CLASSIC PORK FRIED RICE

Classic Pork Fried Rice image

Pork fried rice is probably one of the most popular take-out dishes out there. Classic Chinese take-out pork fried rice is made with Chinese BBQ roast pork.

Provided by Bill

Categories     Pork

Time 25m

Number Of Ingredients 15

1 tablespoon hot water
1 teaspoon honey
1 teaspoon sesame oil
1 teaspoon Shaoxing wine ((or dry cooking sherry))
1 tablespoon soy sauce
1 teaspoon dark soy sauce
1/4 teaspoon white pepper
5 cups cooked Jasmine rice ((add 1 teaspoon oil to rice when cooking))
1 tablespoon oil
1 medium onion ((diced))
1 pound Chinese BBQ pork
1 teaspoon salt
1/2 cup bean sprouts
2 eggs ((scrambled))
2 scallions ((chopped))

Steps:

  • Start by combining the hot water, honey, sesame oil, shaoxing wine (if using), soy sauce, dark soy sauce, and white pepper in a small bowl. This is the sauce that you'll be adding to the rice, and it's much easier to have it combined and ready to go before you start cooking.
  • Take your cooked rice and fluff it with a fork or with your hands (you can rinse your hands in cold water if the rice starts sticking to them). There shouldn't be any big clumps!
  • With the wok over medium heat, add a tablespoon of oil and sauté the onions until translucent and then stir in the roast pork. Add the rice and mix well. If the rice is cold from the refrigerator, continue stir-frying until the rice is warmed up, which will take about 5 minutes. If the rice was made fresh, then you just need to mix until everything is incorporated.
  • Add the sauce mixture and salt and mix with a scooping motion until the rice is evenly coated with sauce. You will have to break up any remaining clumps of rice with the spatula as best as possible, but no need to be obsessive. The rice should be hot by this time.
  • Toss in your mung bean sprouts, scrambled eggs, and scallions. Mix thoroughly for another minute or two and serve!

CHINESE RESTAURANT FRIED RICE

Chinese Restaurant Fried Rice image

Chinese fried rice that tastes just like in the Chinese restaurants. I have tried many recipes and was never able to make it taste like in the restaurants until I met someone who was a chef in a Chinese restaurant and let me in on the secrets.

Provided by poune33

Categories     Long Grain Rice

Time 40m

Yield 2-4 serving(s)

Number Of Ingredients 9

2 cups uncooked basmati rice
2 cups water
1/2-3/4 cup chicken stock
1 ham steak (cut into cubes)
1/2 cup frozen peas
2 eggs
3 -4 tablespoons canola oil (or peanut oil)
1/4 teaspoon salt
2 tablespoons soy sauce

Steps:

  • Cook your rice (I use a rice cooker). You want it a bit on the crunchy side, so even though you might want to add more water, DON'T.
  • Let your rice cool completely (I spread it out on a baking sheet and put it in the freezer if I'm in a hurry). You can even cook your rice the night before and let cool in the fridge.
  • Heat a wok over high heat with 1 tbs. of oil. Add eggs and scramble until cooked. Add ham and peas and fry for about a minute.(You can add or omit any veggie/meat combo you want.).
  • Remove omelet from wok. Clean the wok out a bit so the leftover egg doesn't burn while you're heating up your wok and oil again.
  • Add remaining oil to the wok and heat over high heat until it is very hot. Add your cold rice to the wok and stir to coat every grain. (You can add some more oil if you want; it just depends on how greasy you like it.).
  • Add your chicken stock to the rice; do it a little bit at a time to give the rice a chance to soak up the liquid. I'm not sure exactly the amount of stock to be added; I eyeball it because it seems to change every time. Basically, you want the rice to soak up the flavor, but you don't want to put in too much as it will end up quite sticky.
  • Stir fry for a while, stirring constantly until there is no liquid left, then chop up your omelet and add it, along with the soy sauce and salt. Stir. You can add more or less soy sauce and salt according to your taste. NOTE: In this case, the salt is simply to enhance the flavor of the dish, not to make it salty. And remember that soy sauce is salty in itself--unless you use the salt-free or low-salt type. (It is an MSG substitute.).
  • Enjoy! It's the best homemade fried rice you'll ever make!

CHINESE FRIED RICE

Chinese Fried Rice image

This Chinese fried rice has the flavor those other recipes are missing. Tastes like takeout. I want to dedicate this dish to Bergy, whose recipe "AM & B's Indonesian Mehoon" has inspired this dish. Make sure you season your rice with salt before it cooks. Add some butter to the cooking water, as well. Other seasonings should be added before you cook, as well, so it has time to get inside the rice. If you like sesame flavor, add 1 tsp. of it after you add the green onions, but do not use it as a cooking oil because it easily burns.

