CHICKEN WITH GARLIC POTATOES AND ASPARAGUS

1 pound Yukon Gold potatoes, cut into 1-inch pieces
1 head garlic, cloves separated and peeled
3 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
4 skinless, boneless chicken breasts (about 6 ounces each)
1 bunch medium asparagus (about 1 pound), trimmed and halved
1 pint grape tomatoes
1/2 cup grated parmesan cheese (about 1 ounce)
1/4 cup chopped fresh parsley
2 teaspoons finely grated lemon zest

Steps:

  • Put a rimmed baking sheet on the lowest oven rack and preheat to 425 degrees F. Toss the potatoes and garlic cloves with 1 tablespoon olive oil, 1/4 teaspoon salt and a few grinds of pepper in a bowl; set aside.
  • Season the chicken with 1/2 teaspoon salt and a few grinds of pepper. Heat 1 tablespoon olive oil in a large skillet over medium heat. Add the chicken; cook until browned, 1 1/2 to 2 minutes per side. Transfer to the hot baking sheet. Scatter the potatoes and garlic around the chicken; reserve the bowl. Bake until the chicken is just cooked through, about 5 minutes. Transfer the chicken to a plate and tent with foil; leave the potatoes and garlic on the baking sheet.
  • Add the asparagus and tomatoes to the reserved bowl; toss with the remaining 1 tablespoon olive oil and 1/4 teaspoon salt. Add to the baking sheet with the potatoes. Bake until the vegetables are tender and the tomatoes start to burst, 13 to 15 minutes.
  • Remove the baking sheet from the oven; switch the oven to broil. Toss the parmesan, parsley and lemon zest in a small bowl. Nestle the chicken in the vegetables and sprinkle everything with the parmesan mixture. Broil until golden, 1 to 2 minutes.

This simple recipe takes only about an hour. Delicious and light. I don't submit many recipes, but my wife insisted I submit this one. It is a "winner".

1 lb chicken breast halve (boneless, skinless)
1/2 teaspoon salt
1/4 teaspoon black pepper
1 lb asparagus spear (4-5 per breast)
1/2 lb provolone cheese (sliced)
1/4 lb prosciutto ham (thinly sliced)
1/4 cup breadcrumbs (Italian or Plain)

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Grease an 8x8 (or larger) baking dish.
  • Place each breast in a 1 gallon storage bag on a solid, flat surface. Firmly pound the chicken with the smooth side of a meat mallet to an even thickness of about 1/4" to 3/8". Sprinkle each side with salt and pepper.
  • Wrap 4-6 asparagus spears with Prosciutto, then carefully wrap that with Provolone. Wrap the chicken breast around the asparagus, provolone, prosciutto roll to make a compact roll. Place the rolls, seam side down, in the prepared baking dish. Sprinkle each with a generous amount of the bread crumbs. Cover asparagus tips with a small piece of tin foil.
  • Bake in the preheated oven until the juices run clear (about 50 minutes). Place one additional piece of prosciutto and 2-3 pieces of provolone on top of the chicken. Continue to bake for 10 additional minutes.
  • You now have a beautifully presented piece of gorgeously tasting art. This completed work will serve 2-4, depending on your appetite.
  • Serve with cannellini bean, tomato side dish (1 can cannellini, 1 can petite diced tomatoes, 1 tsp sage, 1 tsp oregano, and 1/2 onion) slow cooked for 30 minutes.

1 (12 1/2 ounce) jar of high quality asparagus
1 spicy hot pepper
1/2 yellow onion
1 (10 3/4 ounce) can cream of chicken soup
4 tablespoons basil olive oil
cracked peppercorn
sea salt

Steps:

  • Lightly brown the chicken breast, diced pepper (I used Anahiem) and diced onion in basil olive oil. Add salt and ground peppercorn (black, pink and green) to taste. Should take about 15 minutes on low medium heat.
  • Separately warm asparagus. Separately warm Cream of Chicken Soup (DO NOT ADD WATER OR MILK).
  • When chicken is done, place in cassarole type dish, place asparagus very prettily on top, drizzle with the Cream of Chicken soup on top (you can use a spoon to do this) and ENJOY!

1/4 cup crumbled blue cheese
1/4 cup dry white wine

  • Heat oil in lg skillet over medium heat.
  • Coat chicken with flour and brown in oil; remove to plate.

1/2 cup pesto sauce
1 tablespoon olive oil

  • Preheat oven to 400º F.
  • Line baking sheet with heavy-duty foil.

1 tablespoon cornstarch
2 1/2 tablespoons vodka
1/2 tablespoon canola oil
1/2 cup dry white wine
1 tablespoon low sodium soy sauce
1/2 cup low sodium chicken broth
vegetable oil cooking spray
3 scallions, white part and 2 inches green,cut into 1 inch pieces
1 clove garlic, minced
2 inches fresh ginger, peeled and julienned
1/2 red bell pepper, 3 oz seeded and julienned
6 ounces thin asparagus, cut into 2 inch pieces
1 small ripe mango, 4 oz peeled and cut into chunks

Steps:

  • Place the cubed chicken in a bowl.
  • Add the egg white, cornstarch, vodka, and canola oil.
  • Stir to coat the chicken, then set aside to marinate while you prepare the rest of the recipe.
  • Combine the white wine, soy sauce and chicken stock in a pitcher.
  • Heat a large non stick skillet and spray it with cooking oil.
  • Add the marinated chicken and cook over high heat until lightly browned.
  • Add the scallions, garlic, ginger, red pepper, and asparagus and stir fry for another minute.
  • Slowly stir in the liquid and bring to a boil so that the sauce thickens.
  • Lower the heat and stir in the mango.
  • Cook until heated through.
  • Good served over basmati rice.

4 skinless, boneless chicken breast halves
5 tablespoons olive oil
2 eggs, beaten
1 cup Italian-style dry bread crumbs
1 (14.5 ounce) can chicken broth
1 (10 ounce) can asparagus, drained
4 slices provolone cheese

Steps:

  • Heat oil in a large 2-inch deep skillet. Dip chicken in egg beat, then coat in bread crumbs. Brown in skillet on both sides.
  • When chicken is browned, add broth and place asparagus evenly over chicken. Lay a slice of cheese over each chicken piece.
  • Cover skillet and cook over medium heat for 15 minutes, or until chicken is cooked through and no longer pink inside.
