This is a delicious twist on vegetable lasagna - you do not have to pre-boil the noodles! This version of a traditional lasagna will not weigh you down and you won't mind eating the leftovers either.

8 lasagna noodles (1/2 of a 1 lb package)
1 (15 ounce) container small curd low fat cottage cheese
1/2 cup grated parmesan cheese
1 teaspoon dried basil
2 eggs
2 tablespoons olive oil
2 garlic cloves, minced
1 cup chopped onion
1 cup frozen broccoli (thawed and drained)
1 cup zucchini, chopped
1 cup green pepper, chopped
2 (26 ounce) jars spaghetti sauce, any flavor
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 350.
  • In a large bowl combine cottage cheese, Parmesan, eggs and basil; mix well.
  • Heat olive oil over medium heat; saute garlic and onions for 3 minutes, stirring occasionally.
  • Add rest of vegetables and cook until tender, about 5 minutes.
  • Add veggies into the cottage cheese mixture and mix well.
  • Spread 1 c of pasta sauce in bottom of a 13x9" baking dish and spread evenly.
  • Layer with half each: uncooked lasagna noodles, cottage cheese mixture, remaining
  • pasta sauce and mozzarella.
  • Repeat layering.
  • Cover tighlty with aluminum foil.
  • Bake 1 hour.
  • Uncover; bake an additional 15 minutes or until hot and bubbly.
  • Let stand 15 minutes before serving.

EASY ROASTED VEGETABLE LASAGNA WITH NO BOIL NOODLES



Easy Roasted Vegetable Lasagna with No Boil Noodles image

Use any mix of veggies you like, just have them pre-roasted ahead of time.

Number Of Ingredients 9

at least 4 cups or more, ( I would go with more just in case and depending on the size of your lasagna) of a mix of roasted veggies, any combination you like cut into bite sized pieces, roasted at 425 until slightly golden, refer to my post
2 zucchini sliced thin, kept raw
no boil pasta sheets, enough for 3 layers to your lasagna either for an 8x8 pan or a 9x13
1 lb. good ricotta, drained well of all liquid
2 eggs
roughly 1lb. each of fresh and shredded mozzarella ( you might not use it all).
marinara sauce, good quality or homemade
grated pecorino or parmigiano cheese
fresh chopped parsley and pine nuts for garnish

Steps:

  • Dip each pasta sheet into warm water to slightly soften, one by one.
  • Mix ricotta with the 2 eggs and a handful of grated cheese, salt and pepper. Combine til incorporated.
  • Butter casserole dish and ladle sauce all over the bottom.
  • Add enough noodles to cover the bottom of the pan.
  • Ladle sauce all over noodles.
  • Spread mixed veggies all over the noodles.
  • Sprinkle with grated cheese, shredded cheese and dot it with torn, fresh mozzarella.
  • Layer the zucchini strips to cover first layer.
  • Add more sauce on top of zucchini.
  • Spread ricotta mixture all over, you probably won't use all of it but spread a nice amount because this is the only layer you will do it on.
  • Repeat with all the other ingredients until you reach the top.
  • Spoon sauce all over, add shredded cheese and slices of fresh mozzarella, chopped parsley and pine nuts.
  • Drizzle with olive oil and place foil over pan.
  • Bake at 350 for 30 minutes.
  • Take foil off and bake for 10 more minutes. Sides should be bubbling.
  • Place under the broiler for a few seconds to get the cheese extra golden.
  • Let it rest for ½ hour before cutting.

5 tablespoons butter, divided
16 ounces sliced mushrooms
3/4 cup onion, finely chopped
3 garlic cloves, minced
10 ounces frozen chopped spinach, thawed, squeezed dry
1/2 teaspoon pepper
1/2 teaspoon salt
10 lasagna noodles
1/4 cup flour
1 1/2 cups chicken broth or 1 1/2 cups vegetable broth
1 cup 2% low-fat milk
1 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 lb havarti cheese, shredded
7 ounces gouda cheese, shredded

Steps:

  • Melt 1 tablespoon butter in a large sauté pan over medium-high heat; add the mushrooms and cook until golden, about 5 minutes.
  • Add the onions and garlic, and sauté for 3 minutes.
  • Add the drained, chopped spinach, salt, and pepper, stir well and sauté for an additional 5 minutes.
  • Over medium heat melt 4 tablespoons butter in a saucepan; add the flour and cook, stirring constantly to keep it from browning.
  • Gradually add the chicken or vegetable broth and milk; cook, stirring occasionally, until smooth and thickened, about 5 minutes.
  • As soon as sauce begins to boil, remove it from the heat and add thyme and basil.
  • Combine the shredded cheeses together until well mixed.
  • Pour 1/2 cup of the sauce into the bottom of a 9x13-inch baking pan.
  • Lay 5 noodles in a single layer in the pan. (Four the long way and one broken-off one the short way.).
  • Layer with 1/2 each of the mushroom/spinach mixture and shredded cheeses, then coat with 1/2 of the sauce.
  • Repeat the process, ending with the sauce.
  • Cover the pan tightly with foil and bake at 350F for 45 minutes, then remove foil and bake 15 minutes longer.
  • Remove from oven and let sit a few minutes before serving.

