APPLE FRITTERS

Steps:
- Heat a couple of inches of vegetable oil in a heavy pot or Dutch oven over medium to medium-low heat until a deep-fry thermometer inserted in the oil registers 340 degrees F.
- In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon and salt. In a separate bowl, beat the eggs with a fork, then add the milk, melted butter and vanilla. Gently fold the dry and wet ingredients together until just combined (do not over-mix). Fold in the apples, adding enough to make a very chunky batter.
- Drop heaping tablespoons of batter into the hot oil, 6 to 8 at a time. Fry until golden brown, 4 to 6 minutes. Remove and drain on paper towels. Dust generously with powdered sugar and serve warm with sausage and bacon!

- Heat 1-inch vegetable oil on moderate to medium high heat. If you wish to test the oil, add a 1-inch cube of bread to hot oil. If it turns deep golden brown in color in a count of 40, the oil is ready.
- Core apples with an apple corer. Cut into 1/4-inch thick slices across, forming apple rings. Sprinkle sliced apples with the juice of a wedge of lemon to prevent browning.
- Mix together pancake mix and water, season with nutmeg. Place confectioners' sugar in a sifter or a tea strainer. Place a piece of cardboard or brown paper sack on a work surface for draining fritters. Working in small batches of 5 to 6 slices, coat rings of apple in batter, and fry for 2 to 3 minutes, until evenly golden brown. Transfer to paper bag or towels to drain. When all the fritters are cooked, let oil cool before discarding.
- Top fritters with confectioners' sugar and transfer to a serving platter.

- In a medium bowl, mix together the flour, 1/4 cup sugar, the cinnamon, salt, baking powder and baking soda. Add the sparkling water, buttermilk and vanilla, and stir until the mixture forms a batter. Let rest for 15 minutes.
- In a small bowl, whisk together the remaining 1/2 cup sugar and the lemon zest.
- In a heavy 4 to 5-quart saucepan, heat the olive oil and vegetable oil over medium heat until a deep-fry thermometer registers 375 degrees F. (If you don't have a thermometer, a cube of bread should brown in about 3 minutes.)
- Meanwhile, peel and core the apples, then cut into 1/2-inch-thick slices. Using paper towels, blot the apple slices dry.
- Add the apple slices to the batter and toss until coated. Working in batches, fry the apples, turning occasionally, until golden brown, 2 to 3 minutes per batch. Drain on paper towels and sprinkle with the lemon sugar while still warm. Serve immediately.
"PRE GAME JITTER CARAMEL APPLE FRITTER"

- Peel, core and chop the apples.
- In large saucepan over medium heat, add the apples, brown sugar, 1/2 teaspoon cinnamon, the cider and vanilla. Bring to simmer, then strain the apples over a mixing bowl to catch the liquid. To the liquid add the sugar, remaining cinnamon, 1/2 cup of beer, club soda and melted butter. Whisk in the eggs. Sift the flours and baking soda into a large bowl. Whisk in the liquid ingredients and let the batter rest for 30 minutes. Adjust thickness.
- In a deep-fryer or heavy-bottomed pot, heat enough canola oil to come halfway up the sides of the pot, to 350 degrees F.
- Stir the apples into the batter. Using and ice cream server, scoop the batter, in batches, into the fryer and cook until golden and fluffy. Remove the fritters from the fryer to a serving platter.
- Make caramel sauce by heating 1 cup brown sugar and 1/4 cup white sugar in a small pan over medium heat. Bring the sauce to a boil, then add 1 cup of heavy cream. Lower the heat and cook until the sauce turns deep amber in color, about 10 minutes. Drizzle the caramel over the fritters, sprinkle with salt, and serve with slice of Cheddar.
NO FRY APPLE FRITTERS
Just like the deep-fried fritters without all the extra grease. They are so easy you won't believe it!

- Preheat oven to 350 degrees F (175 degrees C).
- Mix white sugar and cinnamon together in a large resealable bag; add biscuits and seal. Shake bag until biscuits are coated in cinnamon-sugar.
- Arrange half the apples and half the pecans in a round formation in an 8x8-inch pan; top with half the coated biscuits. Arrange half the remaining apples and pecans in a second layer and top with coated biscuits.
- Melt butter in a saucepan over medium heat; dissolve brown sugar and vanilla extract in the melted butter. Pour butter-sugar mixture over biscuit mixture.
- Bake in the preheated oven until biscuits are cooked through, about 35 minutes. Cool fritters in pan for 10 minutes before serving.

- Whisk together flour, cornmeal, brown sugar, baking soda, and salt in a large bowl. Whisk together buttermilk, egg, vanilla, and 3/4 cup water in another bowl. Add buttermilk mixture to flour mixture; stir to combine (batter will be lumpy).
- Heat about 4 inches oil in a medium cast-iron or heavy stockpot until it registers 360 degrees on a deep-fry thermometer. Dredge apple rings into flour, shaking off excess; then dip into batter. Working in small batches, fry, flipping once, until dark golden brown, about 2 minutes per side. Transfer to paper towels to drain.
