This is MY recipe and method for preparing hot wings for a party! Prep and clean up is a breeze! I always get RAVE reviews! Especially from the clean up crew! lol I have changed this recipe to include instructions on fresh OR frozen wings. Please let me know what you think. Update: This weekend made these again! Seasoned with garlic powder and cajun seasoning and grilled them starting with a preheated grill set to high. Oiled grill racks and seared each side of the chicken, then cooked over low to perfectly done and brown, crispy perfection. Removed from grill and tossed in sauce! Again, no messy pan to clean! :)

5 lbs chicken wings
2 tablespoons cajun seasoning, Tony Cachere's is really good
1 tablespoon garlic powder
12 ounces Frank's red hot sauce
1/2 cup butter or 1/2 cup margarine
2 tablespoons apple cider vinegar
celery rib (optional)
ranch dressing (optional)

Steps:

  • IF USING FROZEN WINGS: I buy IQF - individually quick frozen- chicken wings that come in a bag and have already been separated into two sections and tips removed. If using FROZEN wings DO NOT THAW just rinse chicken in a large strainer to remove any ice crystals.
  • IF USING FRESH/THAWED NOT FROZEN WINGS: Rinse chicken wings and follow directions starting at #3) BUT you may need to reduce your cooking time. I have not done them this way so I dont know how long they will take. Please watch them so they dont burn and do let me know how long they take to cook. Thanks!
  • Pat wings dry with some paper towels. They do not have to be perfectly dry-just get most of the water off.
  • Place wings in a large disposable foil roasting pan that has been sprayed or oiled well. I also take some foil and very loosely crumple it into balls and fill the pan so the wings can sit on the top of those and everything can drain off.
  • Season wings with cajun seasoning and garlic powder. Toss to coat.
  • Bake at 375°F until browned -about 30-40 minutes, using tongs flip each wing piece so that the browned side is down. Bake another 30 minutes or until chicken is browned and crispy all over. If you prefer them nice and crispy make sure to use a pan with a rack so that any liquid and grease can drain off.
  • Sauce: In microwave safe bowl, combine hot sauce, butter, vinegar and more garlic powder if desired.
  • Heat for about 2 minutes of until butter is melted and sauce is hot.
  • To Serve: Depending on the formailty of your party- lol- if you are having hot wings it isnt too formal is it?- you can serve directly from the foil pan OR place wings on a platter.
  • I like my wings to stay crispy after they are drenched in the sauce SO I serve them with the sauce on the side and allow guests to place the wings in a bowl and add sauce as desired. Some have them swimming and others- like me- dip each wing just before it is eaten. The crispiest!

24 chicken wing parts (12 wings separated into 2 pieces)
One 12-ounce bottle cayenne hot pepper sauce, such as Frank's
1 stick butter
Several dashes Worcestershire sauce
Several dashes hot sauce, such as Tabasco
Blue cheese dip, for serving
Celery sticks, for serving

Steps:

  • Preheat the oven to 325 degrees F. Heat 3 inches of canola oil in a heavy pot to 375 degrees F.
  • Add half the chicken wing parts to the oil and fry them until they're golden brown and fully cooked, 5 to 7 minutes. Remove and drain on paper towels. Repeat with the other half of the wing parts. In a saucepan, heat the cayenne sauce and butter over medium-low heat. Add the Worcestershire and hot sauce. Let it bubble up, and then turn off the heat. Place the wings in an ovenproof dish and pour the hot sauce over the top. Toss to coat, and then bake in the oven for 15 minutes.
  • Serve with blue cheese dip, celery sticks... and your favorite cold, fizzy beverage.

10 to 12 chicken drumettes
1 tablespoon Cajun pepper, plus more for seasoning wings
1 bottle chipotle pepper sauce
Honey

Steps:

  • Preheat a grill to medium-high.
  • Season the wings with Cajun pepper. In a medium bowl, combine the chipotle pepper sauce with 1 tablespoon Cajun pepper, and honey, to taste. Place the wings on the grill and as you cook them, turn them and brush each time with the pepper sauce mixture. Make sure the wings cook long enough on each side so they get crispy around the edges.
  • Remove the wings from the grill and brush again with the pepper sauce mixture before serving.

