I just made my first batch of this and it smells great. I made homemade gravy and plan on freezing from-scratch mashed potatoes separately. I also think that this would be great to have on hand for when you do have leftover mashed potatoes.

2 lbs ground beef
1 small onion, peeled and chopped
2 (10 1/4 ounce) cans beef gravy
2 cups frozen corn
1 1/2 cups frozen peas
1 cup carrot, peeled and diced
2 -3 cups mashed potatoes
2 tablespoons butter, melted
paprika

Steps:

  • In a dutch oven or stockpot, cook the beef over medium heat.
  • About halfway through add the onion.
  • Cook until the beef is no longer pink, drain off the grease.
  • Microwave the carrots for 2 minutes.
  • Add the gravy and veggies.
  • Cool and put into 2 freezer containers. I put them in freezer bags.
  • To prepare: Thaw frozen beef mixture in the refrigerator.
  • Put into a greased 2 quart baking dish.
  • Top with mashed potatoes, melted butter and sprinkle with paprika.
  • Bake uncovered at 350F for 30-35 minutes or until heated through.

I got this recipe from the About.com Low Fat Blog and modified it a little bit. My boyfriend, who studied for a year abroad in England, said that his English roommates would be proud! For a twist and some more color, try it with sweet potatoes!

1 tablespoon canola oil
2 large carrots, chopped
1 medium onion, chopped
1 lb extra lean ground beef
2 tablespoons Worcestershire sauce
1/2 teaspoon dried rosemary
1 teaspoon dried basil
1/2 tablespoon dried parsley
1/2 teaspoon pepper
1/4 cup tomato paste
1 cup fat free low-sodium beef broth
1 (16 ounce) can peas, drained
2 lbs potatoes, peeled and cut into 1 inch slices
1 cup skim milk
1 tablespoon light butter

Steps:

  • In a large saucepan or wok, saute carrots and onion in oil on medium-low heat until soft (about 10 minutes).
  • Turn heat up to medium, and add in ground beef. Cook until no longer pink.
  • Add in Worcestershire sauce, beef broth, tomato paste, peas, and spices. Reduce heat and simmer uncovered for 15 minutes.
  • While sauce is simmering, bring a large pot of water to a boil. Add in potatoes. Cook for about 15-20 minutes until tender. Drain water, add in butter and milk, and mash with a potato masher.
  • Preheat oven to 400 degrees.
  • Pour meat and vegetable mixture into a 13x9 casserole baking dish. Top with mashed potatoes.
  • Bake in oven for about 20 minutes until potato topping begins to golden up.

6 tablespoons butter
1 1/2 cups onions, chopped
1 1/2 cups carrots, grated
3 tablespoons flour
6 cups beef broth
1 tablespoon Worcestershire sauce
1 (14 ounce) can corn, drained
3/4 teaspoon oregano
salt and pepper
7 1/2 cups ground beef, cooked
6 cups make ahead mashed potatoes

Steps:

  • Assembly Directions:.
  • melt butter in a saucepan and fry the onion and carrots until golden brown.
  • Stir in the flour and cook one minute.
  • Gradually stir in beef broth and bring to a boil, stirring constantly.
  • Add the Worchestershire sauce, oregano, seasonings and corn.
  • Cover the pan.
  • Reduce heat and simmer 15 minutes.
  • Remove from heat and add cooked ground meat.
  • Mix well.
  • Freezing:.
  • Line an 8x8 baking dish with heavy foil that has been sprayed with cooking spray.
  • pour mix into baking dish and top with make ahead mashed potatoes.
  • wrap with the foil and place in gallon sized freezer bag.
  • Lable and freeze.
  • To Serve:.
  • Thaw.
  • Bake at 400 degrees for 20-30 minutes or until topping is brown and meat is heated through.
  • To heat from the frozen stage, add 10-15 minutes more baking time.

This is just a variation on chicken pot pie, but I substitute ground meat and cream of mushroom soup. I mix everything together and freeze it in a freezer bag until I am ready to bake it. Then I just thaw it out and add the crust batter.

1/8 teaspoon ground black pepper
1 cup frozen mixed vegetables, thawed

1 tablespoon sunflower oil
7 ounces bacon, chopped into lardons
2 lbs stewing beef, cut into 1in chunks
salt and pepper
8 ounces button mushrooms
8 ounces baby onions or 8 ounces shallots, peeled
2 garlic cloves, crushed
1 tablespoon brown sugar
2 1/2 cups red wine
1 2/3 cups beef broth
2 tablespoons cornstarch, loosened with 1-2 tbsp red wine or 2 tablespoons water
2 lbs floury potatoes, quartered
2 ounces unsalted butter
7 tablespoons milk

Steps:

