OVEN-ROASTED, LEMON-PARMESAN OKRA
Modified from the dallasnews.com -- Recipe by Tina Danze, published August 10, 2011. NOTE: Recently, I saw on America's Test Kitchen (or Cook's Country), to use frozen okra thawed and blotted dry in recipes, rather than trying to find decent fresh okra in grocery stores!

Steps:
- Preheat oven to 425°F.
- Toss whole okra with oil, lemon juice, zest, 1 1/2 tablespoons grated cheese, salt and pepper. Place okra on a rimmed baking sheet and roast until tender, about 15 minutes.
- Remove okra from oven, and immediately top with additional grated cheese.
- Taste and season with additional salt and pepper, if necessary.
- Makes four servings.
OKRA IN LEMON BUTTER

Steps:
- Wash okra weell; trim stem end, leaving enough on the pod to keep the juice inches.
- Cover with boiling water and boil gently until tender, approximately 15 minutes.
- When half done add a little salt.
- To serve, drain very well, pour into a hot dish and add melted butter and lemon juice.
SAUTEED OKRA WITH CUMIN
Steps:
- Melt butter over high heat in a medium saute pan. Saute okra with all seasoning 2 to 3 minutes. Reduce heat to moderate and cook, stirring occasionally, an additional 5 minutes. Serve hot.
CATFISH AND OKRA WITH PECAN BUTTER SAUCE

- Put oven racks in upper and lower thirds of oven and preheat oven to 500°F.
- Toss okra and tomatoes with oil, salt, and pepper in a bowl. Spread in a large shallow baking pan and roast in lower third of oven until tomato skins begin to burst, about 10 minutes.
- Meanwhile, pat fillets dry and arrange in another large shallow baking pan. Sprinkle both sides with 1 1/2 teaspoons (total) Old Bay seasoning.
- When tomato skins begin to burst, add corn to vegetables in lower third of oven and put fish in upper third of oven. Roast fish and vegetables until fish is just cooked through, about 10 minutes.
- While fish roasts, melt butter in a 10-inch heavy skillet over moderate heat, then add pecans and remaining 1/2 teaspoon Old Bay seasoning. Cook, stirring occasionally, until nuts are golden and butter is deep golden, about 3 minutes. Remove from heat and stir in lemon juice. Serve fish over vegetables and top with sauce.
BOILED OKRA
In a 1930's cook book a mention on how southern cooks kept the "slime" off of okra. I tried it and man-oh-man! Tis good!

- Place okra in a sause pan and cover with water, and add lemon juice.
- Add salt and pepper to taste.
- Bring to boil.
- Simmer for 8-10 minutes.
- No longer!
- The taste is great!
- Not mushy, but not crisp at all.
- I used the frozen, cut okra.
- The lemon juice adds a wonderful kick to the taste.

- Heat 1 tbsp oil in a (preferably non-stick) pan, when oil is hot, add cumin seeds and fry for 20 secs. Add fine chopped garlic, onion slices and saute till onions are translucent (make sure not to burn the garlic.). Now add sliced okra 1 cup at a time, mixing after each addition to break apart frozen chunks.
- Once all okra is in the pan and separated, saute for 3-4 minutes stirring frequently on high heat to dry out the moisture. In a small bowl mix, 1/2 tsp salt, turmeric, black pepper and creole seasoning. Sprinkle half of the mixture over cooking okra and mix well. Cover and cook on medium heat until okra is tender (about 5-7 minutes). Now add remaining seasoning, 1 tbsp oil, uncover and cook stirring on high heat for another 3-4 minutes or until okra start caramelizing a bit at the bottom.
- Taste and adjust the salt, add lemon juice, mix well and remove from heat. Serve hot on the side with meat or enjoy as main dish with steamed rice.