I use to work at this little restaurant in the mid west that made the most delicious hot sauce for wings. Here is my version. Please treat the insanity sauce as you would a hot pepper. This sauce is absolutly delicous in wraps with chicken tenders.

2 lbs chicken wings
oil (for frying) or shortening (for frying)
1/4 cup butter (do not substitute)
1/2 cup Frank's red hot sauce
1/2 teaspoon dave's insanity hot sauce (I would start with this and add more to your liking)
1/4 teaspoon fresh black pepper

Steps:

  • Preheat the oil/shortening to 375°F Add wings to oil being careful not to crowd the pan. stir carefully to make sure the wings do stick together periodically. Cook for 7-10 minutes depending on the size of the wings. Use your Judgment.
  • In a sauce pan melt the butter with Frank's hot sauce.
  • Stirring constantly to make sure that the butter doesn't separate from the sauce add black pepper and Dave's insanity sauce.
  • Drain wings in metal colander if you have one and toss with sauce in a zip lock bag or in a large bowl.
  • Serve with your favorite dressing.
  • Enjoy!

I was so tired of soggy skinned hot wings or too much vinegar in commercial hot wings, so I made this recipe up. I serve it with ranch dressing and sliced fresh veggies. Great to take to parties.

3 lbs chicken wings
1 (2 ounce) bottle Tabasco sauce (or your preferred bottled hot sauce)
1/2 cup butter or 1/2 cup margarine
2 teaspoons barbecue sauce
cooking oil (for deep frying)

Steps:

  • Cut wings into pieces discarding tips.
  • Wash and pat dry with paper towels.
  • Pre-heat cooking oil to 350 degrees.
  • Slowly add 1/2 of the wing pieces to hot oil; fry until golden brown.
  • In the meantime, in a large pan, melt the butter on a very low heat.
  • Add bottled hot sauce and BBQ sauce.
  • Keep sauce warm.
  • Add the cooked wings to the sauce.
  • Stir to coat.

"CALL THE FIRE DEPARTMENT" HOT WINGS



My family loves hot wings! After several attempts of trying to re-create the restaurant hot wings, I finally came up with this recipe which my whole family seems to approve. My husband thinks they could be hotter, but then again, he adds red pepper flakes to most of his food. The kids and I think they are hot enough, but add even more Tabasco if you wish!

1 cup flour
1/2 teaspoon cayenne pepper
1/2 teaspoon paprika

  • While wings are baking, combine butter, Frank's hot sauce, and Tabasco in a plastic bowl with lid.
  • Once wings are finished baking, place 8-10 wings in the bowl.
  • Cover and shake to coat.
  • Serve with Ranch Dressing!

Make your own "fresher" version of wing sauce using simple ingredients. This recipe is customizable to suit individual tastes. You can make it mild or hot. You will arrive at a perfect balance - for you - and will really love the results! The quantities of ingredients listed are a guide and not an absolute. Vary amounts according to taste for each step, But start with the butter first!

6 -16 ounces Frank's red hot sauce (any vinegar-based Louisiana style red pepper sauce will work)
8 ounces butter (unsalted preferred, because you may want less salt in the mix)
1 tablespoon sugar
1 tablespoon salt
1/2 tablespoon garlic powder (not garlic salt)
1 dash Worcestershire sauce

Steps:

  • 1. Melt the butter in a 1 quart sauce pan. For 2 people, I generally use 2 sticks butter (8 oz) - melt the butter before adding anything else. This makes enough so you can coat the chicken while cooking and have some left over to dip with while eating.
  • 2. Now add your hot sauce. Try to use fresh sauce as old sauce might not result in a smooth mix. How much? I recommend starting with 40% of your butter amount. That would be "very mild". Stir it in well. Taste it. Is it not "hot" enough? Add some more until it's warm enough for you. If you make it too hot, then you'll be adding more butter.
  • 3. Add maybe 1 Tbsp sugar. This is only to offset the vinegar taste of the pepper sauce. If you can taste "sweet" then you added too much. All you are doing here is taking the edge off the vinegar. If you like the vinegar then don't add sugar. Remember, this is your custom made sauce.
  • 4. Now, add just enough salt to bring up the flavors of the pepper sauce. If you taste "salt" then you added too much. All you are doing is bringing up the flavors and are not wanting to make it taste salty.
  • 5. Lastly, add about 1/2 Tbsp garlic powder. Stir it all well. Taste it. Does it need a little more? You decide.
  • 6. add a dash - 4-6 drops Worcestershire sauce without concerning yourself on how to pronounce it.
  • You can now build you own "Buffalo style" sauce and use it on legs, wings etc. You can use Frank's, Texas Pete, or whatever. Your flavors and proportions will vary with which pepper sauce you use at the time. If you use a pre-made "wing" sauce, realize you will be using much less butter and will really be losing some cost and originality advantage.

2 teaspoons neely's dry rub seasonings
2 teaspoons kosher salt
1/4 teaspoon cayenne pepper
30 chicken wings, cut at joint, washed and dried
1 -2 tablespoon lemon-pepper seasoning

1 minced garlic clove
1/2 cup hot sauce (recommend ( Texas Pete's)
2 tablespoons brown sugar

1/4 teaspoon Worcestershire sauce

Steps:

  • For the seasoning:.
  • Mix the dry rub, salt, and cayenne together in a small bowl.
  • Preheat deep-fryer with peanut oil to 350 degrees F.
  • For the wings:.
  • Add the wings to a large mixing bowl and season with the lemon-pepper seasoning and toss to coat. Allow to sit for a few minutes, so flavors can permeate into the chicken.
  • Add the wings to the deep-fryer and fry until cooked through and golden and crisp, 12 to 15 minutes. You may need to do this in batches.
  • Meanwhile, while wings are frying, melt butter in small saucepan over medium-low heat with the garlic. Transfer to a large bowl and whisk in the hot sauce, brown sugar, vinegar, and Worcestershire sauce until combined.
  • Remove wings from fryer and drain on a paper towel lined sheet tray. Immediately sprinkle with the seasoning.
  • Add fried wings to the large bowl of sauce and toss until well combined and wings are well coated. Serve immediately after tossing the wings with the sauce. Serve with the blue cheese dipping sauce and celery and carrot sticks.

This is the BEST recipe for hot wings and I have tried many others over the years ---I make these quite often for my parties and everyone loves them --- you may double all ingredients if desired, if you are doubling the ingredients, I suggest to just start with 2 tablespoons hot sauce such as Louisiana hot sauce then add more to reach the desired heat --- I have even prepared these on the grill instead of the broiler and then finished cooking them in the oven with the sauce, another idea is you may cook the wings hours in advance or even a day ahead cool slightly and just leave them in the fridge overnight, then the following day just coat them in the hot sauce and then bake them in the oven, you may even prepare the hot sauce a day ahead in fact it tastes even better if prepared in advance just refrigerate overnight, preparing the wings and the sauce in advance is a great time saver if you are making them for a crowd,

  • Set oven to broil.
  • Prepare the wings on a shallow cookie sheet that is lined with foil, and spray with a non-stick cooking spray, or prepare a broiler pan.
  • Arrange the wings evenly in a single layer.
  • Place under the broiler until lightly browned (watch closely to not burn the wings) set wings aside.
  • In a saucepan combine all sauce ingredients, and bring to a boil; reduce heat and simmer for 15-20 minutes (adjust the hot pepper sauce to suit taste).
  • Up to this point, all above can all be prepared a day in advance and refrigerated.
  • Set oven to 375 degrees F.
  • Using long tongs, dip each wing in the hot sauce, and place evenly on a greased baking sheet.
  • Bake for 35-40 minutes (basting with remaining sauce during cooking).
  • To crisp up the wings, place under broiler for a couple of minutes.