Categories     Chicken

Time 28m

Yield 4 serving(s)

Number Of Ingredients 12

3/4 cup finely chopped onion
2 1/2 tablespoons oil
1 egg, lightly beaten (or more eggs if you like)
3 drops soy sauce
3 drops sesame oil
8 ounces cooked lean boneless pork or 8 ounces chicken, chopped
1/2 cup finely chopped carrot (very small)
1/2 cup frozen peas, thawed
4 cups cold cooked rice, grains separated (preferably medium grain)
4 green onions, chopped
2 cups bean sprouts
2 tablespoons light soy sauce (add more if you like)

Steps:

  • Heat 1 tbsp oil in wok; add chopped onions and stir-fry until onions turn a nice brown color, about 8-10 minutes; remove from wok.
  • Allow wok to cool slightly.
  • Mix egg with 3 drops of soy and 3 drops of sesame oil; set aside.
  • Add 1/2 tbsp oil to wok, swirling to coat surfaces; add egg mixture; working quickly, swirl egg until egg sets against wok; when egg puffs, flip egg and cook other side briefly; remove from wok, and chop into small pieces.
  • Heat 1 tbsp oil in wok; add selected meat to wok, along with carrots, peas, and cooked onion; stir-fry for 2 minutes.
  • Add rice, green onions, and bean sprouts, tossing to mix well; stir-fry for 3 minutes.
  • Add 2 tbsp of light soy sauce and chopped egg to rice mixture and fold in; stir-fry for 1 minute more; serve.
  • Set out additional soy sauce on the table, if desired.

CHINESE TAKE-OUT FRIED RICE

Chinese Take-Out Fried Rice image

Fried rice is what you make when you have leftover rice from the meal before. You can clean out your fridge and add leftover diced cooked pork, chicken or beef, or vegetables such as cabbage, broccoli, carrots or red peppers. Fast, delicious and easy. From the Take-Out Menu Cookbook.

Provided by TxGriffLover

Categories     White Rice

Time 35m

Yield 4 serving(s)

Number Of Ingredients 11

3 tablespoons peanut oil
8 shrimp, peeled, deveined and cut into 1/2-inch pieces
3 ounces ham, cut into 1/2-inch pieces (1/4 cup)
1/2 cup frozen peas, thawed
1 tablespoon soy sauce, plus more for seasoning
2 large eggs, beaten
4 green onions, thinly sliced
1 pinch salt
fresh ground black pepper
3 cups cold leftover cooked rice
1 tablespoon rice wine or 1 tablespoon dry sherry

Steps:

  • Heat 2 Tblsp of the oil in a wok or frying pan set over medium heat. Add the shrimp, ham, and peas and cook 1 minute. Add the soy sauce and transfer to a plate to keep warm.
  • Heat the remaining tablespoon oil in the pan. Add the eggs, green onions, salt & pepper.
  • Scramble the eggs in the pan. Once this mixture comes together in clumps, add the rice, shrimp mixture, and rice wine. Adjust the seasoning with soy sauce or salt & pepper. Serve hot.
  • Feel free to saute cabbage, broccoli, bok choy, or diced carrots along with the shrimp, ham and peas.
  • Use cold leftover rice only. This recipe won't work well with freshly cooked rice. It will be mushy and stick to the pan, a real mess.

CHINESE TAKE-OUT WHITE RICE

Chinese Take-Out White Rice image

Rice has been cultivated in China since around 5000 BC, and half the world depends on it for survival. Leftover rice is a plus so be sure to make enough so that you can make fried rice the next day. From the Take-Out Menu Cookbook.

Provided by TxGriffLover

Categories     Long Grain Rice

Time 27m

Yield 4 serving(s)

Number Of Ingredients 2

1 cup long grain rice
1 3/4 cups cold water

Steps:

  • Pour the rice into a mesh strainer and run cold water through the rice while stirring it around with your hand. This washes the excess starch from the rice.
  • When the water runs clear, combine the rice and water in a medium saucepan and bring to a boil over medium-high heat. Boil for 2 minutes, then cover and reduce the heat to low.
  • Cook the rice for 18 minutes, remove it from the heat, and let it rest with the cover on for 5 minutes.
  • Serve immediately.
  • Tip: to reheat rice, place it in a metal colander or mesh strainer set over 1 inch boiling water in a large pot. Cover the pot and steam the rice for 5 minutes.
  • Do not refrigerate cooked rice unless you plan on using it for fried rice, rice pudding, etc. Refrigerated rice becomes hard and never regains it's fluffy texture after being chilled.
  • Cooked rice can be kept at room temperature for up to 2 hours.

