- PUT PIZZA SAUCE IN BOWL.
- DRAIN JUICE FROM MUSHROOMS AND ADD.
- CHOP ONION& GREEN PEPPER INTO SMALL PIECES AND ADD TO MIXTURE ALSO.
- GRATE MOZZARELLA CHEESE, LEAVE SOME FOR TOP OF BUNS.
- MIX INGREDIENTS, UNTIL FAIRLY THICK CONSISTENCY.
- SLICE TOMATOES, AND MEAT IF DESIRED.
- PUT PIZZA BUN MIXTURE FROM BOWL ON BUNS OR BREAD, TOP WITH TOMATOES, MEAT, AND MOZZARELLA CHEESE.
- PLACE BUNS ON COOKIE SHEET AND BAKE FOR 15 MINUTES OR SO UNTIL COOKED, THEN BROIL FOR A FEW MINUTES UNTIL CHEESE IS BROWN.

HOMEMADE PIZZA BUNS
These are just like the ones they sell in the grocery stores. Why pay too much for them, when you can make them easily at home for a fraction of the cost?

Steps:
- For the dough: In a large bowl or the bowl of a stand mixer fitted with the kneading hook, mix together 2 cups of the flour, the sugar, salt and instant yeast. In a measuring cup, combine the warm water with the oil. Add the water mixture to the dry ingredients and mix to combine. Knead by hand or with the mixer, add more flour in small increments, as needed, until the dough comes together into a smooth dough. It shouldn't stick to your hands or be dry and crumbly. Grease a bowl and place the dough ball into the bowl. Cover with plastic wrap and let rise until doubled, about 30 - 45 minutes, depending on how warm your kitchen is.
- Prepare two baking sheets by lining each with a sheet of parchment paper. Set aside.
- Remove the dough to a floured cutting board. Cut the dough evenly in half. Cut each half in half again. Cut each piece in half again and then in half again, to make a total of 16 roughly equal sized pieces.
- Take a piece of dough. Form it in to a rough ball, then stretch in to a circle about 4-5 inches in diameter. (You don't need to stretch them completely at this point. Once the dough has rested a few minutes on the baking sheet, they will be easier to shape, so you will be going back and stretching them out a second time later.) Place the dough circle onto the prepared baking sheet. Repeat with each piece of dough, placing 8 on each on the prepared sheets (you can place them fairly close together as they don't spread much, but don't allow them to actually touch each other). Go back to the first pieces you formed and stretch them a little more, as needed.
- With all your rolled dough on the baking sheets, using a teaspoon from your cutlery drawer, top each piece of dough with two heaping teaspoon of pizza sauce, spreading it over the top, going as far to the edges as you can without it going over the sides. Top with a generous amount of shredded cheddar cheese. Repeat with all the buns. Let stand 20 minutes, while you preheat the oven.
- With racks in the upper and lower third of your oven, preheat oven to 375° F. with the rack in the centre of the oven. After buns have stood for 20 minutes or so (or until they look a little puffy around the outside edges), bake in preheated for 20-25 minutes , switching the pans from top to bottom half way through baking. Cook until well browned. Remove from oven and allow to cool on baking sheet for about 5 minutes, then remove to a cooling rack to cool completely. Enjoy immediately or cover and refrigerate. - Freezing: These buns freeze really well. Freeze them on baking sheet and then transfer to a freezer bag. To enjoy straight from the freezer, no need to thaw. Just place the frozen buns on a baking sheet and warm in a preheated 400° oven for 7 or 8 minutes.

