A delicious and easy 20-minute meal you can throw together with pantry ingredients and any vegetables you like.

Provided by Katie Workman

Categories     Main Course

Time 20m

Number Of Ingredients 10

8 ounces angel hair or other skinny pasta (or udon noodles )
½ cup creamy peanut butter
¼ cup hot water (or more as needed)
2 tablespoons soy sauce
2 tablespoons lime juice
½ teaspoon chili garlic paste
1 tablespoon brown sugar or honey
½ teaspoon minced garlic
½ cup slivered radishes (julienned, or cut into matchsticks)
½ cup sliced scallions (white and green parts)

Steps:

  • Cook pasta according to package directions.
  • While the noodles are cooking, put the peanut butter, water, soy sauce, lime juice, chili paste, brown sugar or honey, and garlic in a food processor or blender and process until smooth.
  • When the pasta is cooked, drain it and return the pasta to the pot. Add the sauce and toss until well coated. If you need to add more hot water to loosen the sauce so it distributes easily over the noodles, add more.
  • Turn the pasta into a shallow serving bowl and top with the radishes and scallions. Toss and serve warm.

CHINESE GLASS NOODLES WITH PEANUT SAUCE

Chinese Glass Noodles With Peanut Sauce image

"Glass" or "cellophane" noodles are made from mung beans, and are so called because they become almost transparent when cooked. The Chinese name for them is "sai fun" and you can find them in an Asian specialty grocery, or in the international section of a well-stocked traditional grocery. Most of the time spent here is passive, for soaking and then refrigerating the noodles.

Provided by Susiecat too

Categories     Beans

Time 2h15m

Yield 4-6 serving(s)

Number Of Ingredients 10

1 (4 ounce) package sai-fun noodles (mung bean noodles)
2 cups soup stock (veggie or chicken)
2 tablespoons peanut butter
4 tablespoons hot tap water
3 tablespoons light soy sauce
1 pinch sugar
1/2 teaspoon sesame oil
garlic-red chili paste, to taste
green onion, chopped
1 tablespoon dry roasted peanuts, chopped

Steps:

  • Soak the noodles for 1 hour and drain.
  • Place in a saucepan with the soup stock and simmer until they are tender but not mushy, about 10 minutes.
  • Drain the stock from the noodles, reserving it for another use. Place the noodles on a tray and refrigerate them for one hour.
  • Mix the sauce by putting the peanut butter in a 2-cup measuring glass and adding the hot water. Stir with a fork until it is the consistency of whipping cream.
  • Add the remaining ingredients for the sauce and mix with the chilled noodles.
  • Place the noodles on a serving dish and garnish with the green onions and peanuts.

THAI NOODLES WITH PEANUT SAUCE

Thai Noodles With Peanut Sauce image

This is a "full-bodied" set of flavors that come together deliciously! My family loves this for dinner and we have it in our "recipe juke box" as a regular dinner :-) I've made it a bit spicy here, so cut back on the red pepper, ginger and garlic if you want a more mild flavor. Great (and beautiful) served with steamed broccoli. Time saver: I often put together the sauce ingredients (first ingredient through garlic) together in the morning in a two cup measuring cup and stir so that my before meal prep is super simple. I tell myself it gives a chance for the flavors to come together better anyway! ;-)