Adapted the Martha Gooch package of regular lasagna. My sister says lasagna packaged as "no-boil" is a scam! :lol: I make the meat sauce by frying up 1/2 - 1 pound of meat (usually gound turkey), pouring a 26 oz can of pasta sauce in it, and heating it through.

1/2 cup parmesan cheese, grated

1 (26 ounce) jar pasta sauce

  • Preheat oven to 350°F.
  • Combine ricotta, parmesan, and eggs and mix well.
  • In a 9x13 dish, spread about 1/3 of the sauce. (About 1 cup.).
  • Layer with half each of the uncooked lasagna noodles, ricotta mixture, remaining pasta sauce, and mozarella.
  • Repeat layering.
  • Cover tightly with alumninum foil and bake covered for 45 minutes.
  • Uncover and bake an additional 15 minutes.
  • Let stand 10 minutes before serving.

This is a really good basic lasagna recipe. It's based on one I found somewhere, but I've tweaked it quite a bit to suit my own tastes. I like it as written with italian sausage, but you can substitute ground beef if you must.

1 1/4 lbs Italian sausage, casings removed (I use spicy)
1 (28 ounce) jar spaghetti sauce, of your choice
1 (14 1/2 ounce) can diced tomatoes
1 1/2 cups water
1 garlic clove, chopped
1 teaspoon italian seasoning
12 ounces ricotta cheese (about 3/4 small container)
3 cups grated mozzarella cheese
1/2 cup grated parmesan cheese
2 eggs
1 tablespoon parsley
1/2 teaspoon ground black pepper
1 (8 ounce) package lasagna noodles, uncooked

Steps:

  • Heat oven to 350.
  • In large pan, brown italian sausage; drain.
  • Add spaghetti sauce, diced tomatoes, water, garlic and italian seasoning. Cover and simmer for 10-15 minutes.
  • In medium bowl, combine ricotta, 2 cups of the mozzarella, parmesan, eggs, parsley and pepper. Mix well.
  • Pour about 1 cup of the sauce on bottom of 9x13 pan.
  • Arrange 3 uncooked lasagna noodles over sauce; cover with about 1 cup sauce.
  • Spread 1/2 the cheese filling over sauce.
  • Repeat layers of lasagna, sauce and cheese filling.
  • Top with layer of lasagna and remaining sauce; sprinkle with remaining 1 cup mozzarella cheese.
  • Cover with foil and bake at 350 for 45 minutes.
  • Remove foil; bake an additional 15 minutes.
  • Let stand 10 minutes before cutting.

SPINACH LASAGNA (EASY NO-BOIL METHOD)

Traditional oven-baked layered lasagna, without the fuss of boiling the noodles! Comes out perfect every time. So delicious, and one of our top favorites. This lasagna is great served with a tossed salad and Mom's Onion Parmesan Bread recipe #109257 #109257, and a nice bottle of Italian Chianti or Lambrusco wine! Leftovers are yummy the following day, if you are fortunate enough to have any. NOTE: Please do not alter the liquid to solid ratio. Just follow the easy instructions for perfect lasagna, every time. P.S. Recipe can be made ahead; use a disposable aluminum pan and bake, freeze and reheat all in the same pan. This is the best lasagna ever!! The noodles are so nice and thin and there is NO PREBOILING!! I will never purchase any other lasagna other than Barilla. I've been making this now for 3 years and everyone agrees--the recipe makes the very best! The instructions are right on the back of the lasagna box. I usually make multiple batches and freeze them.   • For top layer, 4 uncooked lasagna noodles, remaining sauce, and remaining 1 cup mozzarella.
  • Bake covered with foil for 50-60 minutes.
  • Uncover and continue cooking until all the cheese is melted on the top (about 5 minutes).
  • Let stand 15 minutes before serving.
  • If you are using a 13X9X2 pan---just make 3 layers to avoid boiling over.