- Roll out the Pizza Dough on a floured surface until it's a large rectangle about 8 inches by 12 inches. Smear with a little olive oil and sprinkle with salt. Spread the surface with about 1/2 cup of the Marinara Sauce, then sprinkle with the Parmesan. Lay the mozzarella slices over the sauce. Smear the pesto over the cheese. Lay on the pepperoni, olives and bell peppers.
- Unwrap the string cheese and lay it in a line at the top of the dough. Roll it towards you so that the string cheese ends up in the middle of the roll of dough; pinch the seam closed. Slice into 1-inch pieces and place them in a 10-inch cast-iron skillet. Allow the rolls to rise for 20 minutes.
- Preheat the oven to 400 degrees F.
- Bake until the bread is golden and the fillings are bubbly, about 15 minutes. Serve immediately with warm Marinara Sauce.
- Sprinkle the yeast over 3/4 cup warm (not lukewarm) water in a bowl and leave to sit for a bit.
- In a mixer, add the flour and salt and, with the mixer running on low speed (with the paddle attachment), slowly pour in the olive oil and keep going until it's mixed through. Next, pour in the yeast/water mixture and mix until just combined.
- Coat a separate mixing bowl with a light drizzle of olive oil, tip the dough in and form it into a ball. Toss to coat the dough ball in the olive oil, then cover the bowl tightly with plastic wrap and allow the dough to rise for at least 1 hour.
- Add a tablespoon or so of olive oil to a hot pan over medium-high heat, throw in the garlic and onion and give them a stir. Add the wine (or chicken broth), whisking to deglaze the bottom of the skillet. Cook until the liquid reduces by half.
- Add the crushed tomatoes and stir to combine. Add salt and pepper to taste and a pinch of sugar. Reduce the heat to low and simmer for 30 minutes.
- Toward the end of the cooking process, chop up fresh parsley and basil and add it to the sauce to taste, stirring to combine.

These bite-size pizza rolls are like your favorite freezer aisle after-school snack but even better (yeah, we said it). We stuffed ours with crumbled Italian sausage, pepperoni, pizza sauce and, of course, plenty of cheese, then fried them so their wonton skin wrappers get super crisp. We dare you to compare.

- Heat the olive oil in a large nonstick saute pan over medium-high heat. Add the onion and a pinch of salt and cook, stirring occasionally, until lightly browned, about 5 minutes. Add the sausage and cook, using the back of a wooden spoon to crumble into fine pieces, until lightly browned and cooked through, about 5 minutes. Stir in the pepperoni, pizza sauce, oregano, granulated garlic and pepper flakes. Remove to a large bowl and allow to cool slightly. Fold in the mozzarella and season to taste with additional salt if needed.
- Put 1 wonton wrapper down on a flat work surface. Put a slightly heaping teaspoon of filling in the middle of the upper half of the wrapper, then put a slightly heaping teaspoon of filling in the middle of the bottom half, making sure that the fillings are evenly spaced apart. Brush egg wash all around the fillings and on the edges of the wrapper. Fold both sides of the wrapper over the fillings letter-fold style, overlapping them and being careful not to press down on the fillings. Turn the wrapper over so that the seal is on the bottom, then use your fingers to gently press down in between the fillings and around the edges. Use a sharp knife to cut the wrapper in half between the fillings. Use your fingers to tightly seal both ends of the pizza rolls. Put the filled pizza rolls on a large baking sheet. Repeat this process with the remaining wrappers and filling.
- Fill a Dutch oven halfway with canola oil and heat to 350 degrees F. Set a cooling rack over a baking sheet. Fry the pizza rolls in batches until golden brown and crispy, about 4 minutes. Transfer to the cooling rack. Once all the pizza rolls are fried, move them to a large serving platter and serve immediately.
PIZZA BUNS
These are nice to serve for a snack. My Mom used to serve them for her Bridge Group. I have served them with a bowl of soup for supper. If you like pizza, I think you will like these. This mixture can be kept in the fridge for several days and spread on buns when you are ready to use.

- Slice bacon into small pieces and then brown it.
- Drain fat from bacon.

FREEZE-AHEAD PEPPERONI PIZZA BUNS
Steps:
- Heat oven to 375ºF.
- Unroll pizza dough onto lightly floured cutting board; roll out into 14x12-inch rectangle. Top with mozzarella and pepperoni.
- Mix pizza sauce and garlic powder until blended; drizzle over pepperoni.
- Roll up dough rectangle, starting at one long side of dough. Cut into 16 pinwheels; place, cut sides down, in 8-inch square pan sprayed with cooking spray. Sprinkle with Parmesan.
- Bake 25 min. or until golden brown; cool completely.
- Separate pizza buns; place each in separate freezerweight resealable plastic bag. Seal bags. Freeze up to 1 month.
- Remove pizza bun from bag just before serving; place on microwaveable plate. Microwave on HIGH 30 sec. or just until warmed.

- Stir together 2 cups flour and the yeast. In a separate bowl, heat milk, water, oil, sugar and salt to lukewarm in microwave. Add all at once to the flour mixture, and beat until smooth, about 3 minutes.
- Mix in enough flour to make a soft dough, 2 to 3 cups. Mix well. Dust a flat surface with flour, turn dough out onto floured surface, and let rest under bowl for about 10 minutes.
