OBATZDA - GERMAN CHEESE SPREAD

Obatzda - German Cheese Spread image

Obatzda (also spelt Obazda ) is a Bavarian classic that is a staple dish in German beer gardens. It is best enjoyed outside, with a slice of rye bread of a pretzel accompanied by a nice cold beer.

Provided by Marita

Categories     breadspread     Side Dish     Snack

Time 30m

Number Of Ingredients 9

1 onion (around 150 g (5.2 oz))
200 g Camembert (7 oz - alternatively use Brie, Rocamadour, Limburger or another soft cheese of your choice)
100 g full fat creme cheese (3.5 oz)
50 g butter (1.7 oz, soft )
1 tsp sweet paprika
1/2 tsp ground caraway seeds (optional )
salt
black pepper
some chives to serve

Steps:

  • In order to ripen the cheese faster, remove the camembert from the fridge for at least 3 hours. Cut off the rind and leave to rest at room temperature. You will see that it becomes very soft.
  • Place the camembert, cream cheese and butter in a bowl. Using a fork, mix everything until you achieve creamy mixture. (Some also use their hands to knead the mixture)
  • Season with salt, pepper paprika and caraway seeds(optional) to taste.
  • Mix in the onions optional. Another option is to serve the onions on top of the obatzda. This is the better option if you plan to serve the dip later because the onions make the cheese too moist. Also, then it is up to personal preference if you have the dish with or without onions, as some might find the taste too strong.
  • Before serving, sprinkle with some chopped chives. Enjoy it with a slice of rye bread or pretzel.

OBATZDA (GERMAN BEER & CHEESE DIP)

Obatzda (German Beer & Cheese Dip) image

Do you know Obatzda? It's a super creamy cheese dip from Bavaria (Germany) containing camembert, butter, beer and fresh chives!

Provided by June d'Arville

Categories     Appetizer     Snack

Time 30m

Number Of Ingredients 7

9 oz camembert cheese ((250 g), very ripe)
3 oz unsalted butter ((85 g), very soft)
½ tsp paprika powder
a handful fresh chives (chopped)
1 spring onion
2 tbsp Belgian dark ale
salt

Steps:

  • 1. Peel the camembert cheese: put it in the fridge for a couple of hours until it is firm and easier to peel. Then transfer the peeled chunks to a blender and let the cheese reach room temperature again.
  • 2. Blend for a few seconds. Then also add the soft butter.
  • 3. Blend again until you get a very soft and creamy mixture. Add the spicy paprika.
  • 4. Then blend again. The soft cheese mixture should turn orange now. Also add the chopped chives and beer.
  • 5. Blend again. Then transfer the creamy obatzda mixture to a plate or bowl. Add the sliced spring onion (optional: this will make the obatzda very strong, if you have trouble digesting raw onion then I suggest you leave it out).
  • 6. Stir well. Check the seasoning of the obatzda and add extra spicy paprika or salt to taste. Then transfer the obatzda cheese dip to a clean cup and serve with pretzels snacks or bread.

Time 5m

Number Of Ingredients 6

1/4 onion ((large), approx 55g, or 2 shallots)
4 oz camembert (113g, 1/2 a round (or similar camembert-style cheese))
2 tbsp unsalted butter (26g)
1/4 cup cream cheese (65g)
1 tsp paprika
2 tbsp wheat beer

Steps:

  • Peel and roughly dice the onion and cut the camembert and butter in to roughly bite sized pieces. Put everything in a food processor and pulse together until fairly smooth ad well-blended. Serve immediately, or you can chill and serve later - you will probably want to allow it to come to room temperature and stir before serving if you chill it as otherwise it will be much firmer.
