RUSSIAN SHUBA SALAD (HERRING UNDER FUR COAT)

Russian Shuba Salad (Herring Under Fur Coat) image

This traditional recipe for Russian herring under fur coat, known as shuba or seledka pod shuboi, is a salad of beets, potatoes, carrots, and eggs.

Provided by Barbara Rolek

Categories     Dinner     Entree     Lunch     Salad

Time 7h30m

Yield 8

Number Of Ingredients 10

3 large beets
3 large potatoes
4 large carrots
1 1/2 cups mayonnaise (divided)
1 medium red onion (finely chopped), divided
4 fillets of pickled herring in oil (finely chopped)
4 large hard-boiled eggs (finely chopped)
Black pepper to taste
Optional: 2 hard-boiled eggs (sliced)
Garnish: Fresh dill or parsley (chopped)

Steps:

  • Gather the ingredients.
  • In a large saucepan, bring 3 quarts of water to a boil.
  • Add the beets and cook for 20 minutes.
  • Add the potatoes and cook for another 20 minutes.
  • Add the carrots and continue cooking for an additional 20 minutes. Add more boiling water to keep the vegetables covered, if needed.
  • Drain the vegetables and let cool for 10 minutes before handling.
  • While still warm, peel the potatoes, carrots, and beets.
  • Set aside to cool completely.
  • Shred the carrots and beets.
  • Place in separate bowls.
  • Finely chop the potatoes.
  • On a pretty serving platter, place a ring mold or the ring from a springform pan . This salad can also be assembled free form in a round or oval shape or in a 13 by 9-inch pan.
  • Place all of the chopped potatoes in the ring, covering the bottom. Pat carefully into an even layer.
  • Spread 1/3 of the mayonnaise to completely cover the potatoes.
  • Place half of the beets in a thin layer on top.
  • Then add half of the carrots.
  • Place half of the finely chopped onion on top of the carrot.
  • Use all of the chopped pickled herring to cover the onions.
  • Spread another 1/3 of the mayonnaise to cover the herring.
  • Layer with the remaining carrots and then the onion.
  • Add the chopped eggs on top.
  • Sprinkle over black pepper to taste.
  • Cover with the remaining mayonnaise.
  • Add the rest of the beets.
  • Carefully pack down the beets so there's nothing else showing.
  • Refrigerate for at least 6 hours.
  • When it's time to serve, carefully remove the ring, if using, so the layers of the salad are shown.
  • If desired, place the sliced hardboiled eggs on top of the salad to decorate it.
  • Garnish with chopped dill or parsley.
  • Serve and enjoy.

RUSSIAN SALAD

Russian Salad image

Basically a vegetable-studded potato salad with mayonnaise, Russian salad is hugely popular all over the world for family gatherings and festive events. It's a beloved, traditional party dish riffed on almost everywhere but my own home: I'd only ever seen pasty, congealed versions I would never wish to eat until I tried this one from Vladimir Ocokoljic, served at his Serbian restaurant Kafana in New York City. While not quite as demanding as his aunt back in Belgrade, who used to slice even the peas in half, Mr. Ocokoljic insists on the tiny dice (each ingredient should match the size of a pea) and emphatically dislikes any sweet pickles (only gherkins or cornichons are a fit), making the finished dish delicate, luscious and savory. Whisking pickle brine into the mayonnaise creates a liquidy slurry, loose enough to dress the salad without its becoming smushed and gluey.

Time 1h

Yield 6 1/2 cups (about 12 servings)

Number Of Ingredients 8

Kosher salt and black pepper
3 medium yellow potatoes (about 1 pound), washed
5 thin carrots (about 1/2 pound), washed
10 ounces frozen peas
4 large eggs, fridge-cold
3 1/2 ounces boiled ham
1 cup drained cornichons and 1/2 cup plus 2 tablespoons of their brine
1 scant cup Hellmann's mayonnaise

Steps:

  • Bring a large pot of water to boil. Season with salt.
  • Add whole potatoes to the boiling water, and cook 15 minutes. Add whole carrots to the cooking potatoes, and cook both another 10 minutes. Remove potatoes and carrots with a spider when easily pierced with a cake tester or a very thin knife blade, and set aside in a bowl.
  • Add frozen peas to boiling water, and using the spider, remove them to a separate bowl as they float, until all peas have floated and been transferred to the bowl.
  • Gently add the eggs, and allow to boil 10 minutes.
  • While the eggs cook, peel the potatoes and carrots under cold running water by rubbing them gently with your fingers. Rinse the peas under cold running water to cool.
  • Once the eggs are cooked, drain them, and peel under cold running water.
  • Neatly dice the potatoes, carrots, ham, eggs and cornichons to the same approximate (and rather small) size as the peas, aiming for uniformity. Gently toss them all together in a large bowl.
  • In a small bowl, whisk together the mayonnaise with the cornichon brine, and pour over the salad. Toss gently with rubber spatula or using your fingers until the salad is well coated. Season with several hearty grinds of black pepper.
  • Refrigerate overnight, and serve cold.

  • Cook the carrots and the potatoes in boiling water until soft (about 20 minutes), then grate using a small grater.
  • Cook the beets in boiling water as well, until soft (about 1.5 hours), then grate using a small grater. If too liquid is produced you can pat dry using a paper towel if you don't want a soggy salad.
  • Finely chop the onion, and pour hot water on it, then get rid off the water. Again pour cold water on it, and get rid off it. This will help you get rid of the bitter taste. Pour white vinegar on it and keep it for 5 minutes, then again wash with hot water and then get rid off it.
  • Take a huge plate preferably round, and start layering the salad. Layer half of the beets on the plate, then layer half of the shredded potatoes, and then layer a thin layer of mayonnaise.
