to serve.

WONDERFUL SALSA
This is the best salsa recipe I've found so far and I've tried about a dozen. I got it from one of the local hospital cookbooks that are sold in my area. I changed it a bit and have been canning it for years. The reason I plant a garden is for this salsa. We would be lost without it. Hope you like it as much as we do. One of our members who is a food scientist took this salsa to work, tested the pH and found it measured under 4.0 (well within the safety limit for boiling water bath processing).

- Mix all together and bring to a slow boil for 10 minute.
- Seal in jars and cook in hot water bath for 10 minute.
- This is a medium salsa. This is also a chunky salsa so if you want a smoother salsa cut your veggies into smaller pieces.
- Yields 3-6 quarts or pints.
