CINNAMON APPLE CAKE
This simple cinnamon apple cake is moist and flavorful, loaded with fresh apples and walnuts.

Steps:
- Heat oven to 350°F. Spray a 9-inch round cake pan with cooking spray.
- In large bowl, beat softened butter and sugars with electric mixer on medium speed until light and fluffy. Beat in eggs, one at a time. Stir in vanilla, flour, baking soda, cinnamon and salt. Stir in the chopped apples and walnuts. Spoon into your greased pan.
- Bake 40 to 45 minutes or until toothpick inserted in center of cake comes out clean. Cool about 10-15 minutes. Cut the warm cake into slices and serve with ice cream.

- Preheat oven to 350 degrees. Butter a 10-inch round, 2-inch-deep cake pan and line the bottom with parchment paper. In a large bowl, using an electric mixer, beat 1½ cups sugar and butter until light in color, 3-5 minutes. Scrape down bowl as necessary and continue beating until mixture is very light in texture and color, several minutes more. Beat in eggs one at a time, scraping bowl between additions. Sift together both flours, baking powder and salt. Alternate between mixing milk and dry ingredients into butter mixture, stopping to scrape bowl as necessary. Add vanilla and mix batter just until smooth. Do not overbeat. Pour batter into prepared pan and spread with a rubber spatula to evenly cover pan. Arrange apple slices in overlapping concentric circles on top of the batter, taking care to completely cover it. Pour cream evenly over apples. Stir together remaining ½ cup sugar and cinnamon and sprinkle mixture over top of cake. Bake until a toothpick inserted in the center comes out clean, 45 minutes. Remove pan from oven, transfer to a rack and let cool completely.
SUPER MOIST FRESH APPLE CAKE
This is one of those cakes that, well, the longer it sets, the better it gets. Oh, don't get me wrong, it is just as delicious warm and fresh out of the oven. The added bonus to this lovely cake is that instead of drying out, it gets more moist as the days pass on, if it lasts that long...

- Cream together the eggs, oil and sugar.
- In a separate bowl, sift the flour, salt and baking soda.
- Combine all.
- Now add your nuts, vanilla and apples.
- Note~this batter is VERY stiff, don't worry, it's suppose to be that way. When the apples cook they add plenty of moisture to the cake to make it moist. Plus, your going to add more moisture when your glaze soaks inches.
- Pour into a greased and floured 9 X 13 cake pan. Bake at 350 for 45 minutes or until a toothpick comes out clean from the center of the cake.
- In a sauce pan, combine your glaze ingredients and boil for a few minutes. Set aside.
- When cake is done, puncture the top of cake with a fork, quite a bit. Pour on your glaze.

- To make the cinnamon sugar topping: in a small bowl, mix together the 1/2 cup sugar and 1 teaspoon cinnamon; set aside.
- To make the cake: In a small mixing bowl, sift together the flour, baking powder, and salt; set aside.
- In a larger mixing bowl, beat together the oil, sugar, and eggs, using an electric mixer on medium speed; beat for about 3 minutes or until light and thick.
- Add the dry ingredients to the egg/sugar/oil mixture in three parts, alternating with the milk and vanilla, beating after each addition until smooth.
- In another bowl, toss the apples with half the cinnamon-sugar topping; then stir half the apples into the batter.
- Pour the batter into a greased and lightly floured 10-inch tube pan.
- Drop the remaining apples on top of the batter and sprinkle with the remaining cinnamon sugar.
- Bake in a 325 degree oven for 60-70 minutes or until a pick comes out clean.
- Let the cake cool in the pan for 1 hour.
- Remove cake from pan and cool completely on a wire rack.

- Preheat oven to 350°. Grease and flour a 10-in. fluted tube pan. Combine cake mix, pie filling, eggs and oil; beat on low speed 30 seconds. Beat on medium 2 minutes. BEST MOIST APPLE CAKE
Best apple cake we've ever eaten. I've taken three recipes and combined them to create what my family now requests for birthdays! We think the cake is better once it sits for awhile. Even refrigerated and then heated back up, the flavors seem to really stand out. You can substitute pecans for the walnuts.

- Preheat oven to 350 degrees F (175 degrees C).
- Whisk all-purpose flour, whole wheat flour, baking soda, baking powder, salt, and cinnamon together in a bowl. Whisk oil, white sugar, 1/2 cup brown sugar, eggs, and vanilla together in a separate bowl. Stir flour mixture into sugar mixture; fold apples and 1 1/2 cups walnuts into batter.
