SHERBET MIMOSA FLOAT RECIPE
Steps:
- Fill a champagne glass halfway with scoops of sorbet and add the orange liquor.
- Slowly top the sorbet with the champagne.
- Serve immediately.

Steps:
- Pour 6 tablespoons champagne and 2 tablespoons orange juice into a 6-ounce champagne flute. Stir in 1/4 cup vanilla ice cream; if desired, top with chocolate shavings. Repeat with remaining ingredients.

- In the bottom of a stemless wine glass place the orange juice concentrate.
- Pour the Brut Champagne over the top of the orange juice concentrate. You may need to give it a little stir to combine. Allow the champagne bubbles to settle.
- Very carefully add the 2 scoops of orange sorbet. *It may bubble up so just let the bubbles calm down before placing the 2nd scoop in the glass.
- Garnish the rim of the glass with the fresh orange wedge and serve.

MIMOSA FLOAT
A cool twist on the classiest way to start your morning with booze, for those of us who loved root beer floats as children. I recommend using a wine glass rather than a champagne flute, as the sorbet can be a bit unwieldy and stirring can be difficult with the flute. This could probably be adapted into a punch recipe for weddings and such, but I think it is best enjoyed with one or two friends on the porch on a warm summer morning.

- When ready to serve, remove the pitcher from the refrigerator and add the champagne. Gently stir to combine.
- Place 1-2 small scoops of orange sorbet in a glass. Pour the sangria over the sorbet and stir with a spoon.
- Garnish with an orange slice.

- If desired, remove some of the zest from your orange and mix with the ice cream. This part is totally optionally as some people don't like the texture.
- Add your ice cream to a champagne flute. Squeeze your oranges and collect the juice in a measuring cup with a spout. I prefer about a half cup of juice in this drink. Pour the juice over the ice cream. Top with chilled champagne and serve!
