2 tablespoons butter
1 jalapeño pepper, diced and seeded
1 tablespoon minced garlic
16 oz monterey jack cheese, grated
½ teaspoon ground cumin
½ teaspoon onion powder
salt and pepper to taste
¼ cup cherry tomatoes, cut in half
¼ cup green peppers, sliced thin
¼ cup carrots, peeled and sliced thin

Steps:

Melt butter in large saucepan over medium high heat. Add jalapeño pepper and minced garlic and cook for 1 minute.
Add grated cheese and keep stirring until cheese is completely melted.
Add cumin, onion powder, salt and pepper and stir until combined.
Pour dip into large bowl. Top with fresh carrots and peppers.
Serve warm with tortilla chips!

Steps:

Grate cheese.
Combine with remaining ingredients, toss well and enjoy!

2 (4 ounce) cans shrimp, drained well
1 (2 1/4 ounce) can sliced black olives, drained well
3/4 cup mayonnaise (not Miracle Whip)
1/4 cup sliced green onion

Steps:

Mix together all ingredients in a microwavable safe serving dish (a quiche dish works well for this).
Microwave on HIGH for 3 minutes; stir.
Continue to microwave for 30 seconds each time-stirring well after each 30 seconds-until cheese melts.
Serve hot with tortilla and/or corn chips.

8 ounces cream cheese
8 ounces monterey jack pepper cheese, shredded
2 -3 tablespoons minced garlic

Steps:

Prepare spinach according to package directions. I usually cook it in the microwave about 3-4 minutes. Drain or blot with paper towels to absorb some of the excess water.
Add monterey jack cheese, cream cheese and garlic. Continue cooking until cheese is melted.
