Yield Makes 4 servings

Number Of Ingredients 13

1 lb boneless, skinless chicken breast, cut into 1 inch cubes
2 tblsp extra virgin olive oil
Salt
Fresh Ground Pepper
1 tblsp garlic, minced
1/4 cup dry white wine
1/2 cup low sodium chicken broth
2 cups heavy whipping cream
4 tblsp no salt butter
4 oz sun-dried tomatoes, hydrated and julienned
4 oz frozen chopped spinach, thawed
12 oz dried farfalle pasta
1 cup Parmesan cheese, freshly grated

Steps:

  • Prepare pasta according to the directions on the box. Drain and reserve 1 cup pasta water. In a 12 inch skillet, heat oil under medium heat. Season chicken well with salt and pepper. Add chicken slowly to the skillet. Saute chicken for about 5 minutes or until no longer pink. Remove chicken from skillet, set aside and tent with foil to keep warm. Place uncleaned skillet back under medium heat. Add garlic and cook for about 30 seconds or until garlic is aromatic. Remove skillet from heat and deglaze the skillet by slowly adding the wine. Place skillet back on heat until wine reduces completely. Add chicken broth. Using a whisk, scrap up brown bits at the bottom of the skillet. Once the broth reduces by half, add the whipping cream, 2 tablespoons of butter and about 1/4 cup of Parmesan cheese. Reduce heat to low and cook for about 5-7 minutes, stirring occasionally. (If sauce begins to boil over, just remove the skillet from the heat) Add chicken back to the skillet and stir. Add cooked pasta to the skillet and combine with the sauce and chicken. Increase the heat to medium. If the sauce gets too thick, add some of the reserved pasta water. Stir in the thawed spinach and sun-dried tomatoes. Add the remaining 2 tablespoons of butter and toss with the remaining Parmesan cheese.

1 tablespoon olive oil
1 lb boneless skinless chicken breast, cut into strips
2 onions, finely diced
2 ounces sun-dried tomatoes, julienned
1/2 teaspoon basil
1/4 teaspoon thyme
1/4 teaspoon oregano
1 tablespoon minced garlic
3 cups whipping cream (35%)
salt and pepper
1/2 cup grated parmesan cheese
1 lb farfalle pasta or 1 lb bow tie pasta

Steps:

  • In large skillet, heat olive oil over medium high heat.
  • Add the chicken, onions, sundried tomatoes, basil, thyme, oregano and garlic.
  • Sauté until chicken is almost cooked.
  • Add the whipping cream and parmesan cheese.
  • Continue to simmer until slightly thickened.
  • Add salt and pepper to taste.
  • In large pot, bring water to boil and cook pasta until al dente.
  • Drain.
  • Toss the pasta with the sauce.
  • Place in individual pasta bowls.
  • Serve with freshly grated parmesan cheese and black pepper.

1 lb farfalle pasta or 1 lb spiral pasta
3 spring onions
2 ounces sun-dried tomatoes, cut into strips
1 lb english spinach, stalks trimmed and cut into strips
4 tablespoons toasted pine nuts
1 tablespoon fresh oregano, chopped
1/4 cup olive oil
1/2 teaspoon crushed red pepper flakes
1 garlic clove, crushed
salt and pepper, to taste

Steps:

  • Cook pasta and rinse in cold water. Transfer to a large salad bowl.
  • Trim spring onions and chop finely. Add to pasta with tomatoes, spinach, pine nuts, oregano.
  • To make dressing: combine oil, red pepper, garlic, salt and pepper in a small, screw-top jar and shake until combined. Pour over salad, toss and serve.

A rich and creamy blend of bow-tie pasta, seasoned chicken, tangy sundried tomatoes and artichoke hearts. I love making this dish for company and I get many requests for the recipe. It's a one pot-dish that uses ingredients that pleases many palates. So pair it with a salad and you're good to go! I sometimes make this dish ahead of time and refridgerate it overnight. it tastes even better when the flavors are given at least a couple hours to develop. So reheat and relax!

3/4 lb boneless skinless chicken breast, cut into bite-size pieces
1 1/2 teaspoons salt
3/4 teaspoon pepper
olive oil
3 -5 garlic cloves, smashed
1 large onion, finely chopped
1 1/2 cups sun-dried tomatoes, roughly chopped
1 teaspoon red pepper flakes (more if desired)
1/4 teaspoon dried oregano
1/4 teaspoon dried basil
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 (16 ounce) can artichoke hearts, chopped in half
1/2 lemon
1/2 cup white wine
1 cup sliced mushrooms
3/4-1 cup chicken broth
1 cup heavy cream
1/2 cup parmesan cheese
1/2 cup fresh Italian parsley, chopped
1/2 cup basil, chopped (for garnish) (optional)
1 lb farfalle pasta, cooked al dente (bow tie, or whatever kind you prefer)

Steps:

  • Season the cut-up chicken pieces with the salt and pepper.
  • Heat 4 tbsp of olive oil on low, in a saute pan (big enough to accommodate the entire finished product of chicken and pasta) and throw in the smashed garlic cloves, leave for 3-4 minutes (this flavors the oil).
  • Raise the heat to med-high and add the chicken to the pan (at this point you may remove/discard the garlic, but I like to leave it in). Leave the meat to sear on one side 3-4 min and flip chicken pieces over, allow to cook for 3 min more. If the pan is too crowded move cooked chicken to a plate. Leave chicken to one side until ready to add in final stages.
  • Add 2 tbsp olive oil to the pan and heat to medium heat. Add onions and saute until translucent, about 3-4 minute Add the sundried tomatoes and saute, careful not to burn for 2-3 minute.
  • Return chicken to pan with drippings. Bring chicken to temp for about 5 minute and add seasoning mixture, stir to coat.
  • Add the artichoke hearts and fold to combine. Be careful not to break up hearts.
  • Squeeze lemon juice over chicken and add white wine. Simmer for 3 minutes. Add the sliced mushrooms, gently stir and let soften, about 3 minutes more.
  • Add the chicken broth and carefully stir the mixture.
  • Add the cooked pasta to the chicken and toss carefully.
  • Add the heavy cream and simmer on low for 5 minutes. Remove from heat and sprinkle generously with Parmesan cheese, parsley and basil. Serve with extra Parmesan cheese. Enjoy!

6 heirloom tomatoes, cored, chopped (about 5 cups)
2 cups shredded cooked chicken (from 1/2 rotisserie chicken)
1/2 cup basil leaves, thinly sliced
2 tablespoons fresh marjoram, chopped
3 cups Baby Spinach
3 ounces soft fresh goat cheese, crumbled

Steps:

  • Heat oil in heavy large skillet over mediumhigh heat.
  • Add onions; sprinkle with salt and cook until beginning to brown, stirring often, about 8 minutes.
  • Reduce heat to medium-low. Stir in vinegar and sugar; cook until onions are browned, stirring often, about 15 minutes.
  • Transfer caramelized onions to bowl; reserve skillet.
  • Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain.
  • Add wine to reserved skillet. Boil until reduced to 1/2 cup, 3 minutes.
  • Add pasta, onions, broth, and next 4 ingredients. Season with salt and pepper. Stir over medium heat to warm through, about 3 minutes.
