SLOW COOKER BEEF BRISKET RECIPE

This slow cooker beef brisket is fall-apart tender, so juicy and flavorful. Slow Cooked beef brisket is easy and gets rave reviews every time! Perfect with mashed potatoes or as beef brisket sandwiches.

3 Tbsp Olive oil to sauté (divided)
4 lb beef brisket
2 tsp sea salt (or to taste)
1 tsp black pepper (freshly ground)
1 lb yellow onions (2 medium) (sliced into thick strips)
1 lb mushrooms (thickly sliced)
6 garlic cloves (peeled and chopped (not pressed)*)
2 cups low sodium chicken stock or beef broth
2 1/2 Tbsp Worcestershire sauce

Steps:

  • Generously season brisket with about 2 tsp salt and 1 tsp black pepper. Heat large heavy skillet or cast iron pan over high heat. Add 1 Tbsp oil and when hot, add brisket (fat side down). Sear 4-5 min per side or until browned on both sides. Transfer to slow cooker, fat side facing up.
  • In the same pan, add 1 Tbsp oil and sliced onions. Sautee 5-7 min or until onions are caramelized. Place onions over brisket. In the same pan, add more oil as needed and saute mushrooms until soft (5 min). Place mushrooms into the slow cooker and sprinkle chopped garlic over the top.
  • Combine 2 cups chicken broth with 2 1/2 Tbsp Worcestershire sauce and pour mixture over meat.
  • Cover and cook on low 7 to 8 hrs or until cooked through and easy to pull apart with forks. Turn off slow cooker and rest 15 min with the lid on. Remove and discard excess fat from the top** then pull the beef apart with forks and keep it in the slow cooker to soak up the juices which will add amazing flavor and keep meat tender. Serve beef brisket and mushrooms, spooning slow cooker juices over the top.

From the Fit-it and Forget-it Diabetic Cookbook. This recipe was submitted by Amy Marlene Jensen of Fountain, Colorado. I made a few changes and will share them with you: used a 12 oz. bottle of beer; instead of allspice I uses some cinnamon and nutmeg; used a cup of frozen pepper strips (red, yellow and green); and I added cooked pasta just to heat it in the last 20 minutes before serving. I thickened the sauce a bit too with cornstarch in water.

2 cups tomato sauce
2 tablespoons prepared mustard
2 tablespoons balsamic vinegar

1 small green bell pepper, chopped (or red)
1 medium onion, chopped

16 ounces raspberry vinaigrette (1 bottle)
1 medium onion
2 bell peppers
2 cups rice

Steps:

  • - Cut the onion and bell peppers into bite size pieces.
  • - Remove as much Fat from the meat as possible. (I like to boil it and give it to my dog).
  • - Throw everything into the crock pot on low for 8 hours or high for four.
  • - Make your rice as directed.
  • - Serve over rice.

2 tablespoons flour
1 tablespoon canola oil
2 large onions, chopped
1/4 cup light soy sauce
1/4 cup water
1/2 teaspoon ground ginger

Steps:

  • Dip roast in flour and brown on both sides in oil in a saucepan.
  • Place meat in slow cooker and top with onions.
  • Combine soy sauce, water and ginger and pour over the meat.
  • Cover and cook on high for 10 minutes.
  • Reduce heat to low and cook for 8-10 hours.

2 tablespoons ground black pepper
2 tablespoons kosher salt
1 tablespoon brown sugar
1 tablespoon chili powder
1 teaspoon ground cumin
1 ½ pounds beef brisket
¾ cup barbeque sauce
¼ cup water
1 tablespoon Worcestershire sauce
¼ teaspoon liquid smoke flavoring
½ onion, sliced into rings

Steps:

  • Mix paprika, pepper, salt, brown sugar, chili powder, and cumin together in a bowl; rub evenly over the surface of the brisket. Put brisket in a large, resealable plastic bag; refrigerate 30 minutes to overnight.
  • Stir barbeque sauce, water, Worcestershire sauce, and liquid smoke together in the bottom of a slow cooker. Lay brisket into the sauce mixture. Arrange onions atop the brisket.
  • Cook on Low until brisket is very tender, 6 to 7 hours. Rest brisket 10 minutes before slicing or shredding; serve with sauce from the slow cooker.