CHINESE TAKEOUT PINEAPPLE FRIED RICE

Chinese Takeout Pineapple Fried Rice image

Essentially, this is American-style Chinese food, and something we are all familiar with. Great comfort food!

Provided by JackieOhNo

Categories     Ham

Time 15m

Yield 4 serving(s)

Number Of Ingredients 9

3 cups leftover cooked white rice
2 tablespoons peanut oil or 2 tablespoons vegetable oil
2 shallots, finely chopped
1/2 red bell pepper, finely chopped
1 tablespoon oyster sauce
1 tablespoon soy sauce
1 tablespoon chinese rice wine or 1 tablespoon dry sherry
1 cup fresh pineapple, cut into 1/2-inch bite-size cubes
1/4 cup chopped thickly-sliced ham

Steps:

  • Break up the cold cooked rice into smaller clumps.
  • Heat a wok or large skillet over medium-high heat until a bead of water sizzles and evaporates on contact. Add oil and swirl to coat bottom. Add shallots and bell pepper; stir-fry until fragrant and edges of shallots begin to crisp, about 1 minute. Move shallots and bell peppers to the side, creating a well in the middle. Toss in rice; break up remaining clumps with a spatula.
  • Stir in oyster sauce, soy sauce and rice wine. Stir-fry until rice starts to turn golden, about 2 minutes. Add pineapple and ham. Give everything a few quick stirs so that the ham and pineapple are heated through. Transfer to a large bowl or plate and serve hot.

  • Shrimp Fried Rice. Shrimp fried rice! A meal so good you’ve gotta say it twice. This veggie-packed version of the take-out classic is a snap to prep and is fully adaptable depending on what’s going on in your fridge.
  • Pork and Chive Dumplings. Why order dumplings when you can make your own? Chives and pork are a stellar combo, but you could also get fancy and swap in veggies like steamed chopped broccoli or mushrooms and carrots.
  • Laksa Soup. Creamy and spicy coconut noodle laksa is a staple in Malaysian fare, which is heavily influenced by Chinese cooking techniques.
  • Char Siu-Style Roasted Eggplant. This roasty, sweet-yet-savory eggplant is cooked in the style of char siu Chinese pork. Marinate eggplant slices in a sticky mixture of soy, oyster, and hoisin sauce, then bake until tender.
  • Stir-Fried Chinese Greens. Garlicky, tender greens are a must in Chinese cooking, and the best part is that the veg itself is totally interchangeable.
  • Hunan Beef. Mega-spicy Hunan-style beef stir-fry is a crowd-pleasing dinner you’ll want to make every week. Sweet green peppers and celery offset the spicy Sichuan long red peppers, and when tossed with thin strips of beef and a salty sauce, you’ll forget all about that old carton of General Tso’s in the fridge.
  • Congee Rice Porridge. The coziest dish around is a big bowl of Chinese rice porridge, known as congee or jook. While you can make the meal starting with uncooked rice, a pot of soggy or too-dry rice can easily be turned into congee when left to simmer with chicken broth and the Chinese aromatics.

GLUTEN FREE CHINESE FOOD - NEW HEALTH ADVISOR

  • Rice. Rice is highly nutritious and gluten free. In this regard, you should consider including steamed white rice in your Chinese diet because it is also low in calorie and fat.
  • Steamed Vegetables. In their pure form, vegetables do not contain gluten. However, fried vegetables may contain traces of the protein. This is because the breeding process of the fried vegetables incorporates bread crumbs or wheat floor, both of which contain gluten.
  • Steamed Meat. The majority of main course meat meals in Chinese restaurants comprise of either deep-fried or breaded meat. Such food options contain gluten, hence not ideal for Celiac disease patients.
  • Gluten-Free Noodles. Just like any other rice product, tofu strands and rice noodles do not contain gluten in their natural form. Other noodle options served in Chinese restaurants that are gluten-free include cellophane noodles – also referred to as mung bean noodles and glass.
  • Natural Soya and Tamari Sauce. If you have decided to have gluten free Chinese food, you should order for either Tamari or natural soy sauce along with your food.
  • You May Take MSG. As opposed to the olden days when monosodium glutamate (MSG) flavor agent was made from wheat, it is now made from beets, hence gluten free.
  • Avoid Deep-Fried Foods. Unless you are sure that the batter used in making the deep fried food is from rice flour or cornstarch, you should avoid ordering for deep-fried dishes in Chinese restaurants.
