Steps:
- In a skillet, saute onion and garlic in butter, until onion becomes tender and begins to brown.
- Add undrained tomatoes, water, salt and pepper. Bring to a simmer.
- While soup is simmering, toast rolled oats in a heavy bottomed sauce pan, stirring till they are brown. Stir in oats to soup and cook for about 6 to 10 minutes, and then serve.

TOMATO & OAT SOUP

Steps:
- Dice the celery, onion and carrot finely. Heat the olive oil in a large pan and fry the vegetables gently for 5 minutes until softened but not browned. Add the garlic and fry for a few seconds then add the vine tomatoes and red pepper. Cook for a further 5 minutes until softened. Add the canned tomatoes with 200ml water and the stock then bring to the boil. Add the oats, stir well and simmer for 10 minutes. Season to taste and sweeten with a little sugar or balsamic vinegar if necessary. Stir basil leaves into the soup just before serving and drizzle with olive oil.
SPINACH, TOMATO AND FETA OATMEAL
This satisfying dish takes a traditional breakfast favorite and turns it into a savory version with an almost risotto-like texture. It's great served warm or at room temperature.

- Bring 4 cups water, lemon juice, 1 1/4 teaspoons salt, 1/2 teaspoon pepper and crushed red pepper if using to a boil in a large saucepan.
- Stir in the oats, spinach and tomatoes, reduce the heat to medium and cook, stirring frequently, until the oats are just softened and the mixture is slightly thickened, about 7 minutes. Remove the saucepan from the heat and stir in the feta, oil and dill.
- Transfer the oatmeal to individual bowls and garnish with scallions and olives if using.

- Heat a large deep skillet or Dutch oven over medium-low heat. Pour in the olive oil, and let it heat up. Add the oats; cook and stir until toasted.
- In a blender or large food processor, combine the tomatoes, onion, garlic, 1 cup of water, and cilantro. Blend until smooth. Pour into the pan with the toasted oats. Stir in the remaining 2 cups of water, and bring to a boil. Mix in the salt and chicken bouillon. Cover, and simmer for 15 minutes. Enjoy hot or warm.

Steps:
- Heat oven to 350°F.
- Combine all ingredients except chili sauce. Mix lightly but thoroughly.
- Press into an 8x4-inch loaf pan.
- Zigzag top of meatloaf with chili sauce.
- Bake for 1 hour or until meat is no longer pink and juices run clear.
- Drain and let stand 5 minutes before serving with more chili sauce on the side.
