Tongue Italian Style Food

PICKLED TONGUE

Steps:

• Boil tongue in salt water for 3 hours. Peel skin from the tongue.
• Mix remaining ingredients in a large, nonreactive pot and bring to a boil.
• Add meat and boil for 10 minutes.
• Cool and store in refridgerator for one week.
• Slice tongue thinly to serve.

FIESTA LENGUA (TONGUE)

Steps:

• Clean and wash tongues thoroughly.
• Blanch in boiling water.
• Scrape skin with the back of a knife.
• Boil in water and vinegar for 15 minutes.
• Discard liquid.
• Add water just enough to cover and boil to remove vinegar odor.
• Add salt and bay leaf and cook until tender.
• Remove tongues and reserve stock.
• Slice into serving portions.
• Marinate for 30 minutes.
• Reserve marinade.
• Heat oil or margarine in a medium pot.
• Add onions, mushrooms and tongue and sauté about 2 minutes.
• Add tomato sauce, catsup, marinade and tongue stock.
• Season with salt and pepper to taste.
• Simmer for 10 minutes.
• Add potatoes and red pepper.
• Stir and cook for 2 minutes.

TONGUE - ITALIAN STYLE

Steps:

• 1. Wash tongue, and place in large kettle with enough water to cover. Simmer 2-2-1/2 hrs until barely tender. Reserve 1/2 cup of water from tongue. Remove tongue, peel off skin and trim well. In a large dutch oven, melt margarine, add carrots and onions, cook until lightly brown. Add ham, then the wine and then add reserved liquid from tongue, tomatoes, bay leaf, thyme, parsley & salt and pepper to taste. Add tongue back to sauce and simmer until tender.
