NUTTY BACON CHEESE BALL

A flavorful cheese ball with pecans and bacon that goes great with crackers.

1 (8 oz) package cream cheese, softened
1/2 cup milk
2 cups sharp cheddar cheese, shredded
1/4 cup blue cheese, crumbled
1/4 cup green onions, finely minced (white part only)
1 jar diced pimento, drained
3/4 cup pecans, divided
10 slices bacon, cooked, drained, finely crumbled and divided
1/4 cup fresh parsley, minced
1 tablespoon poppy seeds
salt, to taste
black pepper, to taste

Steps:

  • Place cream cheese in mixer bowl. Attach bowl and flat beater to mixer. Turn to Speed Two and mix 1 minute. Stop and scrape bowl. Turn to Speed Two and gradually add milk, mixing until well blended about 1 minute. Stop and scrape bowl. Add cheeses, onions, pimientos, half of the bacon and half the pecans. Turn to Speed 4 and beat until well blended, about another minute. Season with salt and pepper to taste.
  • Transfer mixture to a large piece of plastic wrap. Form into a ball and wrap tightly.
  • Refrigerate (or freeze) at least 2 hours.
  • Combine the remaining bacon and remaining pecans, parsley and poppy seeds in a pie plate. Then, remove the plastic wrap and roll the cheese ball lightly in the bacon/nut mixture until evenly coated. Wrap it back up in plastic wrap and refrigerate again until ready to use.

Found this recipe in my Kitchen Aid mixer manual. I am sure it can be made just as easily without the mixer though. Cooking time is chill time.

1 cup shredded sharp cheddar cheese
1 cup shredded swiss cheese
1 (8 ounce) package light cream cheese
2 tablespoons chopped fresh chives
2 teaspoons Worcestershire sauce
1/4 teaspoon paprika
1/2 teaspoon garlic powder
1/4 cup finely chopped pecans
crackers or vegetables, for serving

Steps:

  • Place all ingredients except pecans and crackers in mixer bowl.
  • Attach bowl and flat beater to mixer.
  • Turn to speed 4 and beat about 1 minute, or until well blended.
  • On waxed paper, shape mixture into a ball.
  • Roll ball in chopped pecans.
  • Wrap in waxed paper.
  • Refrigerate until serving time.

1/2 cup milk
2 cups of shredded sharp cheddar cheese
2 cups of shredded monterey jack cheese
1/4 cup of crumbled blue cheese (1oz)
1/4 cup of finely minced green onion (white parts only)
1 (2 ounce) jar diced pimentos, undrained
10 slices bacon, cooked, drained, finely crumbled and divided
3/4 cup of finely chopped pecans, divided
salt and pepper
1/4 cup of minced parsley
1 tablespoon poppy seed

Steps:

  • Beat cream cheese and milk on low speed in large bowl until blended.
  • Add cheeses; blend on medium speed until well combined. Add green onions, pimiento, half of bacon, and half of pecans; blend on medium speed until well mixed.
  • Add salt and pepper to taste.
  • Transfer 1/2 of the mixture to a piece of plastic wrap.
  • Form into a ball; wrap tightly.
  • Repeat with remaining mixture.
  • Refrigerate until chilled--at least 2 hours.
  • Combine remaining bacon and pecans with parsley and poppy seeds in a pie plate. Remove plastic wrap from each ball. Roll each into the mixture until well coated. Rewrap each ball in plastic wrap and refrigerate until ready to use--up to 24 hours.

8 ounces cream cheese, softened
1 cup cheddar cheese (shredded)
1 cup cheddar cheese (for outside of ball)
1/3 cup mayonnaise
1/4 teaspoon pepper
1/4 teaspoon garlic salt
1/4 teaspoon onion powder
1/4 cup onion, chopped (you can use green onion or whatever you have)
1 teaspoon parsley flakes
1/3 cup bacon, crumbled and cooked

Steps:

  • Mix all items together except the additional 1 cup of cheddar cheese that you will use to roll the ball inches.
  • With a spoon pull mixture toward middle of the bowl and try to form a ball.
  • Then cover and place in refrigerator until chilled and firm.
  • After it has chilled, it will be easier to work with.
  • Roll the cheese mixture into a ball and roll in additional cup of grated cheddar cheese.
  • Roll until all sides are coated and press the cheese into the ball.

This wonderful recipe was featured during Paula's recent television appearance on Oprah's show --- I made it recently but added in 2 scant teaspoons fresh minced garlic and Tabasco, I also increased the nuts for the outside of the ball, this may be made up to 24 hours in advance, try this, you will love it! :)

1 (8 ounce) package cream cheese, softened
1/2 cup milk
2 1/4 cups shredded sharp cheddar cheese
1/4 cup crumbled blue cheese (1 ounce)

1 cup chopped pecans (Paula uses Fisher pecans)
10 slices bacon, cooked and finely crumbled

Steps:

  • Place the cream cheese and milk in a bowl; beat until well combined.
  • Add in shredded cheese, onions, pimento and HALF of each, crumbled bacon and chopped pecans; mix to combine.
  • Season with salt and black pepper.
  • Transfer the mixture to a large piece of plastic wrap, then form into a ball; cover tightly and chill a minimum of 2 hours.
  • In a pie plate mix together the remaining chopped pecans and bacon, then mix in the parsley and poppy seeds.
  • Unwrap the cheese ball then gently roll into the nut mixture.
  • Wrap again in a clean piece of plastic wrap and chill up to 24 hours.

1 (1 ounce) package hidden valley ranch dressing mix (dry)
1 cup colby-monterey jack cheese or 1 cup cheddar cheese
1 (3 ounce) bottle hormel real bacon bits (or use bacon crumbled)

Steps:

  • Take 2 packages of cream cheese (softened) and mix till slightly whipped.
  • Add packet of ranch dressing and mix till incorporated.
  • Fold in 1 cup shredded cheese.
  • Pour bacon bits in a plate or pie tin.
  • Form cream cheese mixture into a ball with your hands.
  • Roll ball in bacon bits till covered. Wrap cheese ball in plastic wrap and place in the fridge.
  • When cheese ball feels firm, remove and serve with crackers.
