Portuguese Tomato Rice (Arroz de Tomate) image

The original recipe adapted from 'Food of Portugal' calls for seeding the tomatoes before cooking. But - we didn't seed the tomatoes, and the finished rice was still fantastic. However, if you prefer, you can seed your tomatoes.

Number Of Ingredients 9

2 tablespoons extra virgin olive oil
1 tablespoon bacon fat (use lard if you don't have bacon fat, but we don't recommend using vegetable shortening since it won't add much flavor to this dish)
1 cup diced onion
2 teaspoons minced garlic
2 cups fresh tomatoes cored and cut into large one inch chunks (save any juice from cutting)
1½ cups broth (we used vegetable, but chicken or beef will also work)
1 cup long-grain white rice
¼ teaspoon salt
¼ teaspoon freshly ground black pepper

Steps:

  • In a medium pot with a tight-fitting lid, melt bacon fat in the oil over medium high.
  • Add onions and garlic and cook for 2 minutes.
  • Add tomatoes with their juice, cover and simmer for 30 minutes.
  • Add stock, bring to a boil and add rice, salt and pepper.
  • Cover and after it comes to a boil, lower to a gentle simmer and cook 20 minutes covered.
  • Remove from heat and fluff with fork before serving.

2 & 1/2 tbsp olive oil
3 cloves garlic, finely chopped
1 medium onion, finely chopped
1 & 1/2 cups tomatoes, chopped
1 cup long-grain white rice
3 & 3/4 cups stock, (or more if needed)
2 pcs dried bay leaves
salt and pepper, to season
dash chili flakes
3 tbsp fresh parsley, roughly chopped (or about a handful)

Steps:

  • Using a medium-sized to a large pan, heat the olive oil on medium-high heat.
  • Once the oil is ready, add finely chopped garlic and cook until fragrant.
  • Add finely chopped onion and cook until it has softened.
  • Add chopped tomatoes, salt, pepper, and chili flakes. Mix to combine. Cover the pan with a lid and cook until tomatoes are a bit mushy. This typically takes about 5 minutes.
  • Remove the lid and add rice. Mix to coat the rice with the liquid in the pan.
  • Pour the stock into the rice and add bay leaves. Mix and put the lid back on. Turn the heat up to medium-high and bring rice to a boil.
  • Add parsley and mix. Cover and turn heat to low. Simmer for about 20 minutes or until the rice has cooked. Mix the rice a couple of times during this cooking time to make sure that nothing is sticking.
  • Adjust the seasoning if needed. Mix and take tomato rice off the heat.
  • Serve. Garnish with more parsley, if desired.

Number Of Ingredients 11

1/4 cup olive oil
1 medium cooking onion (diced)
2 cloves garlic (minced)
2 bay leaves
1/2 cup white wine
1 cup long grain white rice
1 can diced tomatoes (400ml or 13.5 fl oz)
1/2 cup strained tomatoes ((passata))
1 cup chicken broth
1 tsp salt
1/2 tsp freshly ground black pepper

Steps:

  • Heat the olive oil in a medium to large pot on medium heat.
  • Add the onions and garlic, and sauté for about 3 minutes or until the onions soften.
  • Add the bay leaves and wine.
  • Cook the wine down (reduce the wine) for about 2 more minutes.
  • Add the remaining ingredients, and stir.
  • Bring to a light boil, cover the pot, reduce the heat to low, and simmer for about 20 minutes. Give the ingredients a stir every 5 minutes.
  • Shut off the heat, uncover the pot, fluff using a fork, and remove the bay leaves.
  • Enjoy with fried fish or grilled meats!

1 large yellow onion, peeled and chopped
2 clove(s) garlic, peeled and chopped
2 large tomatoes, peeled, seeded, and chopped
3 cup(s) chicken broth (or beef)
2 cup(s) long grain rice, uncooked
- salt and pepper, to taste
- chopped fresh cilantro, for garnish (optional)

Steps:

  • Heat the oil and butter in a large saucepan over moderate heat. Add the onion and garlic and cook 5 minutes, until soft but not brown.
  • Add the tomatoes, cover and simmer for 15 minutes.
  • Add the broth and bring to a boil. Stir in the rice, salt, and pepper, and cover. Reduce the heat to a simmer and cook covered until the rice is done, about 20 minutes.
  • Fluff with a fork and garnish with chopped cilantro if desired.