  • (Up to a month ahead) heat the oil in a large pan. Fry the bacon lardons over a high heat for several mins until well coloured. Using a slotted spoon, remove from the pan, drain on kitchen paper and set aside.
  • Season the beef, then fry in the fat left in the pan. Once coloured, add all the remaining ingredients for the beef, except the cornstarch and bacon, and bring to a simmer. Partly cover the pan with a lid and continue to cook for a further 2-2½ hrs or until the beef is tender.
  • Once cooked, tip everything into a colander set over another pan so you can catch the sauce. Tip the contents of the colander into a large pie dish, about 11in x 9in x 2in.
  • Re-boil the sauce and check for seasoning. Thicken with the loosened cornstarch, adding a little at a time and stirring until you have the desired coating consistency. Spoon enough sauce over the beef to barely cover and loosen it, then stir. Remaining sauce can be frozen, ready to re-heat and offer separately on the day.
  • While the beef is cooling, make the mash. Boil the potatoes until tender, 15-20 mins, depending on size. Drain off the water and replace the lid. Shake the pan to break up the boiled potatoes. Add butter and milk a little at a time while mashing. Season.
  • Spoon and spread the mashed potatoes on top of the cooled beef. Once covered, the mash can be marked with a spoon, palette knife or fork for a more interesting finish. When cold, the cottage pie is ready to cover and freeze.
  • The day before serving, transfer the pie to the fridge to defrost overnight. (Or reheat from frozen on the day, see below.)
  • On the day, reheat the pie. Heat oven to 350°F If thawed, bake for 50 mins-1 hr, or until heated through, then increase heat to 400F for the final 10 mins for a golden brown topping.
  • If cooking from frozen, cover with foil, then bake for 1¼ hrs; remove foil and bake uncovered for 1¼ hrs more, then increase heat as above for the last 10 minutes.

1 (16 ounce) package spaghetti (use half)
2 tablespoons ground flax seeds
6 tablespoons water
1/3 cup grated parmesan cheese
1/2 cup finely chopped onion
2 tablespoons margarine or 2 tablespoons butter
1 (8 ounce) carton sour cream
1 lb bulk Italian sausage or 1 lb turkey sausage
1 (6 ounce) can tomato paste
1 cup water
4 ounces sliced mozzarella cheese

Steps:

  • Break spaghetti in half, and cook as directed on package until al dente; drain.
  • While spaghetti is warm, combine with flax seed, 6 tablespoons water, and Parmesan chees.
  • Use a spoon to press spaghetti into bottom and up sides of a well-greased, 10-inch pie plate.
  • Saute onion in margarine, mix with sour cream, and spread over crust.
  • At same time, brown sausage in a large skillet; drain fat.
  • Stir in tomato paste and water. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes, stirring occasionally.
  • Spoon over sour cream mixture.
  • Cover dish with foil and freeze. Put cheese slices in a 1-quart bag; attach to side of dish.
  • To prepare for serving, thaw pie and cheese, preheat over to 350 degrees. Bake pie, uncovered for 25 miutes. Arrange mozzarella slices on top; return pie to oven until cheese melts.

SHEPHERD'S PIE - MAKE-AHEAD, FREEZE AHEAD, OAMC

This recipe is the merge of two Zaar recipes. The base is close to Dana's Sloppy Joes # 32576 and well, any basic recipe for mashed potatoes will do. You might try recipe #349421 Basic Crock Pot Mashed Potatoes for an overnight jump on your Shepherd's Pie. For mothers this recipe will be a joy to have on hand in the freezer. Adjust seasonings and ingredients to suit your family and share your ideas please!

6 lbs ground beef (comes in this quantity at most wholesale clubs)
2 medium onions, chopped
3 cups catsup
4 tablespoons mustard
6 tablespoons wine vinegar
3 teaspoons salt
6 teaspoons Worcestershire sauce
3 cups frozen green beans
3 cups frozen corn
7 -10 lbs potatoes, cooked and mashed according to preferred method, try crockpot recipe suggested in notes above

Steps:

  • In large pot, brown beef with onions (I boil my beef, drain to reduce fat content, then add onions I've already sauteed).
  • Mix remaining BASE ingredients in large bowl.
  • Add beef and onions.
  • At this point I placed 1/3 of meat mixture in a cassarole dish, added 1 cup of each frozen veggie and layered on 1/3 of mashed potatoes.
  • Bake at 350F for an hour, or until heated through.
  • While dinner is baking up, I pack up the cooled remaining meat mixture dividing meat mixture left into 2 labeled gallon ziplock bags.
  • Divide remaining veggies into labled 2 qt freezer bags.
  • Divide remaining mashed potatoes into 2 labeled gallon freezer bags.
  • For convenience, I actually staple the bag of meat mixture, veggies and mashed potatoes together into 2 dinner groups to make it all easier to find in my freezer. Obviously, staple above the zip on the bag when stapling together. :-).
